Appearance - A clear, pale yellow with ample head. Nicely carbonated; this beer is very active. Excellent lacing and impressive retention. This Belgian IPA appears to be filtered.
Smell - Aromatic malts are noticeable right away. Fresh Hallertau and vanilla stimulates the nose immediately. Very bright and refreshing. Zesty and crisply hopped. Great hop aroma.
Taste - Honey, bitter orange peel, fresh bread, rose pedals or marigolds, coriander, with a wonderful vanilla finish. Pale grains help create body, yet do not overwhelm and sit nicely within the overall tasting notes. Fresh bread, apple and pear. The yeast compliments the sugars and helps fill it out. Not only smells like Hallertau, but most likely brewed with it. The hops are quite acidic and crisp -- very nice. An impressive blend of spices and sugars.
Mouthfeel - Excellent use of carbonation. You can certainly feel this all across the palate. The bitter notes ring on the roof of the mouth and the sugars help stimulate all sides of the tongue.
Overall - This IPA is incredible when served chilled. Well-balanced and yet not too overpowering, this is a delicious Belgian gem done right.
