Brooklyn Black Ops (2008 commercially available version) was aged for four months in bourbon barrels, bottled flat, and re-fermented in the bottle with Champagne yeast. 940 cases produced.

Bottle picked up in El Paso in late 2013. Aged several months before consumption.

A- Finger and a half thick head that has dark-khaki color to it. The liquid is pitch black.

S- Smell is almost wine-like. Sherry and bubblegum. Raisins and dark fruit. Very unique to me.

T- Starts off wine-like... Sherry or red wine... Kind of grape heavy. Still getting some bubblegum. Eventually the flavors get more chocolatey, even baker's chocolate dry and bitter. Then finishes raisiny.

M- Black Ops has a light mouthfeel, very airy-like despite not being highly carbonated. There's a wine-like astringency and finish to this beer that to me makes it closer to the wine family.

There are some good qualities about this beer and then there are some truly odd ones. It's a very mixed bag for an expensive beer.

A: About as black as I've seen a beer, with the darkest head I've seen (heavy beige/brownish). The head didn't accumulate much, but trace amounts sat on top and lingered there almost the whole time.

S: I got a much boozier impression from the smell than I got from the taste. I thought it might be a bit overbearing or bitter. Other than that, you could smell smokey chocolates, bourbon, vanilla, and sticky malt.

T: Fantastic. The ABV wasn't as apparent as I would have figured. Smooth with an underlying alcohol bite. You could really taste the barrel. It really seemed like it was brewed with care. Incredibly drinkable for 11.5%. Tasty tasty tasty, inviting and hearty.

M: The alcohol feel makes a steady trip down the throat upon first sips. That's the most aggressive expression of the ABV. It seemed like something that would be perfect fireside in a ski lodge.

O: I didn't age this one, and I don't feel robbed at all. I might get another bottle and let it sit. Maybe that would make it even better. Overall, if you're into darker, thicker, more bourbon -oriented beer, this is a must have.

2011 vintage. Poured into a snifter. Been cellared for awhile now.

Pours black with a mocha head of half an inch. Looked like it wanted to lace, but the retention was causing all sorts of ‘chunky’ action along the wall of the glass.

Big, boom bourbon in the nose, but quite unoffensive. Hardly. Very delicious aromas. Whiskey, vanilla, alcohol, berry reduction, milk chocolate, heavy roast, toffee, and barley grain. A huge nose with lots of barrel effect. Buttery notes are awesome. Aging has done well, so far.

Roast is strong and dark and charred, but the malts are elegant. Champagne yeast, and some good aging, took some serious edge off. The bourbon is still a bit hot, and very much here, but not ‘in-your-face’. Good whiskey dose with corn mash sting and a slight buttery smoke, but there’s background coffee and askew berry compote. Unfortunate thinness of the maltiness, in general. It must be the age. I’d rather a deep sweep of grain roast and more dark chocolate, in which, I’m only getting small flare-ups.

Silky smooth. Bout of carbonation works to fluff and spice up the feel. The body is rich and more than half-full. Leans on you with the potency.

An awe-inspiring bourbon barrel-aged imperial stout, whether aged or not. But, I must say, the aging takes a lot of the sting away.
