The beer pours a yellow color with a white head. The aroma is heavy on the oak, with some nice lemon notes. There is also a little bit of yeast and some biscuit malt. The flavor has a little bit of tart lemon notes, with some oak, yeast and orange citrus thrown in. There is also a little bit of spice and a hint of brett. Medium mouthfeel and medium carbonation.

A 750 mL corked and caged bottle. From Iron Hill Lancaster.
A: The saison is a pale clear color, light straw, at least at first. By the mid-point of the bottle, the yeast has taken over, permanently clouding the ale. Pretty while it remains clear though. A white head, lacy and fragile, lasts for the first few sips.
S: The nose, wild at first, quickly loses that aroma. Oak becomes apparent, overpowering the saison and the initial mustiness. I was surprised that that sourness, the initial whiff was strong, completely disappeared. In its place, the oak and saison spiciness pair nicely together.
T: The sourness barely rears it head here, when it does the flavors are soft and not too prickly. The oak aging has nicely settled the ale out, giving a woody vanilla flavor to the ale. The saison can't keep up, its spices lost behind the oak. Too bad too, as the base beer is pretty good (from past experiences). The oak has dried the ale out, leaving each sip rather sparse. A good beer to sip on though, complex with that oaken goodness. The hint of sourness is nice also, confusing at first especially when it doesn't linger.
M: A clean, full mouthfeel, the oak aging has taken over from the sorachi, a clear powershift in the bottle.

Purchased at the Lancaster location for $25 sometime close to a year and a half ago. Served in a wine glass.
[A] A medium-weak pop upon uncorking yields a small bright white head on the pour. The body is golden yellow with a touch of orange. Respectable clarity. No lacing.
[S] Magnificent. The buttery oak is immediately apparent. The wild yeast adds earthiness while the lemony sweetness counters it. There might even be a little sweet orange peel in the background. I forgot that Sorachi Ace were used in this beer honestly but, wow, do they compliment a wild oaked saison or what?!
[T] I've always thought that Sorachi has an artificial quality - but that is not the case with the flavor here surprisingly. I think the tannic oak and bugs balances it out in a very natural way.
Oak treatment + wild yeast create layers and layers of complexity. Add enough fermentables to get your ABV in the mid 7's, and you've got a serious Saison on your hands. Strike a perfect blend of flavors and you've got the Oak Aged Saison from Iron Hill.
[M] The mouthfeel is somewhat large for a Saison, and its fullness does well to carry the flavor. Residual sweetness is also a little high but it is cut through by the sourness & acidity well. Fairly crisp with a light sharpness that is accentuated by the acid and tannic quality.
[O] More than admirable at release - and absolutely phenomenal right now. Even though I thought the sourness would have stepped up more over time, this beer shows impressive balance in the way of sweetness, sourness, and acidity. Drinkability is supreme

Funky IPA. That's the start. The nose brings forward some light citrus and a bit of a floral character. Nice. Good characteristics. Mild oak and a bit of funk. Citrus comes through again. Good flavor with some earthiness and light citrus rind. Good dry finish with a bit of bitterness. Flavor has some moderate funk throughout; slightly reminiscent of Orval. Really dry throughout. Good carbonation. Very nice. Good beer. Always up for a good saison and this certainly delivered.

This is the first I'm learning of the presence of Sorachi hops. Interesting... This stuff pours a clear brass topped by a finger of off-white foam. The nose comprises tart lemon zest, tart orange zest, funky wheat, very light oak, and nutmeg. The taste brings in more of the same, along with some lemon peel and some additional cracked wheat. The body is a straight medium, with a light moderate carbonation and a dry-ish finish. Overall, this may be the only beer to utilize Sorachi hops without a negative result. (Or, at least, the only one I've come across...) Things are a bit heavy on the tongue, but beyond that this stuff is pretty good.

Bottle to Pinot Wine Glass

App- This came out of the bottle with a nice looking orange color. A bit of a golden and shiny looking color. A bit dense in the center with some radiating lightness around the edges. A small 1/2" white head that faded quickly. I didnt notice that much cling or lace. Maybe a couple dots if any.
Smell- When this came up to the nose. I noticed that it was far more wild ale than I wouldve thought. I didnt even notice that it was a Sorachi until I pulled up to review. A good deal of oak was there with a certain fullness on the nose. A bit more citrus and apple were there as it warmed up and the Sorachi gave off a little bit of a spice tinge.
Taste- This was a very nice beer. I was sad how quick a 750 was taken down. On the opening sips the full oak flavor comes out. As you keep sipping a little bit of the wild yeast comes in with a bit of grass and citrus and then the small Sorachi comes next with a dry fullness and spice note.
Mouth- A bit of a duality on this beer. I get more dryness than I wouldve thought and on certain sips I get a bit more wet citrus. I would still call this a medium body with a medium semi dry carbonation to it. The residual flavors are a bit of the wild yeast and more of the dry Sorcahi.
Drink- I really enjoyed this one. A bit of again a duality in it. A bit dry, a bit wet. A bit citrus and spicy Sorachi. I like the idea of no labels, just a hanging tag. Would like another one to sit on, but with the $$, I doubt I will trade for one.

