From the limited-release Summit Union Series, we’re proud to offer Rebellion Stout. Single-hopped with a new UK dwarf hop named after a Celtic queen who led the fight against the Romans. Brewed with the quintessential Stout malt from fiercely independent County Cork, Ireland. Loosely based on a recipe from 1896 taken from the archives of an old Cork brewery.

Dark, opaque black with a mocha brown foam that fades quickly to a thin skein leaving rings of lace. Smells roasty and chocolaty with a bit of toffee. Taste is roasted and lightly charred malt quite delicious with semi sweet and milk chocolate, toffee. Coffee. Hints of hop flavor lurking perhaps a wash of pine and citrus and a trace of sourness like a dark cherry. Lightly sweet balanced well so as it's essentially dry and creamy. Mouthfeel is medium, velvety smooth with nice carbonation. This is a very well crafted export stout. A double export stout actually. Very good.

Bottle into snifter

Appearance- Jet black, tan head

Aroma- Earth woody and piney hops, light coffee and chocolate, molasses, slight fruityness, light alcohol present

Flavor- Bigger punch than the aroma, pine and woody hops, coffee, roast, fruity, molasses, slight chocolate, alcohol warmth although very drinkable for the abv.

Mouthfeel- medium, good carbonation

Overall- Really liked the hop notes throughout on this one. For the style the nose could be stronger and I would have liked more fruityness, but a great brew, glad I picked up 6.

12oz bottle with no date that I could find

look is dark, almost black, small khaki head. smell is toasted oats, chocolate, piney hops. smooth toasted barley, semi-sweet cocoa, oily piney hops with a sour tinge. a full medium feel and the alcohol is hidden well.

reminds me of a sheaf stout with some meat on its bones
