Poured the can into a pint glass. Orangy-Brown with chunks moving both up and down within the brew. You have to be a pretty serious beer geek to like the look of this. A pretty good amount of lacing. The tiny bubbles keep coming.

Nice mouthfeel, the right carbonation. Nicely hopped without being overpowering.
Good, not great. At 5.6%, it's in the range I that I like.

(3.40) A: Feverish effervesce with dancing macro-particulate matter within an princeton orange colored body. Bready, one inch oatmeal tinted head has an average rate of retention. Capping dissolves with no lace stickage on vessel.

(3.20) S: Aroma was caramel-orange with a hint of wild onion grass. Less then moderate strength and weakens rather quickly.

(3.60) T: Flavor was caramelized orange and onion grass hopping as with the nose. Resinous spruce and pine, sweet floral orchard hops, spicy tarragon alcohol with buttered toast. Malt sweetness with warming cypress and some briary-stemmy notes.

(3.25) M: Average mouthful, spicy with average carbonation.

(3.55) O: Overall interesting flavor, keeps you guessing with a spicy, herbal hopping with an intriguing combination.

12 fl oz. can, with no apparent freshness date present. Acquired this oddity as part of a mixed six pack at the local Binny's. I have had other beers from Wild Onion Brewing Co. before and I remember enjoying them, so I'm excited to have this.

Poured into a clear balloon snifter.

A - Pours a big bright beautiful orange colored body with some tiny specks of sediment and two and a half fingers of fluffy creamy doughy off-white head. Very nice scattered lacing. I gotta say, this looks pretty damn good.

S - Smell is very fruity and floral. Lavender, honey, yeast must, bread dough, some herbal pine, and a slight anise sort of spice in there somewhere.

T - Taste brings in more of the same: dry earthiness, honey, biscuit malt, herbal / floral Cascade hop bitterness, & some lemon / pine citrus zest.

M - Feel is smooth & creamy, crisp & light, with some dry herbal piney bitterness on the finish. Extremely light-bodied and easy drinking, with good carbonation.

Overall, I thought this was a great pale ale. Definitely everything I think a pale ale should be - light, crisp, refreshing, & hoppy. I'm not sure why this has such poor ratings. I guess Wild Onion is pretty small though, and not many people are able to try their beers. I however, will look forward to more.

Wild Onion Brewing Paddy Pale Ale ---4/5.
