As promised, this has a wild ale aroma and flavor; not always a good thing for my tastes.

It starts promising with an excellent presentation: essentially black body covered by a semi-durable head that leaves good lacing.

Has a distinct, and to me unpleasant, aroma of Brett.

Some Brett in the flavor too.along with medium roasted malts, yeast, and hints of dark fruit.

O: challenging

Poured from a 750mL bottle into a St Bernardus goblet. Best before 02-2015.

A: A resounding pop and a huge, lush, fluffy-thick head precede a beer that is surprisingly opaque. Darkest of brown and impenetrable to the light.

S: Smells funky and wild. Brett? Barnyard? Saison-y, with a hint of citrus. Deeper and more complex. I think it may actually be the barrel aging, less some placebo effect. Smells like whiskey.

T: No, actually. The barrel aging is obvious. Soft, sweet, and caramelly. Sadly, the beer doesn't fare so well -- it is vague, bland, and boring. However, the contrast between what might otherwise be a mediocre wild ale/Belgian single and the (presumably) whiskey barrels is still interesting, if not compelling. At times, weak, watery.

M: Carbonated, but smooth. Very well-balanced. Interesting.

O: Disappointing, but not bad. I would not recommend it, and it's certainly not as tasty as I'd hoped, but it is interesting.

Poured from a 750 mL bottle into stemless wine glass and 2 small tulips. Very gentle hand. Best by 02/2015 printed on the label.

A: Essentially black with a very slight brownish tint that become apparent near the end of the glass. This is seriously dark. Billowy, towering 5 fingers of rocky light caramel-colored head. Iceberg of foam at 5 minutes. Marked lacing. Impressive.

S: Tartness, cherry. Nice funk notes that become more prominent as it warms. Certainly more sour on the nose than what comes across in the taste.

T: Mildly tart funkiness up front that fades quickly into barrel-aged, oaky, bourbon-type sweetness with some faint bitterness. Light mocha, chocolate notes. Some piney hop later. The bitterness builds over the course of the beer. Minimal alcohol presence given 8.5% ABV. I expected quite a bit more sour/tart element given the smell.

M: Moderately high carbonation. A bit prickly for the flavor profile. Admittedly, I think I handled the bottle a bit roughly prior to pouring, but the effervescence is excessive. Detractor.

O: This is a great looking, good smelling beer that is a bit of a let down once I get it in my mouth.
Parallels the Cuvee Freddy I had last week - similar progression of flavors. I think I like this one a bit better. Not as cloying. Interesting beer, but ends up being a bit schizophrenic. Lots of flavors, but lacks cohesion. I suspect a bit of age would help - think I'll pick up another bottle to cellar.

A - Poured a thick, foamy head that quickly dissolved within a minute. Dark, roasted malt color almost completely opaque with a toasted marshmallow head.

S - Powerful spicy aroma on first take with notes of cinnamon and fall spices. A bit of cream and butter scents. A somewhat strange, ambiguous smell that I cannot pinpoint. A sort of stale scent that lingers in the nose. Not in a bad way though.

T - I did not get the barrel-aged-anything flavor that I expected, nor the toasted stout flavors that it appeared it would satisfy me with. Instead I was impressed with a soft, somewhat mild flavor bouquet consisting of rose, sour apple, grape and a smidgen of something with a little bit of spicy flavors like pepper. There are some sort of hops working in the background that give it that crisp bitter finish, but the overall flavors and characteristics of these hops are lost to me in the fluid malt flavors of the beer.

M - Light-bodied more akin to water than syrup, despite its frothy head and dark color. The bottle I tried was extremely carbonated. The carbonation would tingle hard on my tongue and distract from the other senses trying to work. I recommend pouring this beer and letting it adequately rest to settle before enjoying. It seems to leave your mouth quick and resemble something of a dry beer.

Food pairing - baked dill crusted salmon on handful of sauteed asparagus on a bed of jasmine rice with a squeeze of lemon juice and tamari. Would not recommend pairing with fish.
