Don't know if I got a bad one or what. Poured this at a good temperature with a gigantic, light tan, foamy, billowy, thick head that slowly settles and very little lace. Color is an odd clear pink brown, with lots of bubble trails. Aroma is super mild and what's there is malty, roasty, fruity. Flavor's like nose, but up front is VERY metallic, mineral, and medicine. It's also dry, light soft carbonation and ditto carbonic tang. Finish is bitter and astringent. Also with time the metallic part diminishes. Don't know if I'll finish it.

Got this bottle from the UTOBEER beer stall, Borough Market, London. BB date: 2006.
When is a stout called an oyster stout? I've had at least three bottles made with real oysters and according to some history facts it was meant to be brewed that way. This one, according to the beer label, is made of water, munich malt, caramel malt, roasted malt, Challenger and Goldings hops. No oyster is mentioned. So I must say I'm a bit let down by this fact and regret that I didn't carefully read the label when joyfully purchasing it...
A: in a broad-rimmed goblet, it pours a very dark chocolatey hue, with a thin tan head making a sharp, high-pitched fizzy sound like a soda or coke~~ the cap quickly sinks into the liquid and leaves just a thin carpet of loosely-formed bubbles.
S: doesn't smell much like a stout in many ways: the nose is very sweet, lots of caramel, with a touch of coconut; also very malty, with chocolatey as well as ripe dark fruity hints, but overall more in line with a strong dark lager, dark bock, or baltic porter kind of dark maltiness. Roastiness is very very very weak, if any. Overall the flavour is simplistic, thin, and sugary, showing one-dimensional characters unlike a traditional stout I'd place lots of expectation of, let alone an "oyster" stout... Or maybe "foreign stout" should be like this?
T: fizzy mouthfeel of sweet caramel maltiness, brown sugar, flat flavour of ripe dark fruits like black prunes (or preserved, sweetened version). Some dark sweet chocolates at the back, and a touch of licorice is felt on the sides of the tongue. More sugar and Chinese red-bean paste, almost like the aftertaste of a sweet Belgian dark ale. Quite good amount of alcohol comes hand in hand with the overall flavour. Little aftertaste apart from a faintly roasted nutty sweetness...
M&D: it's medium-full bodied, but tastes simply too light for the flavour, with lots of fizz on the palate in every sip; I can't say what style this beer means to be--it's quite mixed and has a bit of -Baltic porter, -Belgian dark ale, -dark bock... but a stout/oyster stout it is not (with due respect). With its slightly cloying profile, I don't even think it goes WITH oysters (as probably meant to be according to its inappropriate name). Not a bad beer in its own right, though, but to "review it within style" plus its overall price performance (cost me 2.7 pounds for such a small bottle), I wouldn't buy it again.

Got this at De Gekraakte Ketel in Amsterdam.
From a bottle into a snifter
APPEARANCE: Off-white head quickly disappears into a very thin film. Very dark brown, almost black, with minimal carbonation.
SMELL: Barley malt. Maybe some dark fruit. Relatively weak and underwhelming, but not off-putting.
TASTE: Same as above. A slightly sweet component is nice. The alcohol bites ever so slightly, but is well hidden. Noticeable at the end, however. No real aftertaste and pretty generic really.
PALATE: Medium-thick body. Relatively smooth and a bit of a bite at the end. Carbonation is well controlled and it's slightly sticky, but not too sticky. The palate is the best part of the beer.
OVERALL: Nothing special here, though the palate is nice. The alcohol is well-hidden, but the nose and taste is just not interesting enough to say anything. It's drinkable, if only because it's generic enough and doesn't do anything out of the ordinary. I don't see it being an oyster stout either, compared to others I've had at least. Not one I'll re-visit

Black. No more. Brownish head. Correct stout appearance.
At the smell a lot o roasted, chocolate, chicory. Very intense. Not bad, but the alcohol is too noticeable.
The taste is similar, quite bitter, herbal. But here again, the alcohol is too strong and noticeable. At the end it can be a little boring.
Bitter chocolate, cocoa, dustiness. Quite smooth, in the end.
But the body is to thin to balance the rest.
Good bitter aftertaste, herbal, persistent.

