750mL bottle - $12.49 at Total Wine & More in Kennesaw, Georgia.
Appearance: Pours out a hazed, pale yellow body with a large, rising, airy white head.
Smell: A delightfully spirited nose, replete with vivid notes of Meyer lemons, budding Springtime flowers, lychee fruit, fresh basil, pilsner malts, and lighter hints of alcohol and a background funkiness.
Taste: Pils malts with a little tanginess and a soft, honeyed sweetness washed down with a gulp of white wine. Hint of biscuit dough. Vibrant florals. Distinct taste of fresh lemon juice. In amongst the stronger tastes is just a faint hint of funk. Moist garden-grown herbs seasoned with white pepper and cracked cloves, with more emphasis on the pepper. Medium-light bitterness. A veritable round table of all the various tastes on the dry finish.
Mouthfeel: Medium-bodied. Well carbonated.
Drinkability: An eminently quaffable, soundly complex saison, with, thankfully, not a drop more alcohol than is needed. I really enjoyed this one, Brooklyn.

This beer poured out as a hazy golden color, the head was fluffy and white. A very heady brew. The lacing was pretty good. The smell of the beer was very floral and has a good saison aroma to it. The taste of the see had a hefty amount of the Sorachi Ace hops on the tongue. There was also some nice spicy flavors too. The mouthfeel was full of carbonation and was light bodied. Overall the beer was very tasty and was enjoyable. I would like to have this again one day.

I like to see breweries like Brooklyn be innovative in making and using rare and exotic products to their product lines.Poured into an oversized wine glass a hazed lemon yellow with a large blossoming white head that clung like glue to the glass as it settled very slowly into a frothy mass.So much going on in the nose it took awhile to pinpoint everything,white pepper,grass,herb,and as others have noted a bit of cedar,light phenols with some clove showed thru as well.Flavors are quite dry and spicy with lemon being most prominent,a big spiciness rolls thru as well,somewhat medicinal in the finish.This is different and I like it,I normally dont single out a saison to buy,this I did and am happy for it.

Served in a Sloeber tulip glass.
A nice extra catch when I found the BCBCS. It pours a somewhat hazy (though mostly clear) plae golden straw capped by over a finger of bright white foam. The nose comprises lemon zest, a light funk, cardamom, hay, and mandarin oranges. The taste goes somewhat sideways: notes of grass, hoppy citrus and bitterness, greens, stinging lemon and lemongrass, garlic, and a very light butter in the background. Something is heavily amiss, though. I must just not like the sorachi variety, I guess. The body is a very light medium, with an active carbonation and a dry, strangely dusty feel. Overall, a pretty large disappointment that I chalk up to a distaste for the sorachi and the weird dusty feel.

750ml bottle, with an easy to open cork, gotta love that, just a quick pop, and everything's, ya know, coming up aces!
This beer pours a rather hazy, medium golden straw colour, with three fat fingers of puffy, thinly foamy, and burbling off-white head, which leaves an image of rocky land-bridge lace around the glass in its funeral dirge wake.
It smells of mildly boozy lemongrass, grainy and gritty pale malt, a touch of barnyard funk, and further leafy, earthy hops - very inviting in its unusual nature. The taste is softly grainy, kind of sugary pale malt, tart lemon meringue pie, a bit of nonassignable woodiness, more isolated musty funk, and zesty, grassy hops.
The carbonation is a mite bit strong up front, but settles to a dull frothy roar soon enough, with a tiny rising bubbles Champagne sort of charm. Amidst all this, a solid medium-weight body presents, though struggling (successfully) to be smooth amongst that Vietnamese takeout citrus onslaught. It finishes off-dry, clean, zesty, and still a bit tart - oh yeah.
Wow - a saison with some game reformulating New World cojones, and a zingy fruitiness that just wouldn't let me stop tipping that glass back, not to mention its superb masking of a respectably hefty 7.6% ABV, at that. A splendid display of a heretofore unknown hop to this humble Joe, and seriously worthy of seeking out.