A-Lightly hazed golden yellow with a thin white head that reduced to a wispy veil and left spotty lace.
S-Bright lemon zest, oak dryness, subtle mustiness and a touch of grassy/floral hops.
T-Light lemon/ fresh cut hay hop bite up front quickly mediated by drying brett and oak astringency.
M-Medium-light body very sharp and crisp with a VERY dry finish.
D-Quite tasty for sure. I enjoyed the dryness, almost like an Extra-Brut Champagne. Would have liked a bit more citrus hop bite but this is difficult to control in beers like this.

Served on-tap at the Iron Hill Lancaster Sour event.
A - Pours golden yellow with a small white head leaving light lacing down the glass.
S - Smells of floral hops, dry brett funk, lemon twang, and some light oak tannins. Nothing too amazing but still a very inviting nose.
T - Pretty similar to the nose. Starts off with a nice citric hop bite quickly giving way to a mix of dry brett funk and a dulled lemony twang. Finish is bone dry, lingering for some time. I liked it, but the dryness really wore on me over the course of the glass.
M - Medium-Light body and flavor with moderate carbonation. Very dry, funky, feel with plenty of crisp citric bite to help even things out a bit.
O - I enjoyed this one quite a bit, mostly because it was a change of pace from all the other sour beers. I could drink a few of these no problem.

750ml corked and caged offering purchased at the Lancaster location during their make it funky event. Poured into a cervoise, this brew appears a clear golden color with a fizzy white head that holds across the top with spotty lace. Strings of lacework stick to the glass and a light swirl revives a finger.
The smell is strong with a natural lemony essence. Some fresh fruited quality like pulp and rinds. Pear and apple hints with a touch of some lacto funk. There is a minor tingle of alcohol noted across the back as it warms up.
The taste is fruity with a lemon accent overtop of pear and apple. This is zesty with a touch of bitterness. Some yogurt-like lacto flavoring through the middle with a creaminess of yeast noted. Some rinds and wheaty tang contrasts a bit of sweetness that really makes the lemon notes shine with a mild tartness.
This is a medium bodied brew with a modest amount of carbonation. Very crisp and flavorful, this is a very easy drinking brew. This is an overall very pleasant interpretation of the style that I highly recommend. I would love to have a bunch of this to open and share with friends. Nicely done.

S: nose is very fragrant and floral, some spicy Belgian funk, notes of white pepper
T: taste is fruit forward, lemon and orange come to mind, earthiness permeates, decent balance, the Sorachi provides a zesty lemon profile
MF: thin body, medium carbonation
O: a little sweet on the end, but over all this is an interesting and worthy saison

I had this on tap at Iron Hill Lancaster served in a 12oz pils glass.
The color is golden sunrise with moderate amount of haze and small ring of tiny white beads, the lace clings well. The aroma is a complex blend of sweet and sour -lemon and lots of juicy bretty notes w/ twang of tropical and herbal odors w/ light peach and mild white grape aroma. The feel is very dry with a high amount of carbonation w/ nice fruity acidity and not sharp or overly sour, just more of a funky feel with mild musty and grapeskin tartness lingers with only a little astringency.
The taste has a wonderful lemon and slight grape with subtle spice w/ a lot of yeasty tang and some pineapple and light pie flavor with some brett character and red wine accent with mild tinge of alcohol and hop spice as it finishes. Overall this is a tasty saison that is improved by the oak aging IMO, the addition of the wild yeast adds a nice dimension and I enjoyed the flavor of the hops combined with the subtle wine barrel accents.

Bottle. Pours a clear light gold with a large head and a pretty lively body. Nose is light citrus fruits, brett, sweaty socks, wood. Pretty heavy brett on the nose. Flavor is also really heavily brett-forward, segues into some decent light citrus fruits and of course that sweat sock element, some salt. Finish is long and salty. Too heavy on the brett and barrel in my opinion. This would be better if the barrel was more subtle and the grains could shine more.

Beer is straw colored and hazy with a diffuse white head of small bubbles, some lacing, moderate carbonation.
Aroma is mildly citric with some fruitiness and floral character.
Beer is mildly oaky and has a funky bite to it. There is a tannic quality that must come from a barrel of some sort. There is a vinous quality as well. The finish is dry, I'm not an Iron hill expert but this was a decent beer.
