Avec Les Bons Voeux 3 (2008 printed on cork)
Once the cork popped some super bubbly foam came out like champagne. The first gentle pour was 95% foam. After I let it settle for a few minutes, the foam was still there but the actual beer came flowing...
The first actual glass of beer was clouded with lots of sediment, the taste was on the musty side... The foam was also out of control for about 30 mins. My lesson with this one was give the beer some time, its been locked up for 2 years.
Once I let it settle for a while and after I put it in the bottle in the fridge for about 5-10 mins the sediment began to settle to the bottom allowing the second glass to pour perfectly.
A: Pours a cloudy medium light orange with some dense consistent head. The tulip glass I poured it into kept the carbonation shooting from the bottom center to the top.
S: Herbal and balanced spice aromas. Almost fruity and peppery.
T: Some mellow pepperiness. Mellow fruity sweetness like that of a fruity loose leaf tea. A good deal of yeast taste as well.
M: Lots of carbonation, very smooth.
D: Very drinkable, super refreshing and delicious. Dangerous indeed.
TIP: If cellaring this one, store upright to minimize sediment.

A large, off-white head crowns this bright orange brew.
An array of light fruits and must flow out of the glass. Deeper inspection reveals more fruits, including orange, lemon, pear, and white grapes. Complex is as complex does. Rotten rind, peat, and faint spice complete the perfect circle.
Fruity (more orange, lemon and pear), spicy, full-bodied, creamier than expected, and lacking nothing I can think of. Has a bit of grain and yeast to finish. Vanilla is noticed as it warms. Alcohol hits and dissapears quickly.
Fabulous example of a "big" Saison.
