Our Brewmaster Dan launched his Wild Fruit Cave this winter brewing Oud Bruin, a Flander's style ale that is immensely complex both tart and sweet. Soft toffee notes lead with a blend of Wisconsin, British and German malts that first rested in the Coolship before spontaneously fermenting on oak in the cave. Hallertau hops, matured in the horse barn, elegantly support sparkling fruit notes that frolic before a punctuated oak finish. 100% naturally fermented in oak vessels this is beer that can be enjoyed now or the patient few can lay in their personal cellar to age.

Poured from a bottle into a Bell's tulip. Awesome-looking pour! It's clear and dark reddish-brown with a big clumpy lasting crown of foam. The nose is a bit subdued, but I still get nice notes of cherries, toasted oak, and honeydew melon.

Nice firm feel and a tart flavor that contradicts the sweetish notes I got on the nose. Good fruity sour notes up front that are not overly aggressive. There is a fair amount of vanilla-like toasted oak character to complement it. The sour notes don't carry all the way to the finish. Towards the back of the palate, they kind of die out and there's something of a vacuum left in its wake. If this beer had some fruity notes to fill that space, we'd be talking about a top-shelf beer here.

Another really good Thumbprint beer from New Glarus. I like the fact that their sours are not crazy sour. I realize some BAs gravitate towards beers that taste like fruit soaked in sulfuric acid, but not me. This kind of beer should be a refreshing aperitif, not something to devour the lining of your stomach.

As enigmatic as oud bruin ale are, their tepid sourness and earthy toasted character is what New Glarus has realized best in their Thumbprint sour brown.

Its rusty garnet color highlights the toasted nature of the ale along with its reddish cherry decoration. And much of that is founded as the nose opens up with toasted oak, tangy vinous fruit and a musty soil-like nature. However, that first creamy-sweet sip proves to be more malty than dry.

Its middle is off-toffee, toasted and nutty- taking on a charred oak flavor that nearly rivals the sweetness of cherry cola. But as the ale unfolds, its souring taste sets in with mild balsamic, cider and merlot-like must.

Creamy throughout, the finish comes way of malt richness that imposes over that of dryness or souring agents. Even for the reserved brown ale, the tang found here is incredibly soft- an unfailing choice for those seeking favor in the sour ale families.

New Glarus brewing an Oud Bruin? Will this be on par with Enigma or Cranbic? The body looks the part. A murky, muddied brown liquid inhabits the glass. The fringes of the glass show a slight orange hue but this beer is straight brown. The foam is impressive. Thick and creamy with a yellowed hue and incredible staying power. The head never recedes below a finger in height and leaves behind sheet lacing with even thicker drink lines.

Metallic notes sway toward minerality and back from the beginning. A drizzle of cherry laden balsamic vinegar makes me salivate. Minerality seems to grow with each successive inhale. Honestly, there's not much depth. There's no barrel character and the only funk at the moment is the minerality throughout. As this bruin warms sweetish apple notes reveal themselves.

Unfortunately, the flavor is much the same as the nose. There just doesn't seem to be much there.The minerality runs from start to finish in the form of wet stone and iron. Sweetness runs through the middle, easing the minerality slightly, with apple and very mild cherry. There's not much tart, again no barrel, and the finish is indistinctly sweet. There is no pop or brightness. It's just kind of there.

The body feels like there's a touch of heft off the bat but as it moves over the tongue it gets thinner and thinner until the finish leaves nothing in its wake. As soon as I swallow it's almost like I drank nothing at all. A tartness so soft it's hard for me to actually label it as such lingers. The finish eventually dries up.

I have to say, I'm pretty disappointed in this newest offering from New Glarus. It's in no way bad. As a matter of fact, the flavors that are there are good, just mild beyond recognition. The finish is nearly nonexistent. I had very high hopes for this beer, especially considering it's the first release from their fruit cave. I assume they're just working out the kinks. Into the basement the rest of these go for sometime down the line.

Picked up 12 bottles of these tasty little guys in a trade with Ksecler. Poured into a Ichtegem's Oud Bruin glass.

Pours a deep unfiltered brownish copper hue with a fat tan head that lingers with massive amounts of lacing. Aroma is sweet and malty, fruity and slightly acetic. Flavor is rich and malty up front , giving way to tart grapes and wonderful woody flavors that linger on the palate with nice mouth puckering sourness on the finish. Mouthfeel is on the lighter side of medium bodied, extremely dry and effervescent. Overall delicious summer time beer and a great representation of the style. Definitely better as it warms and opens up a bit. Could see this cellaring well.

