Brewed in the tradition of the Lambics of Belgium but using a blend of Ale Yeast, Brettanomyces, Lactobacillus, Pediococcus, and Acetobacter. These microorganisms came from our culture collection as well as many collected by Dan around the wilds of Wisconsin! Fermented and aged in Oak. This beer spent the summer of 2009 aging outdoors in used oak barrels, then bottle fermented.

So I guess I will have to come back to this review, because I still have a 2010 bottle in the cellar. This is the July 2015 bottling (2015 Vintage). But May 2022, my absolute favorite beer of the trip, broke out by Nick U, and man, this has to be one of the best reviews in at least the last few hundred, maybe thousand, who knows.
Pours golden. It looks good, it looks familiar as beer. Virgin white head, 1/3". The aroma had probably the most amount of spontaneous fermentation funk than anything I've ever had. Wonderful nose, dare I say, perfect. Its like every bug in the ferment world it seems, producing notes of hay, lemon, grapefruit, wheat, barnyard funk and sourness. Belgium does not have the market cornered.
The taste just bangs away and is just as good as my faves like Cantillon, de Garde, 3F, Cuvee Rene etc. . .. There is a crispness to the mouth feel that brings about some green apple. Its super light yet flavorful. The oak seems very young. The sourness and acidity levels are just perfect. Its amazing how affordable these are. Only problem is the lack of production numbers. Amazing stuff.

Bottle opened in 2019. This is a review based on a 9 year old bottle of beer, and that's all it is. Essentially, as you'd expect, darker brown body, oxidized, one finger white head, short retention and not much lacing. Smell is a very odd caramel and dark fruit but without cardboard, mild lemon tartness, a bit of cracker and toffee. Weird nose, very oxidized. However, the palate has more funk, leather and crisp tart lemon and acetic acidity to accompany the mild dark fruit oxidation, a bit of oak to boot. It's drinking sufficiently well, but the smell is all off from the oxidation. Lighter medium body, good carbonation, mildly dry leathery brett with a dab of dark fruit oxidation. Didn't age well, but it isn't a bad tipple either.

Pours a soft, soapy white head that has nice persistence. Sour and oak nose. Chill hazed, golden color. Starts with a sour, fruity, horsey flavor. The horse-like profile intensifies, then recedes to allow a soured maltiness to come through. The finish is citric sweet malt lingering over lactic acid.
This is quite good. It's a straightforward gueuze that is well balanced.

T: Musty apple juice, cardboard, and cheese. The tartness is fruity, and I get some golden fruit juice flavors. Slight caramel, like a caramel apple. Musty oxidization lingers.
M: Sprtizy and fizzy carbonation, medium body, greasy with oak but slightly tannic.
O: Over the hill. This beer tasted tired. I'm sure it was much brighter fresh, but now its very muddled and oxidized. Still drinkable, however I wouldn't go out of my way to drink this again.

Have tried getting into sours and/or wild ales but just can't seem to develop a taste for them. This beer though was solid. It had a nice, funky sour taste that for a wild ale newbie like me, wasn't too overpowering.
