Cork itches to pop; be careful.
Cork smells pretty sour, but a friendly lemony sweetness teases beneath that. Pours frantically with a manageable, but still very bubbly head. This is one of the most carbonated beers I've ever had. Bubbles large rush out en masse and gradually subside. More on that later.
Appearance is a fairly middle-of the road between yellow and amber. Very pale, though. With the head it is very inviting, as is the inoffensive smell, which opens up to light water/grass/lemon the instant its poured.
Not a particularly spicy brew, though. If you're a fan of the spicier brand of tripels, leaning more towards the pale ale side of things, this may not be the brew for you. It's a bit too sweet for that, but this isn't a negative for me. Everything has its place and time, and I really enjoy this beer as a starter (along with 3 monts, perhaps) or as an introduction to the world of belgian ales, particularly tripels, for the average drinker. There isn't too much of any one thing to leave you focused on it, with one exception.
Probably my only caveat with this beer is the fact that a sort of apple/grape-skin sourness becomes more and more pronounced the longer you let it sit. It's very much like champaigne in this regard, especially the result of a notable drop in carbonation that is to be expected from a beer this fizzy. Oddly, it might even be a decent replacement for fans of hard ciders and champaignes in this respect.
You'll want to share this one with another drinker so you can both take advantage of it while it's still churning up a head. I'd give it a 92 for the first three minutes and then a gradual decline to around 84 or 86 as it settles. Somewhat upsetting-- but you live, you learn, I guess.