Wow! A really unique beer. Pale straw gold and hazy. Medium bodied. Good head retention. It's spicy, lemony, and woody, no doubt due to the Sorachi Ace hops. In another beer brewed with them, I found them to be almost cedar-like. That's not the case here, but it is a bit woody, at least as far as dryness goes. It's a great combination: dry and bitter, but infused with citrus and some minor yeasty phenols. Interesting! Weird! I love the contradictions it offers, and also that it's not really that complex either - everything is put right out there on the table. A great summer beer. I would love to see this one brewed again next year!

This is a great saison. Nice earthy tones. Grassy and only mildly funky. Carbonation is pretty high; could deal with a little less of that. But this is consistent and on the spot for the style. More of a sipper than anything else. Another nice one from Brooklyn. Keep it up, folks!

A - Pours with one and a half fingers of snow-white lace that rests on top of a slightly hazy straw yellow body. The foam settles slowly and leaves nice, thick lace.
S - A lightly citrusy hop aroma with some musty yeast character. Pepper, basil and (I'm shocked, but it lives up to the description) lemongrass.
T - Tart wheat and musty hops up front with some spicy yeast character. The hops bloom in the middle with notes of coriander, basil, and lemongrass. It finishes with more citrus and just a hint of green, american-pine hops before it closes on a note of lemony hops and pineapple yeast.
M - Medium body, high carbonation, and a fairly dry finish.
D - This beer is really something special. The hop character is extraordinary, the lemongrass and basil notes are like nothing that I have ever had before and it was an inspired choice to use them in a saison. The spicy yeast and creamy wheat character frame these unusual hops perfectly and seem to meld with the herbal, citrus character of the sorachi ace hops to produce a very coherent, well balanced beer. There is a really remarkable lemongrass aroma and flavor that, along with notes of coriander and basil reminds me vividly of Thai cooking. This is a spectacular beer, both for the way that it showcases this new hop variety and simply as a refreshing, spicy, and very drinkable saison.

Poured a pale golden slighty hazed hue with a bright white head, appears almost pils like with very nice intricate lacing as the head settles. Aroma was spicy with a funky welcoming yeast edge with a very nice citric and tropical hoppiness about it with a touch of coriander or other spice addition possibly? Flavor has more of the spicy citrus and herbal hop blend from this rare varietal of hop, a nice zesty edge to the whole experience sweetness is balanced with some dry yeast flavors in the finish. Mouthfeel is light bodied very sessionable brew comes off quite nice and definitely intrigues the senses with each sniff and sip. A complex satisfying drinking experience that was very unique and it reeled me in, I hope this makes it's way back to the beer drinkers.

I'm the third bottle review? Really? Poured into a tulip. I guess this is a new bottle then.
Beer is light yellow and hazy. Forms a big thick head of medium and large bubbles that collapses slowly leaving a lot of lacing on the glass. Carbonation is moderate and steady. Looks fine for a saison.
Sweet hoppy aroma. Nice esters in there as well. Plays well with the citrus. Like most people I don't have a lot of experience with the Sorachi hop, this is quite the experiment. I'm getting some sweet almost lemony aromas now as well. Very nice aroma overall.
Beer is light in body and quite hoppy. Lots of carbonation in the mouth and it finishes cleanly with no aftertaste. There is a growing bitterness in the back of the mouth. The midpalate flavors are a lot of tropical fruits like papaya and mango. Its relatively subtle. I don't really get saison from this but I'm not sure what I am getting from this. There seems to be a disconnect. It all tastes fine but its not coming together for me. I can't give it a bad review because I like all the parts but I don't put cheese on my Chinese food either. Served chilled in a tulip.
A - Hazed golden w/ a 2 finger pillowy white head, The lacing is very good and clings in rings to the glass. The bead is small
S - Like prefermented wort w/ a caramel maltiness and an herbal lemony spicy hop aroma
M - Crisp, med high carbonation w/ med body and mild astringent feel which also is contributed to by resinous/oily hop texture which has a dry spicy finish
T - The taste is filled with grainy light malt w/ a caramel note and toast element juxtapozed w/ a very herbal and lemony hop flavor that has a grassy light tannic tinge. The astringency is moderate w/ a crisp citrus finish. The balance between the Sorachi ace and yeast/malt combo is great giving a full herbal taste with a malty backbone
D - A bit highly spiced after the first and slightly acidic but plenty of malt character lends to the drinkability factor. A unique beer which I really enjoyed and could have probably handled several , very refreshing and full of flavor.
My second chance to have this great beer was at Ebenezer's Pub in Maine - served in a goblet

