poured 12oz bottle into Duvel tulip.
It's a darker shade of yellow and hazy with a 3 finger bright white head. Long lasting retention that coats the glass with thick lacing. I can pick on the spice right away. Nice amounts of straw, bread, yeast, and some citrus notes, lemon zest. Starts out with yeast, bread, and some grassiness. Moves into a light lemony citrus flavor that is quickly cast aside by the peppers, spice, and clove. A creamy body with soft carbonation. Spicy and dry on the finish.

Taste: Crisp, herbal, white pepper, coriander, ginger, lemon grass notes. Same with the nose. Gold/Honey color, Slight unfiltered, with a large white foamy head of broken lattice. Medium to med/lite body. Spicy. 30 IBUs

Good that a restaurant in Packerland ventured outside of stereotypical fare.... and succeeds!
I wouldn't imagine that this Saison goes with a lot on Hinterland's menu... interesting as it reads.
Yet they made a nice ale that I Had on tap at Graze, a farm-to-table restaurant on Madison's Capitol Mall.
This looks typical, but the lace lightly coats the entire glass, a bit like typical APAs.
Aroma is mostly coriander and spicy, floral. Malts comes through in the taste; seemingly sweet mostly.
The mouthfeel is right for food, barely enough carbonation to clear the palate for the next bite. (I had a beet burger and fries... so how does a balanced ale go wrong with that?)

12 oz bottle. First time seeing this in my area, so I decided to give it a try on a whim.
Orange/amber color with a one finger fluffy white head. Very hazy and a good amount of sediment left in the bottom of the bottle, which I was not expecting. Aroma was potent and probably the best part of the beer. Big whiffs of pepper, coriander, and lemongrass. So strong that it overshadowed any malt or hops. The spice carries over into the taste and it is very prominent. It gets tiresome by the end of the beer as its a bit rough on the palate. Finishes very dry.
This is a one and done beer for me. The spice additions dominate the beer and could be scaled back to improve it a bit. Best drank with food, possibly a Thai dish with lots of herbs or chiles.

Had at the Milwaukee Hinterland on tap. Pours clear gold under a thick off-white head. Has a lemony aroma. Initial citrus flavor segues into more peppery taste in the finish.
