On cask, via gravity fed firkin, during the East vs. West Coast IPA Cask-Off held @ Iron Hill Lancaster on 2/24/12. Served in an oversized mug. This is a 7% take on the West Coast style IPA. Originally brewed at the Chestnut Hill location.

Pours a hazed grapefruit color, with a thin frothy covering of bright-white head. This maintains a rich and sudsy look, leaving back a good amount of sticky lace down the sides of the glass. The aroma has a BIG grapefruit nose on it, with notes of floral tones, pine, and spice working in as well. Pale malts barely have a presence across the back, as this is all about the fresh power of those West Coast hops. Just a touch of light warmth adds a bit of extra zip to this.

The taste is the same, with a bold grapefruit bitterness that carries spice and pine the whole way through the profile into a dry, resinous, and overall aggressive finish. Like the nose, malts are just an afterthought here, while a touch of a dank herbal character rides along in this as well. The mouthfeel is medium to fuller bodied, with a smooth creaminess to the carbonation here on cask and an overall feel that belies its 7% alcohol presence. This has some very light warmth to it though that adds a little extra ferocity here to the hops.

Wow. If you like the West Coast style, you’re going to love this one. Very little malt, with a whole lot of aggressive yet still flavorful hops; this was just unleashed here from that cask conditioning. I was literally choking by the end on the pine and spice that settled into the bottom of my mug! But in a good way LOL! Paul really rocked this one.
