Notes/Commercial Description:
From the limited-release Summit Union Series, we’re proud to offer Rebellion Stout. Single-hopped with a new UK dwarf hop named after a Celtic queen who led the fight against the Romans. Brewed with the quintessential Stout malt from fiercely independent County Cork, Ireland. Loosely based on a recipe from 1896 taken from the archives of an old Cork brewery.

Pours a jet black with a frothy chocolate head that slowly dissipates.

Coffee, tar, and nutty malt form the initial aroma, with chocolate and licorice adding complexity.

Flavor is sweeter than anticipated. Rich roast malt forms the backbone, with a hint of char adding bitterness at the finish. Dark cherries underlie a chocolatey, nutty profile.

Body is a touch light, with carbonation on the low side. Alcohol warmth does not overwhelm.

Great malt complexity. The dark fruit really sets off this beer. Wish there were more export stouts available. Love the contrast of roast and chocolate. Could use a touch more body.

Poured into a tulip glass.

The beer is coal black with a dark cream colored head that retains a thick layer of foam. Bubbly world map lacing coats the glass. The aroma is dominated by dark roasted malts, charred grains, and a faint black licorice note. The taste is exactly like the aroma except a faint smokiness comes in the finish as well. The mouthfeel is medium bodied and quite smooth for 8.5%.

Overall, a pretty beer and nothing to complain about.

Pours a thick, smooth, dark brown head. A nice acidic, roasted malt aroma. Black. Starts with a nice hop bitterness (a slight pineyness, too) and rich roasty flavor. Medium-high bitterness Moves into some acidity, then mellows into a nice finish of coffee beans.

This is quite nice. Very smooth. It's got a nice flavor profile; it blends toasted malt and hop bitterness quite well.
