Poured into a Sam Adams Bulb glass. light and very clear... orange almost yellow color. Decent head with some foam. about 1 in. thick lots of lace.

smell is a dissapointment... an IPA??? Uhhhh... where are the hops???? i got a trace of hops... on the floral side but nothing major. Malt towards the end.

hrm... a nice floral hop flavor is present... turns into citrus then smooth malt finish. better than expected.

medium body allows flavors to mellow

overall this is a decent beer... i prob won't pick it up again. Also, the smell is just off... i mean you say IPA and it smells like an ESB??? oh well...

Poured a clear shimmering copper with a tight one finger head that stays thru the duration of the glass wich was nice had a real creamy effect leaving a mustache,aromas yield a decent fruitiness a tangerine note as well as lemon rind and some underlying pine.Flavors bring a more earthy,piney elemant than the aromas very dry but not over the top bitter earth and pine like I stated dominate just a lightly sweet malt base is there to keep it from being overly dry.The dryness of the beer makes me wanna drink more and this goes down quite easily,a nice but not over the top American organic IPA.

Bison Organic IPA... at 6.8% alcohol and cellered a little longer than needed. Has some massive yeasty floating left overs.

A- Poured half an hour ago to allow sediments to settle. Heavily hue orange fluid that still retains that huge two inch head that then turned into a mass of sea water froth that leaves patches of thick lacing.

S- Nice citrus scent upfront with fresh cut grass follow. Mild malt smells that are mostly sweet and sugary.

T-M- Strait-up bitter bite front from the citrus, grass and grapefruit hops. Yeasty as hell pucker that provide freshness but wow a tartlike feel follows. Like I said before over due beer but shit loads of yeast sediments make a beautiful mixture of bitter and tangy flavors excellent! Mouthfeel is a wee bit smooth with light bubbly carbonation that oh to easy for almost 7% alcohol.

D- Drinkable as any without the massive yeast compound due to over cellering but hey excellent beer all round.

Review based on a sixpack. Pours a slightly hazed, amber hued body with an attractive eggshell tinted head. Retention is good and a lot of sticky patch lace is left on the glass. Aroma is one sided with hops. Grassy and piney, with subdued notes of grapefruit. Mouthfeel is light medium, with medium carbonation. Otherwise unremarkable. Taste is dry and bitter with a very grassy hoppiness. Pine and grapefruit interact with the pale malt backbone for a pretty well balanced IPA. One of the better organic pale ales around. Very sessionable, but be careful of the abv which approaches 7%.

12 ounce bottle w/o freshness info t obe had. pours dark honey amber under a slight light khaki head, with bubbles rising to the top and leaving plenty of scattered strands of lacing. Light floral hop nose. Ample smooth maple malt under coating and an equally smooth hop bit riding on top. This one seems to be more on the Brit side of things, easy drinking, nothing amazing just an nicely crafted and worthy IPA. Organic to boot. worth a try.

Thanks to fartingdog for this brew which was an extra. Pours a light orange with a little head. Smells more like an English IPA than an American IPA. Tastes of weak hops & is not noteworthy. Mouthfeel is OK but its drinkability is affected by its lack of spunk. Not bad, but not good.

Sadly unimpressive. Nice orange pour with a big puffy head. Aroma is hops with a ton of malt. The flavor was the same, except it had a very soapy back with a sweet aftertaste. More wood than resin, typical of these Bison organics. Not my kind of IPA.

Poured a glowing amber with a billowy white head. Nose was pretty light with more malt than expected, hops come through in a pine sort of way rather than citrus or flowers. Taste is ok with the malt being quite well done with a bready, biscuit backbone but unfortunately the hop profile here is sub-par. Too harsh and abrupt with no well formed flavor profile, just bitterness. This one is OK and being organic it might appeal to some, I'd pass on this one with so many other good IPA's out there.

