Served in a Chimay chalice
Wow, where to start! Pours a clear copper with a dense, frothy tan head. A beauty to behold. Aromas of Candy sugar, vanilla and yeasty, bready alcohol. The taste is maybe a little too sweet, but nothing some ageing won't cure. Warm caramel, raisins and bready yeast flavors with a really nice warming alcohol. Soooo smooth it's scarry. Very easy to find yourself downing a few too many and not realizing the alcohol because of the smoothness. Possibly one of the best releases from New Glarus. I can't wait to try this after a few years.

12 oz bottle split into a Tripel Karmeliet tulip.
No date or info.

A big thanks to Bnieman and his dad for sharing this aged beauty!

A - Mostly clear orange amber with a low but persistent white head. Tiny patches of lace cling to the tulip.

S - Yeasty all over the place with big fruity esters of strawberries and plum that moves into caramel and toffee malt sweetness. Low phenolic alcohol.

T - Sweet caramel and toffee malt and low yeast esters. The flavor is a little thinner and less nuanced than the aroma.

M - Smooth, full, and soft with a warming finish and nice flavor.

O - It's definitely showing signs of it's age but with that said, for it's age, it's still quite good, just a little less nuanced than it would have been fresh.

Thanks to GraniteSkunk for hooking this up.

A: Pours a slightly hazy copper color, capped by a half finger of frothy, off-white head. Retention is decent as it settles down to a thin layer of foam and holds there.

S: Lots of dark fruits up front with cherries, figs and dates, followed by a sweet, lightly toasted bready quality. Some winter spices lurk in the background along with light bourbon notes.

T: Sweet bread start right off, followed by a big dark fruit presence on the mid-palate with cherries and figs being dominant. Spices come in lightly near the backend along with bourbon, leading to a long, sweet and slightly warming finish.

M: Medium to full bodied with moderate carbonation, just a touch thinner than it feels like it should be.

D: Very easy drinking for such a big beer, good take on the style.

Bottle. Pours very slightly hazed copper amber color with a slight head that collars around the glass. The smell is very interesting and is like nothing I have smelled before. Bready, boozy, some spice, and almost a tinge of sourness like a good funky cheese. Medium/light mouthfeel. The taste is also pretty interesting with fruit, spice, and booze notes. This one has a funky aftertaste as well. A sort of lingering old fruit taste, maybe caused by the age. Not bad but the booze gets a little heavy and at this ae the brett makes this a little funky.

Poured into goblet.

Pours a light layer of off-white head. Color is a peach hued copper.

Aroma: Notes of toffee and Belgian candi sugar stick out fast. Some spice notes, cloves and bananas. Fairly sweet. Has some yeast flavors. Fairly malty with no hop presence. A touch of alcohol.

Taste: A lot of spice with some floral earthy notes showing. Has some cloves, some spice, nutmeg, bananas, dried apples, nut flavors, and alcohol. Toffee and bready malts. Fairly decent, but it shows age.

Mouthfeel: Warming, smooth, and a bit hot. Medium to full bodied with a medium amount of carbonation. Ends dry.

Overall, for being 3.5 years old, I think this one held up fairly well. It was bit hot still, but I couldn't taste any bourbon that it was said to be aged in. This beer is going straight to my head. Somewhat drinkable.

Appearance: Pours a hazy amber color with a modest head that is not unexpected for a beer of this age; still leaves a nice splattering of dashes along the side of the chalice

Smell: Spice cake, with nutmeg and clove, joining the dried fruit (cherries and figs, primarily); just a hint of bourbon and vanilla

Taste: Cherry and fig, up front, with the initial sweetness tempered by the Bretty tartness; by mid-palate, the spices arrive in full force, with the nutmeg, vanilla and clove character adding a cakey element; after the swallow, the beer adds the oak and bourbon flavors to the mix, kicking everything together into a most impressive crescendo

Mouthfeel: Full bodied, with moderate carbonation and some lingering warmth from the ABV

Drinkability: Perhaps this beer is beyond its prime in certain ways (carbonation, mostly), but it has come together in an extraordinary fashion; the Brett adds a very subtle sourness that I would have expected to increase dramatically over time, but it stays in the background, allowing the more typical quad flavors to dominate; I really appreciate that this is not over the top boozy, which is a trait I don't care for in some quads I have tasted

Appearance: Pours a transparent amber orange, lighter than I'd expect from an quadrupel, with a lot of fine, slow carbonation emanating from dozens of nucleation sites alongside the bottom of the cervoise. The head was impressive for a beer of this age, a good finger tall, with surprising retention, leaving plenty of foamy, dense rings of lace around the edges of the surface and a nice, thick, foam dusting atop the surface of this one. A good start.

Aroma: Incredibly malty, thick, and sweet. The aroma runs the gamut from light Belgian candi sugar to heavier malt notes - caramel, light toffee, toast - but contains a few other interesting flourishes as well. Spicy cloves and nutmeg and barrel notes - coconut and vanilla, along with the faintest hints of bourbon - round this one out nicely.

