Appearance: Solid straw golden color. Very cloudy body. Pours with a head of about a finger and a half of bubbly head which subsided but was present the entire time while drinking. Low active carbonation in the glass while drinking.
Smell: The front is a unique soapy, heavy straw aroma that really carries throughout the aroma. Bready yeast and biting hops are also present.
Taste: The sorachi ace hops make themselves known right away. I love the peppercorn, herbal, ginger, and leafy greens flavors. The earthy yeast characteristics mix very well with what the sorachi ace hops are bringing. There is also a nice fruity body to this beer filled with pears and apricots. The finish is a mild amount of straw and prairie grass with lingering pepper accents.
Mouthfeel: Mild carbonation especially for a saison. Lots going on in this beer but everything mixes well.
Overall: Sorachi Ace seems like a perfect fit for a saison. Herbal/wild tones of the hops play along well with the strong yeast saison background.

Sorachi Ace from the bomber, poured into a square mason jar/jug with handle.
A: wallopping three finger head. Rocky, could support the empire state building on this head! Easily floated 4 bottle caps on it. That's that champagne yeast and bottle conditioning!!! beautiful deep yellow unfiltered hue.
S: Lactic funk and smooth malts. Lemony Sorachi Ace. lemongrass, hay. Gets medicine-y as it warms. Very slight astringent in a very, very pleasant way.
T: Smooth biscuity malts, hay field, grassy, earthy and lactics. Gently bitter finish. Very smooth. Spicy yeast and bready.
M: Smooth tight bubbles yield a very creamy experience. Deceptive due to alcohol and style because it's never cloyingly thick or overtly boozy. It started going to that grass, then funk followed by a milky, gently bitter finish. Slight booze heat on ultimate outbreath. This finish is perfect. Reminds me of pannacotta with a bittering agent. I am blown away.
O: My hat is off to the discovery of Sorachi Ace hop varietals and how Brooklyn Brewing assembled this brew. This is fantastic. It is hands down one of the best Saisons out there.
