Poured from 750 mL bottle into snifter.
A: Pours an underripe lemon hue with significant carbonation producing a massive 3-4 inch bubbly white head. Carbonation continues to feed the head creating excellent retention.
S: Light citrus (lemon), grass, spices (clove, cinnamon), peach, and a note of fresh belgian yeast. Wafting in and out there is a hint of barnyard funk that adds a pleasant level of complexity to the aroma.
T: Soft lemon, brighter orange citrus, clove, musty barnyard funk, pear, white grape, and fresh and active belgian yeast. Very refreshing taste. A note of vanilla emerges with warming.
M: Initially soft and almost creamy feel (imparted from the head). This quickly turns toward prickly effervescence from the carbonation. Finishes soft and with a bit heavier feel...also a bit dry with hop spiciness. Lingers and matures nicely on the palate. An element of soft sweetness throughout.
D: Due to the strong effervescence, this one drinks like a citrus-infused champagne. Extremely drinkable even with an ABV of 10.5%. Nicely complex and yet easily approachable. An excellent example of style. Seek it out!
3/29/14:
A: Bottle still opens with a loud pop and the appearance remains the same as above. Time has not diminished this one! (4.5)
S: See above...literally has not changed over the past year! (4.5)
T: See above, except the spices are taking a more dominant role (clove, cinnamon, etc). (4.5)
M: Again, see above. (4.5)
D: Wow! This one has not let up over the past year. I'm even more impressed with this one now than even last year. (4.5)

I had this on draft 1/22/24 @ the Hopleaf.
Mostly opaque dark orange appearance.
Huge bright white head; decent lacing remained.
Mild banana, leather & apple cider notes in the nose.
Creamy medium mouthfeel.
Leather, cream & apple cider flavors up front; mild clove notes on the finish.
Almost a quad/tripel mash up with those leather notes. Odd, but ultimately enjoyable.

Poured from a brown 11.2 oz. bottle. Has a deep golden color with a 1 inch head. Smell is of bananas and spices. Taste has plenty of bananas, some spices, yeast, alcohol is well hidden. Feels medium/full bodied in the mouth and overall is an enjoyable beer.

Let the Christmas brews BEGIN!
From the 11.2 oz bottle in a snifter. This classic ale pours a light
amber tinged golden color with a nice head of white foam that
fades to a thick ring, faint thin film, and shows some light lacing.
Nose of pear, apple, coriander hints, light clove, and light biscuit
with plenty of Belgian candy sugars. Flavors follow nicely with
light biscuit, candy sugars, light clove, apple, pear, herbal hop
touches, and subtle banana with white pepper. Nice mouth
feel; medium light body, medium light prickly carbonation,
lightly warming, and a lightly dry finish.
Overall, a solid representation of the style from the source!
Cheers!

A - Clear dark gold with a heavy cascading stream of bubbles up through the middle with a healthy layer of thin white foam resting on top.
S - Banana and light spice.
T - Some sweet malt along with banana, spice, clove, some peppery note, and lingering citrus.
M - Big medium body with soft carbonation on the tongue.
O - It's a good Triple but not memorable. However, definitely worth a try!

Cloudy amber with a huge white head. Sweeter aromas bouquet with big apple and pear esters and lesser so lemon and golden raisin, with floral and yeast notes to balance somewhat. Taste is really apple forward, hints of candi sugar to the maltwork accents the fruits from the nose plus clementine, flowers, belgian yeast and light biscuit round out. Feel is bright, thinner, frothy, and wet. Nice change up of a tripel

11.2 bottle four pack purchased on 2/4/21
Opened and reviewed on: 2/4/21 from bottles 4/20/19.
I'm really jazzed to be reviewing something that is not a big hazy IPA! And a Tripel from Belgium I have not had yet!! Alright here we go....
Blonde/amber in color with only a fine tint of haze, obviously active and lively as the robust yeast creates the classic foamy bubbles directly in the middle of the glass. This living yeast continues to create white foam with it's gyser-like activity.
The nose is robust and full of funky, fruity and sour earthy aromatics. The yeast has major character! Spicy banana, sour cloves, dry peaches and marshmallow. Complex and wonderous aroma overall.
First sip is pillowy and luxurious feels, my gosh, it's lively and crisp, round, full, smooth, silky and even slightly dry in both mouthfeel and flavor.
Creamy, yet dry earthy tones all mix together quickly in flavor on the first gulp. Vanilla and peaches, spicy banana, grandma's spice rack blend and a healthy, complex house yeast of herbal funk and sour-ized fruits galore and perhaps just a bit too much banana and clove.
This, folks is a Triple that Only a true Belgian brewery can pull off! The star of the show is the YEAST. Amazingly complex and beautiful, crafted very well with in the style and certainly beyond.
