I like a quick high pour of bottle into pint glass to see how heaping I can get the head without it slopping over glass edge. A firm gelatinous foam with gluey viscosity can sit there bulging for a minute before it gets down below rim to let you delve for first sip. This is very pretty! Also helps get carbonation down a bit to prevent what would otherwise be overly fizzy mouth feel. Color is redder than usual copper IPA, an 18 on my SRM by winter snowlight filtered through dining room window; hop haze opaque the way I love it. Smells of good yeast and grass and citrus hops. Tastes a surprisingly wide range of bitter and mulchy hopblossoms around a light caramel malt toast politely balancing the bitter, with delish tongue-coating hop feel hanging on into persistent aftertaste. I'd love to keep some of this in my fridge IPA stock at all times, but it's a bit too expensive. This is brewed just 30 miles from my home in Ithaca; if I could get a 6-pack for $8, I'd be drinking it more regularly. Hops finesse in this IPA is unusually fine.
