Hinterland is located right across the street from Titletown and is more of the "upscale" dining location out of the two. We went on a Friday night during happy hour and the place was absolutely DEAD. Went upstairs to the little bar area and ordered the taster set. It was nice because it ended up being about 1/2 a beer for each taster. Way better than the shot glass portions at other locations.
I ordered the Maple Bock, Irish Stout and the Amber. We also got one of the pizza's as an appetizer. The food was very California cuisine so I felt completely close to home in the middle of rural Wisconsin. It seems as though the chef spent a bit of time out in CA, so the menu caters to my tastes. Excellent.
The beer was good, but I was not blown away. No real big beers. I would have loved to have visited during Barleywine time, but I didn't luck out.
Service was fantastic...could be because there were about 5 people in the place though.
I would go back if I were in the area. The combo of Titletown and Hinterland make for a good beer crawl.

I was on one of semi-regular business trips to Green Bay and asked my customer where he wanted to meet for dinner. Last time he suggested Title Town and this time he suggested Hinterland. You got to like customers like that!
Hinterland sits kiddy corner from Title Town and is very close to the river. You enter through the doors off the parking lot and not the main street entrance (that appears to be the brewery entrance).
There is a small bar to the left of the entry. Lots of brick and exposed duct work.
I think this place was an old cheese factory and its industrial roots show but they have been given a fancy gloss.
They had 8 house beers on tap and a few macro bottles (including PBR!).
The amber I had was solid and to style. I really liked and can recommend their IPA as I had several.
The food is definitely on the fancy and pricy side of the equation. My “porterhouse” pork chop was $38 but it was really good. Try the fried goat cheese curds for an interesting variation on a Wisconsin staple.
Service attentive and beer savvy.
Well worth a stop, glad I was on the expense account!

Another stop on our Green Bay tour.
I've always been curious to see what the parent location would be like compared to our brewpub location on Milwaukee. Well it's just as pretentious for sure. I simply can't get into a brewpub that comes off like it's trying too hard to class itself up. When your main attraction is beer I feel you should cater to a more casual atmosphere. Just my opinion. White table cloths and low lighting do nothing for me when looking to enjoy a few pints of beer.
The service was pleasant and the beers were good as always. I've had pretty much all the Hinterland stuff so i wasn't terribly shocked by anything on the menu. We didn't order any food but I've eaten at the Milwaukee location several times and the food is fantastic.
If you are looking to impress someone or are interested in an upscale dining experience this is your place. If you're like me you would be better served across the street.

The atmosphere is a little upscale and yuppie. It is odd because on one hand it has some gorgeous natural stuff that is like entering an art gallery, on the other hand it is a little cold and sometimes hard to find out what's going on.
There's a downstairs bar and upstairs bar. If you're a beer fan go to the upstairs bar. Otherwise if you are at the downstairs one and you want a sample you have to run up to get it.
They have some great food items. I like their wood fired pizza and creme brule and their shredded pork tacos are to die for. (they have coleslaw in them)
The beers they have are mostly good, especially the winterland and the maple bock (like dark chocolate and chocolate respectively), in fact I like both of these beers in ice cream (hint, hint)
If you're young and want to impress your date this is the place to go, especially if your date wants wine or a fancy martini instead of beer. You get the beer you like, they get their fancy shmancy drink.
IPA wasn't as much to my like but as long as they don't take the other two beers off the menu I am happy.

Stopped here on a whim in October after many tastings at events. Had a feel of a supper club type place, and service was excellent. Of the beers I had, the Oktoberfest was very good... probably the best I have had of that style although not my favorite style. Really liked their scotch ale which I believe might have been barrel aged and joked they should bottle it. The rest of the line up at the time didn't really distinguish themselves. Ambiance hurt by parking lot being between building and the Fox River, but considering the building's age that is unavoidable.