Appears an orange copper tinted clear vibrant tone with a nice beige head forming with billowing cloudy texture above the rim of my glass. After each sip fine lacing is spread down the sides of the glass with full rings noted. Aromatics come strong with herbal and pine hop bursts with caramel malts to balance things out, pretty fresh even for organic shipped to Ohio from Cali. Four varieties of hops of course I'm getting signature Cascades with some citrus peel among a spicy finish. Flavor creamy caramelized brown sugar coated hops moderate bitterness tingles and then lingers in the finish. Hop flavors range from spicy to citrus peel bitter with a touch of wintergreen coolness. Nothing over the top just a clean drinking sturdy west coast IPA, stand up but not outlandish. Mouthfeel is medium with hop oils evident carbonation very smooth and natural dryness noted in the finish from the IBUs, a touch of alcohol edges in as well. Drinkability is solid not a mindblowing effort but very good all around, and definitely the best "organic" offering I've tasted. I wonder if they use all organic hops???

Poured from a 22oz bomber into a weizen glass.

Appearance if very clean, copper with off white head. Less than an inch of head on rough pour. Nice lacing all the way down.

Smell is citrus and honey. Not overpowering hops, nice balance to the smell. The honey is unique for an IPA (in my experience)

Taste is nice, bready. Honey in the taste too. Typical hops orange/citrus taste.

Mouthfeel is light for an IPA. By that I mean not as oily as some can be.

Drinkability is pretty good for an IPA. at just under 7% you could put a few bombers down.

Overall a nice effort. Though I like the Amarillo single hop version better.

Semi-cloudy golden amber, with limited foamy head. Nice but thin lace.

Nice citrus hops aroma. Light and pleasant.

Taste is lemon & grapefruit zesty, with a pine finish. Certainly solid.

Not a bad IPA, this one's steady, smooth-drinking, and enjoyable.

Pours an orange-amber hue topped by one finger of off-white head. Aroma of spicy floral hops evident from the instant of popping the cap off the bottle, and it keeps coming. Underlying aroma of sweet malt, plus a touch of candy sugar and something else that's sweet (maple syrup?). Not a typical IPA nose, but still pleasant.
Palate has an almost Belgian-like sweetness and complexity up front, with candy sugar and some European yeast. The hops soon take over, providing a sharp bitterness with some floral notes. Some sweet bready malt provides an anchor, but the hops are still kind of all over the place and a bit unfocused. A better balancing of the hop profile would really improve things here.
Body is substantial and just a tad syrupy. I don't really know what to think of this beer. If they were going for a west coast-style IPA, they missed the mark, but if they wanted a strangely hoppy Belgian-esque ale, they're close. Interesting, but not necessarily pleasing.

A- Poured into a pint glass. Pours a clear copper color with a thin off-white head that does not leave much lacing.

S- The aroma is a good amount of sweet malt, caramel and hops, very balanced.

T- The taste like the aroma is pretty balanced for an IPA. There is a nice malt backbone supporting some citrusy hops in the finsh.

M- The mouthfeel is light bodied with a good amount of carbonation.

D- This beer is pretty drinkable for being 6.8%. Not the best IPA in the world, but this one is definitely better than expected and one I wouldn't mind having again.

I've been to the Bison Brewpub in the past in Berkeley and I believe it was all organic even the food. Surprised I havn't reviewed this and I noticed at the website that they may be announcing a new Brewing partner.

Pours a yellowish/orange copper color with lots of head and lacing even in the bottle. More of the off white head than beer in my glass and I poured it slow. I would assume that this is more like a Belgian IPA. The carb action is evident and I was able to swirl up some sediment to top off this big headed beer.

Lots of florals and a sweet malt in the aroma.

There is lots of malt sweetness to the lemony/lime flavored hops. The finish lingers grapefruit and lime.

The mouthfeel a little oily not real astringent with a hint of bittness. The active carbonation in the glass seems flat to the palate. There may be a sourness effect throughout.

I would think this would be exceptional on draft and compared to other organic IPAs available in the stores this is more tolerable as a Belgian IPA.

Notes from 07/07/2010:

12 oz bottle at 42 degrees into a tulip.

A: It pours a transluscent blood orange color with a small half-finger head that has good retention and laces exceptionally well.

S: Grapefruit, orange, and a relatively mild floral hop aroma.

T: Coriander, grapefruit, orange, resin, and floral hoppiness.

M: It has a medium-light body but has turned quite flat with a bit of a watery finish.

D: This has a few flaws but it is still flavorful and very drinkable.
