"In the fall of 2008, "The Three" (Todd Ashman, Matt Van Wyk, Zac Treimert) joined forced to brew Collaborative Evil. This dark, delicious creation with spices and exotic sugars could only be made better with time - time in an oak barrel. Here at Flossmoor, that's exactly what Matt did. Since he's now brewing in Oregon, this is my tribute to Matt, my standing Ovation to his years at Flossmoor."

Bottle: Poured a dark brown color ale with a medium size foamy head with good retention and some lacing. Aroma consists of dry fruits (figs and plums) with loads of residual sugars and strong caramelized malt. Taste is also dominated by loads of dry fruits with an overabundance of residual sugars and some caramelized malt with weird grainy finish. Body is about average for style with good carbonation and light alcohol notes are perceptible. No balanced whatsoever in this beer and a total mess – I had to drain pour most of this bottle.

From notes:

I wasn't a fan of the base beer so I was hoping that the oak aging would improve this.

Pours a dark reddish brown color with mahogany edges when held to a light source and a one finger frothy off white head that quickly settles into a thin ring. Not much in the way of lacing.

Like the base beer this smells incredibly sweet with lots of sugar, dark fruit and alcohol in the nose. There is a slight earthy oak and vanilla presence from the barrel aging but only faint.

The flavor of this beer is very similar to the aroma. Way too sweet and not very well balanced with what seems like a boat load of sugar and dark fruit notes. Hints of plum, raisin, date and grape. Very vinous with lots of alcohol adding to the sweetness. The barrel aging does add a bit more balance than the base beer with hints of vanilla and oak but overall this beer will give you diabetes if you don't share it with a few of your friends.

A big thanks to Jeff for bringing this rarity to the Bruery to share on his trip out to California.

A: The pour is a lowly carbonated dark amber color with a thin layer of off-white foam forming on top.

S: A strangely herbal and spicy nose. There's a bit of a rosemary note to it along with just a blend of spices that I can't exactly pick out individually. Lots of sweet caramel and raisins, along with oak, vanilla, and a bit of whiskey.

T: Very sweet sugar components like caramel and toffee to open up. Raisins, cherries, and plums provide a nice sweet fruit flavor and there is a subtle spiced note as well as vanilla, oak, and whiskey to provide some additional sweetness and depth.

M: The body is medium with a low, smooth carbonation. Despite the sweetness and somewhat low carbonation, this doesn't turn syrupy or cloying.

D: A really interesting beer and one that I've been looking forward to trying since I first heard about it. Not sure I could drink a ton in a sitting, but it was enjoyable.

Reviewed from notes. Huge thanks to Alex for generously sharing some of this at the Hunahpu's release.

Pours dark brown with a short light tan head and a bit of lacing after a few swirls. Nose is dark fruits, caramel, cherries, and a bit of wood. Taste combines the elements into a rich and complex ale. Good feel with nice carbonation and subtle fruit backng. Drinks really well and might be the first thing from Flossmoor that has really impressed me.

Thanks to Adam for another Flossmoor brew.

Pours dark mahogany in the glass, almost black, that shows through a deep brownish amber in the light. There is a small, short-lived beige head that recedes to a wispy layer on top and some sticky legs on the sides.

The aroma just jumps out at me, with the spices leading the way in tandem with raisins and a ton of alcohol presence and burn in the nose. Some sourish fruits and caramelized sugar as well.

The taste is slightly less spicy to me and really brings the sweetness to the forefront. Caramel malts, plums, and molasses for sure as well a toned down spice presence. The oak really comes out in the finish - very woody with a lingering alcohol burn.

The mouthfeel is medium bodied and boozy with moderate carbonation and lots of barrel character.

The alcohol, spiciness and heavy sweetness limit the drinkability a bit on this one. It's got big aromas and big flavors but it still seems hot, even 6-8 months after the release.

A: Pours a nice dark shade of brown with a small cream colored head. No real retention or lace.

S: Aromas of sweet malts, with hints of citrus, spice, and dark fruit.

T: Nice malty sweetness up front. Light citrus with hints of mild tart cherries. Light vanilla, bourbon, and a touch of wood.

M: medium in body, smooth, not bad.

Pours a dark reddish brown, reminds me of bourbon with a fine level of clarity. Light tan foam spreads across the surface with good retention.

Some musty wood and salty/briny blue cheese (oddly enough) in the aroma.

Toffee and caramel squares, butterscotch, creamy feel with a moderate level of tartness/acidity. Toasted almonds and apple butter, raisins in the aftertaste. Decent complexity. Any spice from the CE is very muted and almost nonexistent now. This is more of a sour brown ale as it doesn't resemble Collab. Evil 08 anymore. The barrel aging added 1% abv, but it's nowhere to be found. Great stuff, thanks to Ben for sharing!

Picked up a few bombers at the release... shared a bottle at a recent tasting.