first and for all this beer is called oyster stout because the wort is poured over oyster scales
during the brewing process
A: dark brown colour, off white head
S: burnt malts, hints of sea air
T: rather sweet, , burnt malts are there, not much else
M: medium body, low on carbonation (ok for a stout)
O: not really my cup of tea, not a lot of character, a tad too sweet, but not bad

A - Very, very dark brown. Almost black but not quite. A good inch or so of tan head that slowly falls away to a thin whisp on top.
S - A pretty strong port like aroma with some roasted malt.
T - The vinous, port comes through in the taste as well. Bit of an alcoholic kick. Some sweet caramel flavours come in at the back.
M - A full, smooth enough mouthfeel with low carbonation.
D - Alright beer but I wouldn't be going back straight away.
As others have said, it's a bit of a hybrid. A bit like a porter crossed with a belgian dubbel.
I don't know where the Oysters come into play. I was rather looking forward to an "Oyster Stout." No such luck here.

From a trade with Absumaster.
This dark ruby-red beer pours with a very large head. Nose is an unpleasant surprise, rather vinous, reminding me more of flemish sour ale or an old bottle of ale that has oxidized. Not sure what the deal is here, this is not the typical profile described.
Taste for some reason reminds me of wood, mildly roasted malt, a bit sour but a vast improvement on an unappealing nose. Still a hint of the sourness I found in the nose, but from what I have read this is not an expected part of the beer's profile.
Enjoyable to drink, hides the alcohol well.

Pours a very dark chocolate brown color with a foamy tan/ yelowish head. The aroma consists of dark roasted chocolate maltiness and salt seafood. Smooth roasted malty flavor with hints of chocolate, toffee, oatmeal, coffee and seafood(oysters). The fish taste is not toooverpowering however. Very unique.

Bottle poured into Schelde goblet in Ghent, Belgium. Reviewed from notes.
A: 2.5 finger creamy head of nice thickness. Black colour. Good retention.
Sm: Light barley. Bare hints of hops.
T: Creamy hoppy build, calling forth the cream. Balanced and built well. Interesting. The barley foundation is full and supportive of the hoppy notes, which themselves work together more as an ensemble than distinct notes. The way in which they combine is more important in this beer than a mere list of what is present. The hops are not synedochic as in many other beers, a feature that may be lost on some reviewers.
Mf: Delightfully smooth and wet. Brilliant. Complements the flavours of the body.
Dr: Not excellent but will serve as a great example of a well done bitter stout. Well priced, at least in Belgium.

Best before end 06. Brewed for Bierkoning Amsterdam. Appearance is good head, brown colored and a black beercollor. Nose is sweet carramellic, litle roasty and freshmalty. Alcohol is noticable has fine good apricot& pineapple yeastarome. Taste is full malty, thick bodied and medium to sweet. Good carramellic and not overdone roast. Very salty that must have come from that sealshellfiltration(?) as it says on the label and is IMO no good for overal taste. Get more thirsty while drinking it and gives a salty haging mouthfeel. No bad brew but IMO to many salts& minerals for a beer.

Part of a fridge cleaning night. Got this bottle while travelling in 2008. Figured now is the time.
Murky pond water, with zero head and lacing into my pint glass.
Raisiny wine on the nose.
More of the taste. Beer is simply too old, and I can't taste anything other than raisins. Kind of watery too.
Very little carbonation.
Overall this beer was just too old, and I take full responsibility.

Mahogany brown to black with a big-bubbled head that settles down to a skim, but sticks around for a while.
Suprisingly little smell. Some dry roastyness and chocolate smell, maybe. Taste is unique. Chocolate, caramel, something unique in the aftertaste. Is that oyster? There seems to be a salty, slimy coating in the mouthfeel. Could be oyster, I guess. I wish I could read my notes for the drinkability, but apparantly I was a bit too drunk to write neatly. I did write 3.5, though!

