Watch out for the damn cork!

Pours a hazy golden amber in the tall Maredsous chalice. Big foam-up but settles down to some clouds of meringue on the bright brew. Big fruity and faintly skunky aroma, a hint of sulphur and bread rising. The surprise is how sweet this is. Flavors are also extravagant. Fermenting blackberries, brioche, lemon bars. Every sip starts with that syrupy funk that is just short of overwhelming, and evolves through a lot of bitterness to the drier, mineral finish, but still haunted by a honeyed, bitter baklava taste.

This is certainly intriguing and full of flavor, and probably belongs in a candle-lit tavern where convivial extroverts debate its merits. In the calm dining room listening to Mozart, it's hard to get down. It's less like a Saison than most of the others I've had, regardless of what the brewery claims on the label. I don't know why this isn't categorized as a Belgian Strong Pale Ale. From the 750 ml bottle bought at Bine & Vine in San Diego for ten bucks.

01-27-2013 update: On tap at Chapter One in Santa Ana. This tap version is totally anemic in carbonation, which makes it taste like some kind of sweet and scratchy Southern fruit wine. Makes me think of corn, sourish pear skins, and a hint of Quarante Y Tres vanilla liqueur. I'd rank it lower than the bottle version I reviewed.

A: Lemon yellow and cloudy with lots of yeast particles floating within. Soda like carbonation, highly carbonated. It sports a 5 finger white head with a lemony tinge and small and large bubbles. Random chunky lacing.

S: Funky Belgian yeasts reminiscent of Saison Dupont, lemon rind, herbs like sage, snow, white sugar, slight cabbage or skunk, bitterness, light floral, candied lemon.

T: Lemon candy, lemon rind, medium sweetness, a hit of white lemon pith and rind in the taste of bitterness, bitter herbs, I believe there is brettanomycies in this. I tasted it in the Bruery’s and Boulevard’s brews only they tend to oversweeten those brews in my opinion. This is much dryer and pleasant as well as original. Light sourness. The alcohol is well covered. Light fruitiness.

M: Medium thick, slighty gelatinous and syrupy, medium low carbonation. Dry finish.

O: An amazing classic that I can see has set a standard for high octane saisons. Much prefer it to the others I’ve tried. Drank at Turkey Creek with my father in law June 29, 2014.

From a bomber to a tulip.

A - Hazy deep gold with a fluffy, pillowy, head that won't quit. Excellent lace on the glass.

S - Skunk as soon as the bottle was opened. Dissipated quickly and stayed well in the background afterwards. Bready, toasty malt, spicy notes from hops and/or yeast. Very rustic.

T - Very complex. Toasty malt, nondescript fruity notes from yeast. Significant bitterness that helps dry the beer out. Rustic without being overly "funky". Dry, bitter, spicy finish.

M - Explosive carbonation fills the mouth. Medium body with a dry, bitter finish. Very low alcohol warmth; well-hidden for the 9.5% ABV.

O - Wow. Take the initial skunk aroma away and this is a world class beer. I will seek this out again in the hops of a fresher bottle. Love the style.

Bottled in 2008 and this beer held up extremely well. A bit of sediment and opened with a huge 'pop' but decanted clear. Great taste. Full. Amazing amount of brett noticeable. Some heat but very well attenuated. It's an experience to drink the beer at the brewery (with the toilets in the back by the cows) but you can always find perfect examples of the beer in bottles too!!