A nice, dark pour with a fluffy, finger.5 head. Smells of oak, spices and sour fruits. Very similar to 2008 Collaborative Evil but with the barrel characteristics shining through.

Tastes of the same sour fruit with substantial sugar and vanilla notes. The sour I picked up in the nose is sort of replaced by a tart, tingly taste. I'm usually not huge on sour beers, but this seems to work for me.

It's a shame only 175 bottles of these were ever put out for public consumption. I was happy to share mine with 10 awesome folks!

A great bottle in a great trade with imperialking. I was really excited when this one showed up and waited but a couple of hours to drink this one.

A: Poured a brown/slight amber to my glass. Subtle head layer disappeared in 10 second and left a spread lacing along my glass.
S: Aroma of raisins, candied sugar. Wafting notes of the booziness contained in this beer. Notes of subtle vinegar.
T: A great balance of flavors. Both tart and slightly sour. Continued raisins with a mellowed bourbon taste. Some pickup of sage and other spices.
M: Slightly watery, but well-bodied. A nice alcohol warming affect found. I found this beer to be similar to Collaborative Evil 08 in the mouthfeel department.
D: A deliciously, complex beer. Really opened up as it warmed. I would love to have another bottle or two.

I think it was rudylaw who supplied this bottle for our tasting event. Thanks man! Served in a smallish pint glass.

A - Finger of tan foam that dissolves fairly quickly to a ring and some haze. Nice spotty lacing for such a high-gravity brew. Transparent red-brown body that glows a little when held to the light.

S - The bourbon barrel influence is pretty intense here, although it's still quite easy to tell that Collaborative Evil was the base beer, as the cardamom, honey, and raisin character peeks through, especially when the brew is colder. However, as the it warms it's starts to develop an potent aroma of vanilla and a touch of oak.

T - More of the same vanilla and barrel flavors, but with a healthy does of caramel and raisin malt, well-restrained spice, and some vinous fruits, mostly in the sour grape and cherry domain. The finish is spicy and tannic.

M - Smooth medium body, soft but lively carbonation, a touch of warming, and a bit of dryness in the finish. Drinks like it could be a few percent lighter than it is.

D - I like this more than Collaborative Evil - this will likely go down as Matt Van Wyck's last hurrah. I would happily have refilled my glass if here had been more to go around. I wish they'd made more of this, as it's pretty tough to acquire.

Pours a hazy copper-amber color with a half-finger off-white head. The head recedes into a wispy layer on top leaving decent lacing.

Smells of vanilla more than anything with good amounts of jumbled spices and sticky medium fruit - raisins and dates mostly.

Tastes similar to how it smells however the fruits have more a tangy tartness than the smell indicated. Strong vanilla notes up front segue into sweet and sticky caramel malt flavors with good amounts of sweet fruits. As with the smell the spices are subtle and somewhat jumbled. Vanilla, fruit, and sweet malt flavors carry through to a sweet ending.

Mouthfeel is good. It's got a nice thickness with moderate carbonation however it's a bit on the thin side for such a big beer.

Drinkability is alright. I didn't have a problem finishing my glass however I'm not sure about another.

Overall I was a bit disappointed with this beer - a rarity for anything barrel-aged. Maybe it will meld better with a bit of time.

Thanks Nate. Consumed on 11/21/2009 and poured into a snifter. The beer is dark crimson with a frothy beige one inch head and good retention. Lacing is scattered.

The nose opens with strong bourbon and vanilla. The spices have backed off a bit here. The malt is reminiscent of a graham cracker and I detect a touch of honey and orange peel. Raisin and tart cherries are evident. Fantastic aroma.

The flavor is sweet and tart raisins with booze, vanilla, and honey. The beer has a moderate tannic quality, and the tartness is noticeably stronger than in the regular 08 Collaborative Evil. Brown and Belgian candied sugar are present. The finish is sweet honey with tart cherry and lingering bourbon booze.

The nose is awesome, and I'd give it a 4.75 for the aroma if the year was 2100 and we had advanced to the point of .25 increments in the rating system. That sounds a bit like Science Fiction, I know.

Pours a cloudy brown color with a purple tint and a small tan head.

Scent of rich spices, sweet and tart fruit, sugars, oak, and caramel. It is showing some of the similar sour characteristics the 08 Collaborative Evil has now, but it's still pretty faint in the scent. It has a great scent, but it's not quite perfect.

Taste of tart dark fruit, sugars, oak, a hint of vanilla and some molasses. The tartness is much more apparent here than the scent, or even in the scent and taste of the non Barrel Aged Collaborative Evil. This is kind of hard to rate since it is unlike every other Belgian Strong Dark Ale I've had. It has the usual dark fruit and sugar, but the tartness is kind of strange. Regardless, this beer has a great taste, and I hope that further aging will do this beer good.

Mouthfeel is medium bodied and smooth with a nice bite of carbonation. The fresh product was more smooth, but the mouthfeel is still very pleasant.
