750mL bottle, Batch No./Best by Date 711084/12-2011, into a tasting nonic.
A: A loud pop preceded the soft pour that still yields a pretty large, billowy white head. Lots of effervescence coming up through the just-barely-hazy goldenrod body. Head settles fairly quickly into a sizable white cap for a bit, before completely devolving to a simple collar.
S: A bit wheaty and dusty, with just a touch of sweat. Just a little bit of spiciness to it. Some definite alcohol smell after a couple whiffs. I'm a bit underwhelmed at the scent.
T: Pretty subdued--a bit of wheat, a touch of hops, and a moderate yeasty character in the end. There's a nice, almost meaty and mineral-y bit. I can taste the alcohol, but it's mild. Subtle, and better than the nose would indicate.
M: Spot on--solid carbonation and just a bit of chew. I can taste the alcohol, but it doesn't have any burn at all.
O: A pretty good American attempt at a saison. I'd drink it again, as it was pretty reasonably priced, and is better than most Stateside attempts at Saisons--not quite Fantome, but what is? A great effort that deserves commendation.

This saison swings more toward the French style. Greater clarity than the Belgian type. Good bitterness, perhaps about 50 to 60 IBUs, with a mild Goldings nose and some more citrusy type of hop, like Columbus. Good hop complement to the more orange citrus profile of what I'm guessing is a French saison yeast, like Wyeast 3711. Sweet start and sweet finish, no tartness or barnyard funk, saved from stickiness by the high bitterness levels. Also, a bit of alcohol on the finish. Thick, long-lasting head. Generally refreshing as a strong French saison should be.