It's definitely back, as the bottle advertises, and it's not letting any light through. The medium brown head grows large, over two fingers off the top, but it's sparsely-bubbled and looks a little spritzy. Having grown that large, however, when it drops down it's condensed to a heavy thickness and density, sitting right around one finger tall. The lacing is downright thick and heavy as well, and clings stubbornly, leaving little of the glass uncovered as it goes.
There's an earthiness and an interesting intense minerality. I've set it aside and done some other things since pouring, and now I'm reminded that it's an oyster stout. Other than that, barley with a little sweetness to it makes the malt base. It may be a touch heavy on the oyster, the notes of which mute the other qualities found.
What I assume may be Belgian yeast makes for an unusual contrast. Malts bring just a hint of roast with a tinge of sweetness, but the heard brine and minderal aspects of the oyster seem to be a bit too much in this beer. It's not undrinkable, but i have to let it sit for more roast to come out of it. It's not bad overall.
The feel goes a little thin for a stout. It's not quite as robust as the label boasts. It's got a sizeable body for sure, but still sits in the medium range. Alcohol sneaks in somewhere and goes into a finish that draws out some powdery dryness.

A: Poured from a bottle to a pint glass. Had a dark brown color and a murky consistency. There was an inch of creamy, somewhat long-lasting head. Not much lacing.
S: An odd aroma here: Hints of coffee, malt, and a briny quality.
T: Tasted of malt, light yeast, coffee, and the aforementioned briny quality (the advertised oysters). This is kind of an odd flavor that's simultaneously inviting, yet slightly off-putting.
M: A good amount of carbonation with a dry finish. Medium-bodied.
O: Not necessarily a bad beer, but not one I'd readily return to again.

Had this beer in my favorite pub de Vlaamsche Reus in Wageningen. The bottle looks funny and it says that the beer has been filtered using Oyster shells from Zeeland (a Dutch province below sea level). The beer pours a very dark brown color with a small beige-colored head
Smell: sweet roasted malts, milk chocolate, and some toffee/caramel
Taste: Similar to the smell, but with some nicely balanced bitterness and some hints of salty liquorish and coffee. The finish is a bit dry, bitter and salty.
Mouthfeel: nice and creamy. Medium-low carbonation. Creamy in the mouth, medium-bodied.
Overall: a nice stout, but as often, there are so many more interesting ones around. Still, if you like the style, worth to try, you will not regret!

Bought the Bierparadijs in Meer, Belgium just next to the brewery and the border to the Netherlands on the highway from Breda to Antwerp.
Poured into an Leute Bokbier glass (oversized wine glass type).
Body is murky dark brown and a big strong medium to fine bubbled head that seems to last forever.
smell of coffee, caramel and some unidentified sourness
Taste of coffee, of course, with a first strong but later comfortable metallic aftertaste. There is liquorice and sweetness as well
quite a lot of carbonation for a stout and surprisingly coarse overall no Guinness smoothness.
I am not a big stout fan as I don't drink coffee and love my beer refreshing but this one is my favorite in this style so far.

Bottle: Poured a clear deep burgundy color ale with a giant size light brown foamy head with good retention and some lacing. Aroma of roasted malt with some sweet malt notes and a bread-like yeast is quite interesting. Taste is a complex mix between some liquorice, roasted malt and Belgian semi-sweet malt with notes of dry hops also noticeable and the influence of a Belgian style yeast strain cannot be denied. Very interesting and something I wouldn't mind having regular access to.

A: The beer is very dark amber (near black) in color and poured with a finger high dense beige head that quickly died down but never completely faded away.
S: There are light to moderate aromas of sweet and roasted malts in the nose.
T: The taste is very similar to the smell and is somewhat sweet and has flavors of licorice and roasted malts along with hints of chocolate, dark fruit and saltiness (from the oyster shells). There are some hints of bitterness in the finish.
M: It feels light- to medium-bodied, creamy and smooth on the palate with a moderate amount of carbonation. There are some hints of dryness in the finish.
O: The beer has some complexities in its flavors yet is extremely drinkable. It’s somewhat sweet, but not cloying because this is balanced off by a light amount of bitterness.

My night-cap on 23rd Oct 2012 in the excellent Cafe De Grendelpoort in Valkenburg, Holland.
33cl bottle poured with its sediment into the correct brewery glass.
The beer poured almost black, very dark brown maybe (the pub is dark to start with): on top a thin tanned foam.
Mixed bag in the nose and tastes: malts first and foremost, mild liquorice front with sweeter molassses taking over, a mini hop, dry finish completes the flavours but there is a lot more going on inbetween. My bottle had a nice, but unexpected and unusual 'semi-sour' feel (for a Stout) to it throughout the tasting. I also thought the alcohol level isn't hidden to any great extent. Complexed and different with a variety of fruit notes and malty levels of roasted/toasted chocolate and coffee.
