Explosive carbonation resembling champagne. Huge white rocky head rests on straw-yellow base. The lacing is beautiful and thick.
The aroma contains similar champagne-esque attributes complemented with grapes, lemons and spices.
Initially light citrus flavors mingle with spices (maybe white pepper) layered over a light base of malt and even some wheat. A crisp, clean, lightly hopped finish sets me up for many more.
Amazingly light mouthfeel without being watery or understated.
Exceptionally drinkable. Non-craft brew drinkers who haven't tried Belgian beer might like this. Well worth a try and certainly worth having several in stock on a continual basis. Reminds me of New Glarus' Spotted Cow except more complex and significantly better.

Overall - One of my new favorite belgians. Core addition to your tasting experience.
A: One must observe the many lines of fine champagne bubbles rising in this golden beer to appreciate how well crated and attractive it is. Continuous necklaces of pin point bubbles, finer than any champagne, build a billowing parchment colored head that lasts and laces.
A: The nose is dominated by barnyard Belgian yeast, hay, grass, wet spring, and then early orchard fruit with peppery spice. As expected, and then more. (Orchard, wet grass, you dont quite know what...)
T: follows the smell, but bigger, brighter, and lots of apple orchard fruit. Like you remember it the first time as a kid apple picking in October. Some wood, some spice cabinet, and a long, apple, pear finish with unusual spice cabinet and cedar.
MF: Great finish.
O: As a reviewer wrote the beer offers it all: "sweetness, sourness, dryness, funkiness, fruitiness and spiciness". Fruit: apples, pears and apricots. Sweet dominates early, bitter and dry dominates late.
Must try along with all great Belgians.