New Glarus Oud Bruin

Poured from a 12 oz bottle into a stemmed pilsner glass. This was served lightly chilled.

A) Brown brew with a reddish tint. A gentle pour still yields a thick foamy light tan head. Excellent retention and lacing.

S) Tart fruit and funk... Sour apple, cherries, and some ripe pear for sweetness. Woody and earthy. Nice aroma...

T) Follows the nose... Funky and oaky. Tart fruit and some malt sweetness. Good balance....

M) Lighter medium body with lively carbonation. Tartness coats the palate. The finish is rather dry. The aftertaste improves as the beer warms.

O) This beer has steadily grown on me since my first bottle back in July. Not in the same class as the Wild Sour Ale from last summer, but still really good. I think a little age will help too. In any case, I'm pretty stoked about what's in the works in that Wild Fruit Cave.

Appearance: deep, translucent red color with a rich off white head that leaves a nice lacing as it goes down.

Smell: fruity, but more like sour apple and tart cherries. Some wood notes. Definitely sour smell abound. No sign of the toffee.

Taste: just like the smell, but with a bit more tartness to go with the sour.

Mouthfeel: leaves a sour, tart aftertaste. Pretty crisp on the mouth though.

Overall: I like it, but I'm curious how it'll taste with a little age to it.

Poured from a 12 oz. bottle into a tall New Glarus Signature Pilsner Glass.

Appearance: Pours a deep and hazy brownish amber with a lot of bubbles and a big three finger off white head with decent retention. Leaves a lot of lacing clinging to the glass.

Smell: A sweet, tart, and fairly sour malt forward aroma with big hints of fruits, oak, and spice. Toasted malt with hints of toffee, caramel, biscuit, and yeast. Candied sugar and some spice hints of cinnamon, clove, and pepper. Hints of oak, wood, leather, and tobacco. Big fruit aroma with hints of tart cherries, berries, and green apple along with dark fruit hints of grapes, fig, prune, and raisin. Background hints of earthy and spicy hops. A very good aroma.

Taste: Like the aroma, a nicely sweet, tart, and sour malt driven taste with good notes of fruit, spice, and oak. Toasted malt with bready notes of biscuit, caramel, toffee, and yeast. Spice notes of cinnamon, pepper, and clove. Sweet notes of candied sugar. Good notes of oak, tobacco, and leather. Big mix of fruit esters with notes of cherries, berries, green apple, dark grapes, raisin, fig, and prune. Subtle backing notes of earthy and spicy hops. A really good taste.

Mouthfeel: Medium bodied with a fairly high level of carbonation. Creamy, juicy, spicy, and sour with a fairly drying finish.

Overall: A very good take on a Bruin. Good mix of fruit notes and spices. Kind of like a cross between a Dubbel and Sour Ale.

Great sour taste to start. I would rate this higher if not for the metallic aftertaste. I will admit this is the first beer of this style I have tried so maybe I am just being naive here.

Thanks to Jeff for this one. 12oz. bottle into Hill Farmstead stemware. Shared with schen9303.

Pours a frothy 1.5 finger light brown head with good retention. Beer is a clear mahogany. Lacing is layered and webbed with great stick. Very good.

Nose is pretty subtle and subdued. Hints of crushed red fruit, vinegar and a mild wet wood and funk. Decent but barely there.

Opens tart cherry, raspberry, oak and funk. Slight vinegar notes come in towards the middle mixed with sweet fruit puree and a wet wood presence on the back end. Not too acidic which is good. Finishes mellow and sweet with a barely there aftertaste. I really like this.

Light bodied with ample carbonation. Prickly and bubbly in the mouth and goes down sparkling and crisp. Finishes a bit accented with a mellow aftertaste that dissipates quickly. Refreshing and very drinkable.

I'm not usually a fan of overly acidic Oud Bruins so this is right up my alley. Nice sweetness balanced by just a hint of tart and vinegar. Definitely worth trying.

12-oz bottle to snifter, consumed on 8-17-2014.

A: dark copper, hazy; one-finger bone white head, with tiny bubbles here and there; the top of the head dissipates quickly, but the residuum clings to the glass; throughout the session there's a healthy film resting on top of the beer (4.25)

S: tangy cherry, acetic acid, then oak (4)

T: the cherry leads the way, but there's a distinct metallic twang immediately thereafter; on the finish, luckily, the metal's nowhere to be found - still, this is a tad boring, offering little more than an acetic cherry (3.75)

M: fairly dry, moderately carbonated, quite drinkable; I'd guess this is lower abv (4)

O: since this improves with warmth, I'll give it a 4

12 oz. bottle poured into a snifter.

