Poured into a stemless wine glass. Best by 12/10.
Pours a clear lemon yellow. A superb, thick frothy head leaves sticky lace. Aroma is bright fruits, pear, a little grass and clove. A bit floral. The taste follows, with a bit more spice and pepper. A low bitterness in the finish. Not quite that needs-another-drink dryness of many saisons. But dry enough.
This is missing the tartness, mustiness and intense dryness... but I barely miss them in this very complex brew. Just another tribute to the diversity of this style I suppose.

This saison swings more toward the French style. Greater clarity than the Belgian type. Good bitterness, perhaps about 50 to 60 IBUs, with a mild Goldings nose and some more citrusy type of hop, like Columbus. Good hop complement to the more orange citrus profile of what I'm guessing is a French saison yeast, like Wyeast 3711. Sweet start and sweet finish, no tartness or barnyard funk, saved from stickiness by the high bitterness levels. Also, a bit of alcohol on the finish. Thick, long-lasting head. Generally refreshing as a strong French saison should be.
