Dinkel Bock is quite refreshing in spite of its 6.6 % abv. It shows a distinct dry/fruity finish which comes completely unexpected from a German brewery. The estery character of Rudi Hirz’s house yeast and the unique Hallertauer Saphir/Austrian Opal hop combination (plus dry-hopped with Opal hop) harmonize very well. Its big body consisting of Pilsner malt, Rudi Hirz’ own floor malted barley and Spelt provide the perfect malt sweet balance.

Look: It pours amber with a little bit of haze and an off white head. Head retention is very good.

Smell: There are aromas of light grain with some yeast. There are some herbal qualities as well.

Taste: There is some grainy sweetness and yeast. There is some spiciness with herbal qualities.

Feel: It has a medium body with a yeast aftertaste.

Overall, the flavors don't quite work for me as the yeasty aftertaste.

500ml bottle into a pint glass. Could not find any freshness dating.

Mixed look to this one. Bottle proclaims "naturally cloudy", as I guess naturally murky might be a turn off. Mudy medium brown color body. The head is a creamy slightly off white color which persists in excellent form throughout, leaving a sheet of lacing.

Aroma is mild, but doughy bread and non citrus fruit notes can be detected.

On tasting, again flavors are mild. Slightly sweet, but with a fleeting bitter note. Pale flesh fruit, pear, apple. A little dry.

Mouth medium, finish a sweet/dry progression.

Overall, this is actually a very pleasant drink. Abv well nigh invisible. Would certainly have again.

Poured from fridge temp. Pours an opaque orange with white head. Nose is really nice. Orange creamsicle immediately. Pine, wheat, a bit of barnyard funk, leather, whisky, malts, honey, and wild flowers. Really organic on the nose. The taste is really interesting. Almost IPA-saison level. Hoppy, grassy, barnyard funk, grapefruit peel, pine needles, dirt, leather, malts, and a bit of toffee. Mouthfeel is fairly dry and light, with a sweet aftertaste. Overall, a really nice beer but not something I typically associate with a German beer.

I was really excited to see some Apostelbräu stuff come in at my local shop recently, so I picked up one each of this beer, their Bavarian Saison (good stuff but lacking a bit of that farmhouse appeal), and their Roggenbier (great for the style, but it's certainly not a popular or well-represented type of beer which leads it to feel a bit lost unintentionally). This is the only one I've saved for personal consumption, as the others were shared with friends at a bachelor party. Dinkel wheat, or just simply 'dinkel,' is an alternate name for spelt, which is a type of wheat. The history of this grain is apparently quite storied, but it has had comparisons drawn to "emmer wheat," which was, coincidentally, featured in their Bavarian Saison.

Anyway, this pours an insanely-cloudy deep amber with a huge, retentive head that builds up to a solid two fingers before slowly sinking down to a finger-and-a-half or so, leaving behind some moderate, decent lacing with alright legs. This is kind of a rough looking brew, honestly, but it's sorta endearing in its own way.

The nose is straight-up farmland. I don't think I can remember the last beer I had that smelled so much like a rustic-ass barn, but this is so redolent of that aspect, including the atmospheric funk (reminds me of goats for some reason), and I'm instantly transported to some tiny German farm in my mind's eye. It's funny, though, because it kinda smells... bad? But I'm also so impressed by how specific and evocative it is that I almost can't be offended by it at all. Slight phenols, baked bread, herbal hops, odd wildflowers, wild grass... lots going on, and a lot of it is hard to define honestly.

On the tongue, Dinkel Bock is a slightly-more-straightforward experience. It's malty, for sure, and flexes that aspect quite obviously with a big wheat-driven front-palate that quickly heads into slightly hoppier and spicier territory. A rye-like funky earthy characteristic drives the middle of each sip and leads into a semi-phenolic finish that brings to mind a dunkelweizen somehow, though definitely drier and less flavorful. That isn't to say that the spelt malt here doesn't affect the flavor profile, because it does add some light nuttiness and character here and there, but it's a bit less impressive than it probably wishes it were. Quenching, semi-hoppy, drying finish with a soft wheat presence and a lot of grassy, funky, rustic character that really feels convincing. This is enjoyable stuff but it's really a specific mood beer, and I'm not entirely sure what mood it embodies. It's early Autumn right now so I guess it's probably "in season," and made for consumption at this time. Grab one and try it for yourself!

