Doppelbock was first brewed in Munich around 1700 by the monks of Saint Francis of Paula, to sustain them through the Lenten fast. They called their full-bodied brew “Salvator.” Today it is customary to pay homage to the good brothers by giving doppelbocks names ending in “-ator.” Our version bids a fond aufwiedersehen to tradition, charting a flight path into bold new territory. Medium amber in color, it offers a heady, estery banana aroma. Rich maltiness predominates, with cedar aging lending just a hint of spice to the finish.

Pours a clear amber-brown color with a 1.5-finger cream-colored head. The head slowly recedes into a thin layer on top leaving thick lacing.
Smells of smooth and crisp caramel malts with hints of nuttiness. Also present are mild amounts of cedar aromas that fade in and out.
Tastes similar to how it smells. Smooth caramel malt flavors with very light amounts of nuttiness and toastiness kick things off. The sweetness is quickly tempered by mild amounts of earthy hops and hints of cedar. The cedar and malt flavors fade out into a crisp and moderately bitter ending.
Mouthfeel is good. It's got a nice thickness with smooth carbonation.
Drinkability is very good. I finished my glass quickly and could easily have another.
Overall I was surprised to see how the cedar positively impacted this beer and was also impressed with how well-nuanced the addition was. A very good doppelbock taken to another level, well worth a shot.

Faint wood and a touch of banana on the nose over a backdrop of malt and kettle sugar aromas. It pours hazy brown tinted amber with a stiff lightly tan tinted 2” white foam cap that fairly quickly recedes. The palate starts with malty sweetness with some kettle sugars and a little chocolate in the flavor finishing with a hint of tartness and slightly astringent from the grains and wood. A luscious soft carbonation that works well with the malt to produce a creamy body and mouth feel.