Appearance - Reddish brown. Nice off-white head. Thick collar. Decent retention.

Smell - Woody. Some nutty malts. Lemony acidity. Light funk.

Taste - Woody up front. Lemon tartness. Moves into a light cherry tartness. Some grainy flavors. Sourness dies down a little in the back and leaves a mustiness.

Mouthfeel - Well carbonated. Light sourness. Very drinkable.

Overall - I was the only person in the group who really liked this. Light, flavorful, and drinkable sour beer.

Pours a light garnet with a substantial amount of fluffy red-tinged foam.

Some slight funk, but not overwhelming, and dark fruits, namely cherry.

Lots of cherry tartness with a subtle funkiness.

Mouthfeel is very tart, will make you pucker if you aren't expecting the wild yeast aspect, but very refreshing!

Overall, this is the first shot at the Oud Bruin style and I have to say I think I picked a great sample.

2/21...pours reddish amber, white foam, that settles down with some lacing. Sour malty nose. Taste is a subtle sour, somewhat watery. Tart and sweet. Some oak. Woodsy sour, simple. Light carbonation. Citrus pokes through.

12oz bottle, poured into oversized wine glass

A- pours a murky brown color with some reddish tint around the edges, small creamy off-white head eventually reduces to a thin film floating on top, leaving behind some nice lacing

S- tart balsamic vinegar aroma up front quickly followed by a huge vanilla oak barrel aroma that gives notes of caramel, black cherry and earth. Fruity aromas of green apple skin, lemon & peach

T- tart and puckering on the tongue up front with balsamic vinegar and caramel sweetness. Mid-palate is actually pretty uneventful and almost watery on the palate. As it nears the finish, oaky vanilla kicks in with a bit of toffee sweetness, with a fruity linger

M- medium body with low carbonation leads to a fizzy mouthfeel and a bone dry tart finish

O- this one good potential, but the mid-palate was just to watery to match the tart finish. Perhaps some age will help

Thanks to Margaret for sharing, served in a stemmed taster.

Color is a ruddy orange tinted brown, frothy with creamy foam around the edges that fleck the sides of the glass with spotty lace. Good clarity, color seems a bit light.

Aroma is fairly mild, some baked apple and tart orchard apple, ample malt presence, not much barrel character or funkiness to speak of. Taste was similar, tart apple with some baking spices in the periphery, but missing essential barrel character that defines the style. Feel was spritzy and thin unfortunately.

Was really looking forward to this before I had tried it, seeing as Enigma and Sour Brown Ale are two all-time favorites. It was a bit of a let down, but i'll revisit it and revise this review if necessary.

12 oz bottle poured into a tulip.

A - Oud Bruin pours a tawny amber color with a billowing khaki head that retains its presence wonderfully despite being a sour beer. Wispy lace decorates the glass wonderfully!

S - Toasted and bready malts first suggest soft brown sugar sweetness but open up with deep complexity to reveal distressed leather notes, tart and pleasant faint undertones of vinegar-like sourness, dark fruity intricacies of fig and dried prune, and a trail of the oak barrels it's been aging in.

T - Oud Bruin's maltiness washes over the tongue with thickly sliced wheat bread toasted and sprinkled lightly with brown sugar but, as the aroma suggests, complexity creeps in. Earthy leather and oak pull forth with a touch of soured dark stone fruits behind for a delicious flavor profile.

M - Sweet from beginning to end, this Oud Bruin's traces of sour characteristics act to balance the beer with their delicate tartness, not stand out, which it does almost flawlessly. Truly sour, it's not but balanced, dry and drinkable, it sure is.

O - New Glarus continues to impress with it's sour program, creating a Belgian-style Oud Bruin that mimics some of the classics almost to a T. Malt forward, this brew has a light sweetness carrying through the whole flavor profile that's perfectly cut by the delicate tartness this style is known for. Dark fruits, oak barrel, and distressed leather give the beer deep complexity while it's lighter body makes for an easily drinkable brew that can be explored pint after pint.

A-poured into tulip glass. Nice 2 finger head that did not last too long. Some lacing on glass but the gals had another beer prior so maybe not rinsed well. Color is dark amber, coppery color. Very handsome ale.
S-fruity cherries, crisp clean smell
T-bottle says Flanders ale style. I never had one. Tastes like it smells. First is tart, then sour, then dry finish.
O-this is a thumbprint series and I always search for new ones on my beer adventures. Despite the price of a four pack. I will buy this one again. I like the tartness and dryness. It has a sweetness to it. Drink fresh. Support your local breweries .