Taste: ... cream soda? An interesting beer, showcasing a great many interesting notes. Caramel, brown sugar, and hints of toffee are here, but a little dry - that is, they're malty, husky, with a nice earthy presence, but a lot of their sweet, roasty edge has been lost to age. Vanilla and barrel sugars are stronger, as are a few fruity notes, mostly dark - raisins, plums, dates - though light in a few places, obviously hinting at cherry. The earthy (nutmeg) spice of bourbon nips at the farthest edges of your tastebuds at the end of each sip - in fact, it almost blends in to the whole "quad" experience, with a lot of the heat that one expects from a quad blending in to the heat one expects from bourbon, and a lot of the maltiness one expects from a quad blending in to the light, corny, caramel-y maltiness one expects from bourbon ... nice.

Mouthfeel: Cream soda? A creamy, smooth, subtle beer, with subdued, soft carbonation making for a thick, even, velvety body. A really nice feeling brew, actually.

Drinkability: Cream soda? I jest, surely ... or do I? This beer is remarkably smooth, even, and creamy, and it's dominated by vanilla and coconut barrel notes and mildly caramelized malts, with a few hints of spice and fruit added by a reasonably selected yeast strain. I wish I had a bottle of this one fresh, so I could see how much of this smoothness was age - how carbonated it may have been at one point, how hot the bourbon may have been, how spicy the other fusel alcohol and yeast notes may have been - and how much is simply due to this one laying in someone's cellar for 3, 4 years (when was this one released again?). Stylistically, it's not the most quad-esque beer I've ever had, but it hits a lot of the right notes and a lot of notes that I enjoyed nonetheless, so here's to NG (again) and another great Unplugged brew.

From 7/9/10 notes. Had at a local DC tasting.

a - Pours a golden amber color with 1 inch of white fluffy head.

s - Smells of brett, sour, apples, floral hops, and a little bit of dark fruit.

t - Tastes a lot of apples, sour fruits, and dark fruits.

m - Medium body and moderate carbonation.

d - A pretty good quad with some nice sour fruits to it. Would try again.

Another NG Unplugged from iowaherkeye.

Pours a slightly hazy, but certainly not opaque, amber brown with a big bubbly beige head that recedes quickly and leaves no lacing and only a tiny collar.

The aroma is sweet and very much like a brandy or sherry. Definitely a bit boozy in the nose with some sweet caramel malts and candi sugar. There is also a very prominant yeasty dough araoma that's almost sour in the nose, but not quite.

The taste does have a bit more sourness, especially up front, from the bready yeast presumably. The backbone is the candi sugar, toffee and dark fruits, especially raisins and figs. The finish is slightly dry.

the mouthfeel is sugary sweet and medium bodied with lots of carbonation. There is the dryness that I'm not accustomed to getting in the style from the yeast or something else. It's definitely dry and slightly tart in the finish.

This is certainly a well-crafted beer, but I think it's probably a bit past its prime, at least for my tastes. The sourness takes away from the quad character for me and the body is a little thin to be a world class quad.

Tasted 7/24/09.

A - pours a deep, rich amber color with a very white, small-bubbled, almost non-existent lace.

S - extreme raisin and fig on the nose, perhaps with a bit of deep red berry, maybe cherry

T - tartness at the front leads to a very minor fig back end, perhaps with a hint of it lingering at the very back of the mouth. This is an extremely wonderful balance

M - I'll preface this section by saying I'm not a fan of sours, and that's what this reminds me of. The tartness at the front leaves me puckering up for the rest of the taste. It's that front end that just leaves me hoping that my whole mouth does not go into a fit, making it hard for me on the mouth.

D - the mouthfeel really hurts the drinkability issue here. It's the only downside, too, as the flavor and aroma are very nicely balanced and extraordinarily enjoyable.

Thanks for splitting this, Devin!

A: Clear amber with a thin head, poorer retention than I'd hoped for.

S: Blend of bready malts and cherry character. Complex sweetness with honey, vanilla and a little jaggery. Not really spicy.

T/M: Opens sweet with a combination of ripe cherries and mild plum-like oxidation present. Sweetness is pretty high with vanilla, honey, brown sugar present. Fairly light in body with a dry finish with a mildly spicy character, with hints of nutmeg a mild cherry-skin like astringency. Crisp carbonation is present, enhancing the sharpness of the sweetness. The lack of a yeast character is mildly disappointing, and the absence of the advertised bourbon barrel character is surprising too.

D: Despite all my ranting, I really enjoyed this beer. Maybe not the best Unplugged beer, but still very enjoyable.

Huh, never reviewed this. Well...drinking it now, so it's time.

Strong cheesy aroma, something like Parmesan and fresh bread dough, strangely enough. Also dried dates and a touch of alcohol. Beautiful high clarity orange color with strong foam initially. Wondering if there was any Brett yeast in the mix, something there that strongly resembles bread dough, definitely attributed to the yeast strain. Flavor is dried fruit to the Nth degree...apricot, raisin, rhubarb fruit roll-up all in one. Lovely residual nutty almond flavor. This is better than Westvleteren for my money, with less sugar involved too. Very rich and savory feel, one to sip and savor...

Pours a caramel tinged amber with a pinky of cream colored head. Good head retention & lacing & mice oily sheen to it

S: Dark fruit & pineapple

T: Dryness, cherries, pineapple, raisins & leafy hops up front. Some boozeyness as this warms, along with cherry, apricots & dates. Finishes boozey, with a ton of dark fruit & slight leafy hoppyness

MF: Vigorous carbonation, slightly sticky with medium body

Drinks a bit slow, but this is a very nice Quad, albeit a tad fruitier than I prefer. This makes me think of a GOOD Christmas fruitcake
