Re-reviewing this one tonight, March 15, 2011.

Bottle into The Bruery tulip.

Pours impenetrably cloudy straw, with a huge, rocky, fluffy white head and ridiculous lacing. Good to very good retention, as there's a nice thick cap for pretty much the duration of the beer.

Aroma is fantastic - massively floral, white pepper, spiced honey, fresh cut grass. Just a bit soapy, which cuts the score a bit, but still quite pleasant.

Flavor is quite complex. Ridiculously dry, tangy, peppery and floral, the yeast is certainly prominent on this one, but adds loads of complexity. Light underlying honey sweetness is vapor-light, almost ethereal, wrapping itself around that floral quality and evaporating with the soft scrub of the bubbles as they melt on your tongue. Finish has a bit of a soft white pepper quality to complement the tangy yeast notes, almost bready, with a soft grassy quality. Floral, white pepper, and yeast notes are the three primary components though, each quite bold. Alcohol is light, but there - no heat, but it adds a heady quality.

Moderately dry, champagne-like level of carbonation, though softer, smaller bubbled, and a bit less sharp. Medium bodied with a very dry finish.

Drinkability is nice, certainly a beer I would welcome another bottle of down the road, but not one I'm pining for right this instant. Glad I gave this one a second shot.

Appearance- This beer pours a massively fizzy head with good retention. Could audibly hear the bubbles popping and crackling in the tulip glass. Light yellow color, hugely carbonated.

Smell- Another reviewer had mentioned cantaloupe and he was spot on, this smells just like it. Light honey and clove aroma also present.

Taste- Yeast dominates the palate. Slight bitterness and traces of funk. Lingering sweetness from the pale malts provides many similarities to Champagne or sparkling wine.

Mouthfeel- Extremely, EXTREMELY dry despite the sweetness. One of the driest beers I have tried recently. The carbonation in this beer is quite extreme, and it shows itself in the mouthfeel.

Overall this was a good beer but it probably won't ever make it into my rotation of Belgians to buy regularly.

A: Foggy golden with tons of fine carbonation, 3 fingers of light yellow tinged white head. Good retention.

S: Sweet and caramel like, light fruity and floral qualities. Daisies, and cantelope.

T: Belgian yeast, light lemon tartness, la fair amount of sweetness, sight bitterness on the finish. Really hides the alcohol, and is much like a white wine in dryness. Sharp cheddar like quality.

M: A lot of fine bubbled carbonation, a little thickness to the body, but it comes across as light, airy and dry. Really well done.


O: An excellent brew. Great mouth feel, very mellow in taste, definitely a Belgian style beer. Bought in Boca Raton, drank on Deerfield Beach, July 15, 2014.