Appearance - Medium brownish-amber. Quite hazy. Tall tan head with good retention.

Smell - Medium malts. Caramel and raisin. Sweet-tart fruit. Sour cherry or grape.

Taste - Quite fruity and sour, acidic. Doesn't deliver malt in the amount suggested by the aroma. A little malt in the background. A watery caramel. More prominent is a sour cherry or even lemony flavor.

Mouthfeel - Medium-light.

Overall - I can't claim to know much about sour ales, but this one doesn't seem to hit the categorical marks. It any event, the flavor's a little one-note and a little thin.

This is a very complex beer, both tart and sweet, it starts out with soft toffee notes and finishes with a malty backbone which includes wisconsin, british, and German malts. It is spontaneously fermented on oak in the cave and contains Hallertau hops. The hops and malts elegantly support sparkling fruit notes that end with a smooth oaky finish.

Poured into a Haw River Farmhouse Ales teku glass. No freshness date.

A- Pours a reddish light brown color with a 1/2 inch light tan head that retains decently before becoming a thick ring around the edge of the glass and a bubbly center patch of surface foam. Resilient cobwebs of lacing.

S- Lactic acid aroma makes my tongue salivate slightly. The barrel presence is kind of heavy on this one as the oakiness soon drowns out the fruitiness first put forth.

T- The elements are less separated in the flavor as the fruity sweetness combined with the light sourness and mild oak notes make for a coherent flavor profile. Slight metallic taste and a bitter cherry aftertaste.

M- A bit dry with a lower level of tartness. Medium carbonation and a body leaning toward the fuller side.

O- Though the flavors marry well together, I was looking for both a tad more sweetness and a tad more sourness. Still, a pretty easygoing sour that I would recommend to someone trying to break in to the style.

A-Clear amber orange in the glass, one finger head that lingers and tries to leave some lacing.

S-Lots of dark fruits, cherries and plums. Tad bit of wheat, mild mild tarness, some oaky notes.

T-Almost like a quad in terms of the dark fruits. Tartness is very subtle, needed more.

M-Medium bodied, good deal of carbonation.

O-Too me it was more of a quad than a sour, the tartness needed to be kicked up to where it was at least rather noticeable.

Been waiting patiently for a few weeks to try this one. Bottled recently?

I think it might be more accurate to call this a Flanders/Flemish Red rather than Brown (Bruin) as brown usually indicates stainless steel fermentation without the spontaneous yeast that can occur in oak. But this was the first beer to come out of the wild cave at New Glarus, so it's possible that the oak vats were inoculated with the yeast desired, a technique more prevalent in the Flanders Brown style.

Appearance: Pours a dark copper getting lighter around the bottom of the glass. Thin head, gone quickly. A pretty beer, but I expected a bit more head to stick around. Great color.

Smell: Sour hit me as soon as I opened the bottle. Quaffs like a sour Dubbel- tart cherries, prunes, and figs. A touch of malt reminds you that this is a brown ale after all. Not getting much hops, similar in this regard to Belgian Red. There is something bitter in there, but it's pretty deep down.

Taste: First sip hits me with cinnamon, apple, and a very subdued tartness. No cherry at all. There are a ton of familiar flavors in this beer: licorice, bread pudding, brown ale, caramel, sour apples, candy raisins. Sweet and then bitter on the very end of the finish. Tart to sweet to bitter, always keeping your palate interested. I'm not overly familiar with Flanders-style ales, but this is fun to drink.

Mouthfeel: Not a lot of chewiness, not any of the annoying over-puckering lurking I get from some sours. Drinks like fresh cherry cider, if you know what I mean.

Overall: Kind of a precious beer. Sour on the nose, sweet, sour, and bitter on the palate. The process for making this amazes me- open resting in the coolship followed by spontaneous fermentation in oak barrels. An amazing array of flavors from such a simple process. Does mellow as it warms. Will definitely buy more to both enjoy fresh on cool summer nights and age for a few years. This will probably taste great around Christmas time.

A: Pours a murky reddish brown with a nice egg shell head.

S: Aroma is tart plum and cranberries and light roast and caramel. Definitely reminiscent of Wild Sour Ale.

T: Taste brings very light cranberry tartness, mild metallic yeast, wholewheat bread, plum.

M: Medium-bodied with creamy carbonation.

O: Definitely on the milder side acidity-wise for an Oud Bruin, which makes it very drinkable. I would prefer a little more acetic action here but this is pretty nice.
