A - Hazy Deep Amber (SRM 15) hue with finger-thick off-white head that simmers down to a acidic looking haze. Swirling reinvigorates the beer and leaves some spider webs on the side of the glass. Wow, head retention is amazing!
S - Unreal! This beer fills the nose with such intoxicating aromas that it takes true will power not to immediately start quaffing! Cherries mix with that yeast-acidic smell. It smells sweet, alcoholic and spicy from the hops. A slight tartness comes through, but seems to emphasize fruit. Esters of plums and raisins also seem to come through. No vinegar, which is good! Toffee and possibly something citrusy also comes through.
T/M/D - Slight tartness to this beer, though overall this comes through on the sweeter side; a well-balanced beer indeed. Slight bitterness comes through from the hops, which helps balance the four-malt sweetness coming through in the form of cherry, citrus and toffee. The body is medium with a touch of syrupiness, which probably comes from roasting the malts. One can feel the booze and even taste it, but it is well masked. This is a beer that is to be enjoyed over the course of an evening, but finishing a 750ml bottle of it wouldn't be unreasonable.
Slight level of vinegar from what is probably the Acetobacter.
I prefer the sediment in Belgian beers, as they add to the overall complexity of the beer. Once poured, the sediment add a more barnyard yeasty note to the aroma from what is probably Brettanomyces. Lactobacillus also comes through lightly with a touch of sourness, though this beer is by no means a Kriek.
C - What a lovely beer that keeps giving more interesting flavor profiles as the quaff continues.
