A - Typical Dupont loud, violent cork-pop, a very good sign! Poured into an Ommegang goblet. Radiant unfiltered cloudy gold, loads of head, excellent retention. Looks the way a saison should look, but not quite the lacing I expect. 2006 on the cork, so this has a *little* age on it.

S - Big time nose we have here. I do sense the sweet honey immediately, over a bit of leathery, wet earth farmhouse aroma. Peppery. Some fruity esters I am struggling to identify. There's a lot there, and it just beckons a taste.

T - Absolutely superb, everything the aroma offers and more. Peppery and hoppy enough to cut through spicy food, indeed I am having this with a pork chipotle pepper burrito. A little yeasty funk, and a verdant, luxurious essence of honey, though this honey contributes only trace amounts of sweetness, as this is a dry beer through and through like other offerings from Dupont. The honey. Aftertaste is long on lemon-y hop, yeast, and all that beautiful wild mountain honey. Damn, this is a superb beer.

F - Weighs on the palate with a minimalist touch. Prickly carbonation cleanses the palate in a hurry and gets you primed for the next sip. Don't see how the mouthfeel could get much better.

D - Like Foret, Avec Les Bons Voeux, and regular Saison Dupont, this is a masterpiece, and is about as drinkable as it gets. Will pair extremely, extremely well with just about any food. We have a winner here. I could have easily given this straight 5s, but I had to knock a half-point off for the relative lack of lacing in the appearance. Virtually flawless by my reckoning. The contents of the 750 ml bottle have just about disappeared, and that makes me sad. Another underrated saison - I don't see how this is not an A++ beer. Could easily be my favorite beer, period.

Bottle at Den Tatoverede Enke, Copenhagen. Funky farmhouse aroma with notes of honey. Flavour has some honey (not much), but is surprisingly dry. A bit watery and bland though.

Pours a mostly clear burnished copper color with tons of yeast suspended in the beer giving it a somewhat cloudy appearance. Thick, pillowy, and fizzy white head collapses pretty quickly leaving just a ring of white foam along the outside of the beer.

The aroma has strong notes of hay, fresh ripe grains, a bit of musty wet hay, alfalfa, and a light honey sweetness. Reminds me of a misty July morning in a hay field.

Taste follows the nose with some funky notes of grain, wheat, hay and a peppery spice. The finish is spicy, but there is a slight sweetness to this one - finish is semi-dry with a lingering twang in the back of the mouth.

Feel is incredibly carbonated - the prickling assault start as soon as the beer hits the lips and doesn't let up until after you've finished swallowing. Its medium bodied, and somewhat full in its feel, but still is pretty easy drinking and somehow comes across refreshing.

Overall this is a lovely saison. As for it being the biologique, I honestly am not sure that I could discern much of a difference between the organic and non-organic versions if I were to have them side by side.

750ml brought back from recent trip to Belgium. Pours slightly hazy with a nice puffy head that lasts a while and sticks to the glass. Nose is somewhat similar to the regular saison, although a bit softer, with additional floral and honey elements. The taste is particularly interesting. In some ways, it is a classic saison. However, the honey flavor is very much present. As a brewer who has done meads as well, I'm impressed how they brought so much honey flavor without drying out the beer or leaving the honey unfermented and overly sweet. I'm surprised this beer isn't scored over a 4 here...it is honestly very good. A great twist on a great beer from a great brewery.

A 250ml bottle with a BB of April 2018. Gifted to me ages ago by my brother and stored in a box. Described on the label as an organic honey beer.

A: Poured into a tulip. Bottle conditioned. A rich orange-amber hue with plentiful carbonation and some floating sediment. Yields a huge head of creamy white foam with good retention; this slowly reduces to a patchy surface layer. Nice lacing.

S: Aroma of fruity Belgian yeast with hints of esters, mild honey, floral sweetness, earthiness, amber malt, subtle leafiness and a twinge of funk in the background. Possibly very slightly oxidised. Nicely rounded, and has held up well.

T: Tastes of fruity yeast esters with notes of floral sweetness, mild honey, subtle dried fruit, earthiness, light grass/hay, amber malt and faint leafiness. A hint of booze in the background. Quite dry, with little bitterness to speak of.

M: Mouthfeel is smooth, tingly and dry, with lively carbonation and great body. Creamy but not overly so - just right. Aftertaste of fruity yeast, honey, mild dried fruit, subtle leafiness and earthiness.

O: Satisfyingly rounded and balanced, not to mention having aged gracefully. Looks superb, while the aroma and flavour showcase Belgian yeast character, mild honey, earthiness, malt and subtle leafiness. Faint oxidation doesn't do much harm. Lovely body. Goes down a treat. Well worth sampling if you have the chance.

750 ml bottle into a tulip glass. Had 3/18/17.

Pours a hazy, golden color with a one and a half inch foamy head and lots of foamy lacing. Aromas of strong honey, Belgian yeast, spices, cloves, some white grapes, light malt and wheat. A bit floral overall. The taste mostly follows along, with the yeast and malt taking the lead and the honey not as strong as the nose. Spices, cloves, white grapes, a little bread. Smooth, creamy, fairly dry and crisp, a good, lighter body, well carbonated.

Of the handful of this style that I’ve had, this is the best. Great aroma, very good flavor, good price point. Well worth a purchase.

Got a 750ml bottle from Spirit of St. Germain, La Jolla, Poured into a 25cl Duvel glass.
Look: beautiful golden color, just like honey water. White creamy head with a lot of lacing.
Smell: Very floral. There's the earthy floral, barndoor-like hop notes just as a normal saison, but one can also smell the honey notes in there too, lots of floral notes, sweet smelling honey. There's some minty smell, strangely.
Taste: Just like a saison. Quite prominent hop notes, earthy, making one think about a nice cold beer after a hot day of working in the field. The smell of hay, barndoor, wheat. However, after that came the strong honey taste, sweet, floral. This tasted just like royal jelly. Not too complex, but very enjoyable.
Feel: medium-full body, very warming from the 8% alcohol.

An excellent beer. I'll definitely get it again!

Very cloudy with a dirty gold color. Moderate head that settles to rim bubbles. A few spots for lace.

Sweet, candy smell without any notable honey notes. Reminds me most of a cherry bubblegum. (On a later smell, I do get some sourness.)

The taste is similar to the smell but without being overly sweet. Even though this is a Saison, I don't get much sourness. The body leans rich and the carbonation leans bubbly--it works overall. Short aftertaste with a touch of bittering hop. Good balance overall even with the sweet notes coming throughout the tasting.
