A custom blend of the beers of Bear Republic, Cuvee de Bubba is refermented in oak barrels using only the wild microflora and fauna native to the Alexander Valley. A bouquet of stone fruits with a complex flavor profile of malt, tobacco, and cherry pie sourness.

Serving: 375 ml bottle (“wood: oak barrels, bottled; 2/7/17, no. bottles: 2112”) poured into a thick tumbler.

Appearance: Slightly hazy dark copper with a thick froth of tan foam and slightly spotty lace.

Smell: Vibrant aromas of tart cherries, balsamic vinegar, oak wood and musty cellar.

Taste: More tart fruit and vinegar, slight underlying sweetness, earth, tobacco and lingering bitter finish.

Mouthfeel: Light to medium body and effervescent carbonation.

Overall: A nicely funky, oaky sour blend.

July 28th, 2015 - Feeling fancy with the Cuvee de Bubba in my hand - a relatively flat beer to the eye, and a darker color that verges on ruby. The aroma is light with a distinctive sourness, some oats (bran oat) and a lighter hint of red vinegar. On the palate it goes a little flat but the sourness still has some character. A little plain, it does offer a touch of cedar dryness and dry sour ale tastes. It is strange to have something that is both sour and a little tepid.

I've previously had this at a few events, Stone something (Oakquinox?) and Sour Sunday(s). Pours a kind of darker amber color with an off white beige head that is 1/6" deep. The aroma was slightly off putting, had that vinegar/acetic acid thing going for it as the primary aromatic component, but there were woody layers underneath it at least.

Taste had an earthy aspect to it, dirt, tobacco, dark cherry, dark fruit bitterness and acidity. This definitely tastes like a cuvee of something, there are a bunch of flavors that sometimes clash and don't have a real discernable direction or style aspect, I mean, there's definitely some flanders notes all over it, but it clearly has more than that going for it. The oakiness is well evident. The alcohol is significantly present.

This is just a mash up that isn't as good as the Tartare that Bear Republic usually brings to festivals, so I don't see having this one again, seems to be the dumping ground for a batch that might not work out well on its own.

Clear but dark copper-red with a creamy tan ring. This dark copper body is beautiful.

Smell is toasty, cherry-like oak, balsamic vinegar, and pungently dank peach.

Taste is quite odd, bringing savory and charred herbal oak with juniper, semi-sour cherry, apple and grape.

A big froth lends to a soft, full body with a crisp, semi-dry finish.

This offering looks and tastes like the malt vinegar served with fish and chips. The nose is mildly sour thus indicating that the flavor might be palatable; alas this proved not to be the case.

2013 Edition -- Draft, Oct. 2015

A: Vinous-like aroma, followed by some grain and sharp sourness on the finish.

A: Bright orange color, quite clear with a very thin head.

T: Flavors remininiscent of wine are immediately noticeable. These flavors are followed by some grain and a sharp, acidity which finishes with a tart cherry sourness.

M: Light bodied with light carbonation.

O: Two years of aging, has increased the wine like aroma and tart cherry flavors. Strangely, the beer is still quite acidic. While enjoyable, the beer could benefit from rounding out this sharp acidity in the aroma and flavor.
