Batch 2009-2. Poured into a Stone Old Guardian chalice. Cheers to coldmeat23 for sending this one in a trade.
Appearance: Pours out a slightly hazy deep ruby color with copper highlights. Very high carbonation. About 2" of tan head forms that has phenomenal retention and lacing.
Smell: Barrel scents are very strong. Wood, bourbon, and vanilla are quite prevalent. I also get cherry scents, as well as very light toffee and caramel. The barrel scents really smell phenomenal, but I don't get much of a base to supplement the barrel.
Taste: I detect more malt base on the palate. Toffee, caramel, maybe a hint of candied sugar. I also get cherries, and a ton of great barrel flavors -- wood, vanilla and bourbon. I'm not sure how good the base quad is, but the barrels really supplement and enhance the flavor.
Mouthfeel/Overall: The mouthfeel is quite nice. A medium body and high carbonation leads to a pretty creamy mouthfeel. Overall this is a good quad, but the majority of the flavor derives from the barrel treatment. I don't think the base beer would hold up with other world class quads. Still, I enjoyed it and am glad I have the '10 version to give it another go.

Bottle 2013, aged 1 year. Pours a light colored head, at least four-fingers, gone fast, medium lacing. Color of the beer is lighter than most quads, amber and medium dark Carmel tones..the smell is Carmel, and malt, with some fruity hints. Taste is Carmel, vanilla, and candied sugar, with hints of pecan. Light body for the style which makes the mouthfeel pleasant for such a strong abv. Overall really good, just not great. Simple profile for the style. Age on this bottle, and the way Otha's smoothed out, makes me think this one could go much longer and do well. Pair with dessert, sweeter-dishes, beef, venison, red-meat..cheese pairing would be Gouda, cow's milk cheeses.