This one pours a slightly hazy and cloudy golden yellow color, with a small head, and lots of lacing.

This smells nutty, with some floral hop character, and a bit of breadiness.

I'd want a bit more deep maltiness here, but it's super crisp and clean at least, with a nice clean yeastiness, and a floral and sweet hop character.

This is light bodied, and very drinkable, with a crisp finish - it's well-attenuated and with no real technical brewing flaws.

Although stylistically this wasn't quite what I was hoping for, it's still obviously a well brewed beer.

Draft at BitterCreek. Dark golden with ring of head. Barrel aging obscures the normal Bock sweetness, but can also attribute this to the Dinkel grain. Interesting, slightly sour rye characteristics. Reinheitsgebot for sure, but pushing the envelope.

SRM 20, dirty copper brown. This beeris hazy with small flakes of dark brown sediment floating about. The foamy head is almond and long-lasting after reaching one inch.

The aromas are all rather mild, comprised of sweet malt, apples and caramel. Warmth brings out a light floral scent.

Malt is strong on opening, and well balanced with mild, sweet/bitterness. This beer is similar to a Nut Brown Ale, including peanuts, hazel nuts and Brazil nuts. A bit of bread dough is present just before the long, mild and sweet finish. Sweetness takes over as it warms.

This beer has a full body with a slick, soft texture. As expected, the carbonation is fine and light. The alcohol is below expectations.
This is a good drinking beer, though it lacks much of what I would expect from a Bock.

Pours a matte opaque muddy brown color. It seriously looks like muddy water. Large yeasty chunks float in the beer. Three finger sudsy off-white head dissipates slowly but not completely leaving a good 1/2 of foam on top of the beer. Head retention is excellent, but the overall appearance is unappetizing especially with the chunky yeast.

Aroma is strong with notes of tangy apple juice, stone fruits - prune and apricot - and some tangy sourdough notes.

Taste follows the nose with strong notes of sourdough, bready malts, and some light dark fruit notes. The fruity notes were far more pronounced on the nose - in the flavor profile they are muted with the bready malts taking center stage. Earthy, slightly bitter hop notes come through with a slight bitterness on the finish. There is a tanginess to this that I can't quite place, but will compare to sourdough. Its kind of tasty in its own way.

Feel is medium bodied and smooth. Carbonation is spritzy and soda like - almost too carbonated. Dry finish.

Overall a nice bock bier - would love to have gotten this fresher to review, buts its almost impossible to find these days.

Murky appearance with the lees from the bottle. Aroma is classic European with the hops used. Grassy and a little skunky as this must of been light struck. Not terrible but it is much more prominent in the flavor. Nice caramel and biscuit flavor. Surprising light body for an almost 7 % ABV bock. Alcohol is well hidden. No doubt the score was hurt by the unknown age and improper storage.

Grassy hops with a touch of sweetness on the malt. Almost completely clear even though its unfiltered. You can smell a scent like rocks or water running over rocks. Egg shell foam on a golden amber body. Fat firm head that lasts. Light lemony backing to the hops . light champagne like bubbles that meet rich malt. Sweet oakey scent of whiskey. Smooth and drinks much lighter than you might think at 7%. Finishes with a sultry hop bitter that coats the tongue. Cracker rich. Not too much wood scent. It's a dry floral scent form the wood barrel. Breaddy. Bubbly carbonation. Orange peel form the Tennessee whiskey. Spicy hops, mellow honey sweetness with a bit of depth . Finishes malty with a crackery bite and a touch of vanilla. A bit of warmth on the tongue with the hop bitterness. A whisper of heat in the swallow. The yeast has the scent of dough rising. It also has a light smoky accent. Flavors of Spanish peanuts.

From the bottle bought and tasted in Germany, it pours a hazy Baltic amber with a nice head that has great retention. A bit of odd scented malt with possibly some citrus in the nose. The mouth gets an enjoyable just off from barley malt flavor.

It is also imported into the States: equally as good, just a modified, US English marked label.