A - A sunny golden color w/ mild haziness and fluffy like meringue white cream w/ thick 2 fingers - the film of lace clings long after the head recedes
S - A floral -LEMONY dessert like aroma w/ herbal hop nose- lots of fruit esters from the saison yeast add depth to the smell
M - The feel is slightly, well not really slightly sweet...more sweet than spiced or bitter, but it works. herbal tinged w/ slightly spiced and tangy aspect w/ subtle astringent hop to give it depth.
T - Wow, the flavor of this is so unique like the hop it utilizes - The saison has so much Sorachi Character -and the saison yeast adds a gentle juicy qualtiy w/ herbal hop grass and light sweet malt edges it is delcious in its lemony hop and sweet saison uniqueness
D - I can't think of a beer I would want to sip on one after another more than this -wonderful drinkability - it is restrained when it needs to be and pushy in the most pleasant way. Elegant and yet dramatic with palate pleasing qualities
A kickass beer that I can't wait to try in bottles!

A: Holy mother of pearl, I didn't even have to pull the cork out. As soon as i got the wire partially opened the cork FLEW off and hit the ceiling with eruption following. When I finally got to pour it had a huge fluffy head with bubbles and fades quickly leaving a messy lacing. Its semi hazy wheat golden orange color.
N: Nice light hops, fruity with lots of citrus and lemon, some wheat and light malts, a little sweetness. Some effervescence too.
T: Start with some wheat and malts, light sweetness, light spicy hop flavor, some bitterness with a citrus lemony light almost astringent but not quite. some hints of yeast, Belgian like, and bottle conditioning.
M: Medium body with tons of carbonation.
F: Finishes lighter with some lingering wheat and light malts, some light pale hops win a little faded astringency with citrus and lemon zest. A slight dryness.

one of the best beers i have ever had. no kidding. beautiful packaging cork and cage set up for 27 bucks at harry's seafood restaurant in wilmington, deleware. poured a heady golden a little hazy into a frosted pint glass. smells like a saison, yeasty, grassy, and way way way more hoppy than these usually are. almost ipa-esque in the nose. the flavor is unreal, not nearly the hop bomb promised by the aroma. instead a balanced complexity. i can detect vanilla, cut grass, citrus fruit, and a delicate malt backing band. mouthfeel is perfect, medium bodied, brilliantly carbonated, and smooth as anything. has a sort of richness in the feel that most beers dont have, especially saisons. the bottle mentions a champaigne yeast, which is the first ive heard of it, but it imparts wonderful flavor and feel to this beer. worth the money and was excellent with our massive seafood feast. i will be reccommending this beer to everyone, its absolutely winderful!

The beer pours a hazy/cloudy gold color with a thick frothy white head that slowly fades to lacing. The aroma is good. It has a dry, earthy pale and wheat malt scent along with a mild hop bitterness and some farmhouse funk. It's light and refreshing with a nice lemony zest. The taste is good. It has a crisp bitterness up front along with a earthy/farmhouse finish. The malt bill provides a stable base with a basic pale malt flavor. It's light and lemony with a dry/clean finish. I'm not getting as much esters in the taste. I'm guessing the hops are canceling a bit of the character out. The mouthfeel is fine. It is a low/medium bodied beer with good carbonation. This is a good saison, although I prefer a bit more funk. I especially enjoyed the Sorachi hops. They have a unique character to them that I wouldn't mind trying in another style.

Poured from the bottle into my Chimay goblet.
Appearance: Pours a cloudy golden/light amber color with a finger of fluffy white head. There really isn't any lacing, but this one has some good retention.
Smell: Sweet malt with a very strong herbal note. I'm also picking up some citrus notes from the hops. The finish has some mild alcohol to it as well.
Taste: There is a strong herbal presence, it seems to come from the hops and the yeast. Some malt, but not a ton of sweetness. The finish has a mild fruity flavor along with some alcohol.
Mouthfeel: Medium body with a lot of carbonation and a slightly dry finish.
Overall: I enjoy sorachi ace hops, and I think this was a very good use of them. The finish is a bit heavy on the tongue, but overall this is a very nice beer.