Hinterland might be the only place worth visiting in Green Bay for beer aside from Titletown Brewery across the street. The establishment is housed in a rehabbed warehouse building with all the original concrete exposed, and minimal interventions of ducts and lighting throughout. The overall atmosphere is filled with the aroma of the fireplace on the first floor, which would be the only coplaint about the surroundings. overall it carries a quiet dignity.
The prices are among the highest in town, but the food is quite good and the beer is solid. It is somewhat of an anomaly in that sense, with the general lack of upscale fine dining establishments in and around the city.
The quality is good. the beers are served in clean glassware, though not always the correct style, but the bartenders seem to know quite a bit about brewing, and seem to be glad when patrons share their level of knowledge.
service is great; prompt and friendly.
selection is decent. around eight to ten taps, all from Hinterland, with a fairly diverse set of styles. there are four or five flagship brews, with a couple seasonals thrown in. apparently the seasonals are rotated whenever the previous brew runs out, so it is a bit sporadic.
food is great, albeit a bit pricey when considering the context of Green Bay. when put in line with a market like Chicago, it fits right in.
overall this is a solid stop for those passing through town en-route to Door County or anywhere else. It seems like the local crowd avoids the place (from what this BA hears) because of the prices. The good news is Titletown Brewery is literally across the street, and the two sum up the brewpub population of Green Bay.

This is fine dining. Beers are very reasonable - like $3-$4. Great place to drink beer. The beers are absolutely top notch. I have loved every beer they make, even the styles I normally do not care for.
Dining will set you back $100 for two people. Everything is ala cart. But the food is top notch. The menu is sooo interesting that it is really tough to decide on an entree. The best by far I've had in Green Bay area and all of Northeast Wisconsin. Great place to impress the spouse for anniversary or special occasion or take important client(s).
Beers excellent, food excellent, but very expensive.

From notes, in one-night whirlwind tour of GB:
Stopped here before heading over to Titletown, and thank goodness for that. Pull up, immediately excited by the cool ass exterior, and old warehouse building, two stories, nice. Step inside .... and, did I just teleport into San Fran? Seriously well design, suave hip wicked cool place. The host greets me immediately, way more dressed up than I, look around and see most others are too. Oops, shrug it off. I'm wearing my new sweater, so F off, hosers. Walk around the place, taking it in. To the immediate left is a dining area, nicely lit, a tall two stories with nice (probably real) fireplace in the corner. Back to the right is the bar, well stocked and attractive, friendly bartender. I'm directed upstairs to the lounge, where happy house is serves exclusively (with a pared down menu). On the way, I find a party room overlooking the fermentation kettles down below through huge glass panes, a wicked place for a dinner party I'd think. Up the stairs, the lounge defines cool, something out of any hip design/architecture magazine. Everywhere its some serious industrial/modern. I sit at a round table with block leather half stools with a view over the river.
I've been greeted about five times by now, and the single bartender/waitress is friggin hot. Excellent. Also, apparently pretty knowledgable about what she's serving, and does a good pour too. I get my menu, they have seven beers: my Luna Coffee Stout and a Pale Ale, and also a wheat, 'pub draught', amber, bock, and a 'Winter Cask Ale', oak aged, at like $7 for 8 oz., which I sampled before I left and I'd have tried it were it not so pricy. Started off with the Stout, super creamy and smooth, pretty damn good, and the pale ale was pretty decent, itself also smooth and creamy.
For food there was a large appetizer/salad menu, with just 8 entrees. I got the fish tacos, cause damn I wanted fish tacos. Also, it was the cheapest thing on the menu at $6. Everything else seemed overpriced, but quite frankly yummy, wish I'd have planned to eat dinner there. The tacos were delicious, slightly battered snapper, with cabbage, tomato, etc, and spices galore, with an actually quite authentic tortilla and attractive plating. Not much to base a score on, but it was telling.
For a tight budget (like mine tonight), happy house is from 7-9PM, $2.50 .4L beers, and theres a $7.50 3-beer sampler in 8 oz. glasses, a very good bargain, which I should have gone for, argh. Also, there was a desert menu with drink suggestions, and coffee and desert wines too.
All in all, I got the fish tacos and 2 beers for $11.63 pre tip. Not bad. Now, I'd have expected this place back in Minneapolis, but good for Green Bay, I'm jealous. I'd definietly recommend this place if you're around, its worth the price.
