Poured into an imperial pint from a 12-oz. bottle (from the 4-pack available locally). Best by 7/29/2011.
Appearance: Thick, white head with excellent lacing. Very bubbly. More than cloudy, this turns your glass into a snowglobe. The carbonation keeps kicking around some sediment, it's pretty amazing to look at, actually. Absolutely excellent head retention and lacing. This is what a great beer should look like.
Smell: Banana, clove, and lemon. A complex and strong aroma.
Taste: Spicy without overpowering, strong banana tones with a bit of citrus, complex and balanced.
Mouthfeel: Spicy with some bitterness but also light and smooth, which is surprising given the appearance.
Drinkability: My favorite beer at the moment. First had this one on tap at Fiorella's Jack Stack BBQ (Freight House location in downtown KC, blocks from the brewery) and it blew me away. I've had it in the 750 corked bottle and the 12-oz. capped bottle and love this beer every time. I desire this beer more than any other I've tried to date. I have a lot of world-class beers to try yet, but that's why I'm on here! Cheers!

This saison swings more toward the French style. Greater clarity than the Belgian type. Good bitterness, perhaps about 50 to 60 IBUs, with a mild Goldings nose and some more citrusy type of hop, like Columbus. Good hop complement to the more orange citrus profile of what I'm guessing is a French saison yeast, like Wyeast 3711. Sweet start and sweet finish, no tartness or barnyard funk, saved from stickiness by the high bitterness levels. Also, a bit of alcohol on the finish. Thick, long-lasting head. Generally refreshing as a strong French saison should be.