Beautiful 12 oz pour in the tall glass. Light amber color with long-lasting suds. Great mouthfeel-- both creamy and prickly. Medium body. Flavor is totally unique. Tastes like green peppers, black pepper, green apples, and jicama. Most interesting an likable flavors, however indescribable.
This is fairly malty at first, not really bitter even after the hop flavors emerge, but rather tart in the vein of many Saisons. The aftertaste touches on more bitterness. I was surprised to see this sitting on the shelf in Dallas so I had to pick on up. Good thing I did because it was very good.
The beer pours a hazy gold color with a white head. The aroma is strong lemon with some wheat and Belgian yeast. The flavor is lemons with some oranges. I also get some wheat, yeast and grassy hops. Low to medium bitterness. Very soft, creamy mouthfeel and low to medium carbonation. A very good saison.

s - Smells very interesting. Getting citrus hops, some spices, and yeast.

750 ml cage-corked bottle:
Pours clouded pale gold with a bubbly white head that slowly descends. Not much lacing.
The smell is of lemongrass, somewhat musty, with tinny/metallic notes.
The taste is musty lemongrass with slight honey with a champagne-like character. Yeast, malt and hops converge to bring about a musty sweet and sour character that is pleasant. Finishes dry.
The feel is spritzy, towards champagne-like. Holds up a nicely refreshing body.
It certainly fits the broad style. Nice and refreshing, especially on a hot summer day.

A steady pour into my large Tripel Karmeliet tulip produces a voluminous, four-finger thick, pale tan colored head. The head has a ton of staying power, lots of lacing is left on the sides of my glass and the head forms a variegated, interesting surface as it slowly subsides. The beer is a hazy, straw / light gold hue that shows flashes of bright yellow when held up to the light. The aroma smells strongly of the hop influence; bright fruit notes of juicy-fruit gum, huge notes of freshly zested lemon peel, lemon pepper, a touch of basil and more of a herbaceous grassy note towards the finish serve as the initial focus. Dried hay and pale cracker like malt character serves as a very subtle backdrop to the hop character up front and becomes a touch more noticeable once you really start to spend a focused session of smelling the beer; the malt can never shake the hop character though and even in the finish is a bright citrus note that makes me think of lemon scented furniture cleaner. While the beer seems dry compared to an IPA, I can't really pinpoint any interesting yeast contributed aromatics in this beer; the nose is nice but I feel like I am missing out on some rustic yeast influence.
This is effervescent to say the least, the beer foams up quite well as it crosses the tongue, though it is not too highly carbonated. The beer feels very dry on the palate, though some of the fruity citrus notes contribute a perception of sweetness even if the malt character is quite dry. Cracker like grain notes and a touch of dried straw are joined by a malt roundness in the middle that is almost sweetness, but really just a malt fullness to the palate that keeps this from being overly thin. This has a very firm bitterness to it from the beginning of each sip (much of this is influenced by the peppery carbonation) and this remains through to the finish all the while being accentuated by the carbonic bite. The juicy hop character contributes notes of Meyer lemon, lightly sweetened lemon zest, a touch of floral tropical fruit character and some menthol notes that numb the tongue a bit. After shaking / swirling the beer to expel some of the carbonation the beer gets softer, with more of a fullness to the body (though still light and quaffable) and my first sip has me noticing some warming alcohol (though this seems to dissipate quickly). The hop character definitely has a certain furniture cleaner quality to it, while I wouldn't characterize it as bad; it might get to be a little much for me if I was drinking this over a long session. Perhaps some rustic phenolic character from the yeast helps to accentuate this character; in fact, after further reflection, I think that some clove and other phenolic notes from the yeast do in fact accentuate this character here. As the beer warms it picks up a touch of a medicinal character in the finish as well as getting spicy with peppery notes, a touch of spicy ginger and even a something a bit like a sage-like note 9this last being influenced by both the hops and the yeast character).
A nice hop focused Saison, which with time will likely become more noticeably fermentation driven; this is more due to the hop character fading, than the yeast character actually becoming greater over time though. I admit that I like this beer so much because I am a sucker for hoppy Saisons; in all honesty this could certainly use a touch more of a characterful yeast / fermentation influence, even though this is certainly in evidence here.
