Appearance: Seeyoulator Dopplebock pours a rusty orangish-brown. Its head is decent but unremarkable.
Smell: There is the aroma of caramel malt, also a definite woody scent.
Taste: This beer is not as sweet as many doppelbocks, but still has caramel and brown sugar flavor. There is also a distinct woody quality I've never encountered before, even from oak-aged beers. This can only be attributed to the cedar aging. There also seems to be some subdued citrus flavors, maybe orange peel. The alcohol is noticed when sought out, but doesn't get in the way.
Mouthfeel: Seeyoulator is less creamy than its Bavarian counterparts, but the bite is on par with the American doppelbocks I've had.
Drinkability: The unconventional flavor of cedar combined with the relatively high ABV makes this one to sip.
Notes: I always look forward to trying Boulevard Smokestack Series beers. Seeyoulator did not end up being one of the better entries of the series, but as a Smokestack fan and a doppelbock fan, I'm glad I had the chance to try it.
Aging a beer in cedar barrels was a valuable experiment. It didn't quite work out with this beer, but I think cedar-aging has potential. It may never catch on like oak-aging, but Boulevard should still try it with some other beers. As for Seeyoulator itself, I can't see myself choosing it over other Smokestack beers, or other doppelbocks.
