Purchased this at Total Beverage upon a recommendation.
Pours a normal pale yellow color, but forms an unusually thick head. I let it warm up a little bit and it's been sitting up, so it's only got a moderate amount of floating yeast. It's a little darker and thicker than a typical saison, but nothing unusual.
Smell is actually a little malty. It reminds me of fresh grain at a brewery. In addition to the grain smell, there's the typical spicy Belgian yeast and yes...even a decent dosage of hops.
Initially this starts off moderately sour and then becomes peppery and spicy. The finish is a bitter hop hit that's actually more potent than I expected. While it's not a "double Saison", think of this as a kicked up Saison Dupont.
I like the creamy texture as it went well with some swordfish and rice. Not too watery and funky, but a nice strong flavor that leaves you wanting another sip.

The beer pours a hazy pale gold color with a thick frothy white head that slowly fades to lacing. There are a few floaties present. The aroma is great. It has a nice pale malt scent along with a light earthiness and fruity yeast aroma. This is a near perfect aroma. The taste is great. It has an incredibly smooth pale malt flavor that goes down easy and finishes dry and earthy with some excellent yeast notes. The mouthfeel is fine. It is a full bodied beer with adequate carbonation. This is a damn fine saison. It's crisp and fruity with just the right amount of musty/earthiness; a good drinker.

Upon pouring into a glass, the beer displays a beautiful hazy golden color with very fine carbonation. Once settled, the head is about a quarter of an inch and very creamy. The aroma is a bit off at first, but after a few minutes hints of citrus and spice show through. A doughy aroma lingers behind. The flavors are immense, beginning with citrus, spice, and then followed with a long dry finish that lingers on the palate for minutes. I found this beer very easy to drink, and anyone looking to try something new during the holiday season, I would deffinitely reccommend it.

Picked this up at Monster Beverage in Glassboro, NJ and split it with a friend as part of a 'Beer Connoisseur Night'.

APPEARANCE: Pours a hazy golden orange into my brand new Hennepin tulip. The head starts out massive and slowly shrinks to a one-finger head that refuses to budge. It's rocky, pillowy, and downright perfect. Lacing cascades down the glass in large sheets.

SMELL: The funkiness is tremendous. It's really sharp and pungent and somewhat difficult to get past. But when you do, some other great aromas really start to open up. A mild citrusy quality is there as is a defined hop smell, though definitely playing backup. Spiciness is fairly mild, but really, everything is there to augment the base of a really farmhouse funky beer.

TASTE: The funk hits immediately in the flavor too, but not nearly as intense as in the nose. Some noble hop flavor is present, and it adds a decent amount of spiciness to the beer. Toward the finish, alcohol comes out decently as the beer takes on a bit of a sweetness. After the swallow, most of the flavors float away leaving only a reminder of the intense funk that the beer features.

MOUTHFEEL: A nice light body with a nice dryness to match. Carbonation is fine an at medium levels.

DRINKABILITY: This beer goes down quite easy with it being just a little too funky to be perfect. Even though, call it dangerous with a 9.5% ABV.

Very nice. This is something I'd definitely want to have again. Lucky for me, I've been seeing this on the shelves a lot more lately.

Appearance: A cloudy and hazy straw-colored ale with aggressive carbonation. The first pour creates a 2-inch head that slowly settles into a small cap.

Smell: Banana, pineapple, yeast and lemon - it shows both sweet and tart qualities.

Taste/mouthfeel: Fruity and wheaty at first, similar to a Wit or Hefe Weizen. Carbonation is soft but ample. The finish brings out out long-lasting notes of citrus and hops, with a peppery bite and a slight tang. Complex but somewhat astringent and boozy.

Wow. I had this out of a bottle at the Eulogy Belgian Beer bar in Philadelphia. It was poured by the bartender in front of my eyes and had a wonderful slightly-cloudy pale yellow body and a great white head. Mild carbonation is evident.
Not much in the nose at first but it reveals its complexity as it warms. Reminiscent of white wine and champagne, th smell encompases eevrything from tart apple to grass and lemon. Very mild but lovely, and balanced extremely well.
Yeast and citrus cominate the taste, but once agian this is mild. Vanilla and wood, floral and herbal tastes. This is what expect a farmhouse to be. This can be called the archytype as far as I'm concerned. So much going on here that I have a hard time discerning all the flavors and aromas.
The dry and sweet tastes play back and forth but the dry seems to win, if only by a little. Light-bodied and a perfect ammount of carbonation. You could forget you're drinking a beer here and think you had been poured a flat (not in a bad way) champagne-like dry white wine.
The drinkability was given only a 4.5 because of the ABV; as a few others have said, you need to take into account what needs to be done the morning after you drink this. This is literally so drinkable and full of complexity, that you could taste something differtn each time, and therefore open several bottles in an evening. Beware if you do that.
Overall I will support this beers high rating; this is truly outstanding and something I will actively seek out in the future.

Pours a brilliant, cloudy yellow gold with plenty of head and yeast in suspension. It looks like the Saison Dupont Vieille Provision. It doesn't smell like it, however: the nose holds much more in the way of zesty hops, candi sugar, pilsner malts and a ton of phenols with that fruity Dupont yeast, which throws some lemongrass and orange (maybe burnt orange zest?) into the mix. On the palate. this is a heavy saison with plenty of residual sweetness that could use some time in the bottle to dry out. Still, the flavors are great: smooth, pale malts, creamy orange-and-spice, phenols in the mid-palate. Growing hop bitterness, with orange blossoms, toward the finish, which is dry and refreshing for such a big beer. Mouthfeel is thick and full of fine carbonation. I wonder if it will thin out as the beer ages, but it's still pretty great. Overall, this is a fantastic beer. It's kind of like the Vieille Provision dialed up a bit, but there's nothing wrong with that. Fantastic.

2004 bottle served in a tulip glass in late 2007.

A: Bright golden yellow like the Big Leaf Maples in peak fall color. Almost like orange juice! One finger of white bubbles retains a thin layer of head. Cloudy with chunks of yeast in suspension and at bottom.

S: Sour like wild yeast was used. Some alcohol coming through. Pear, peach, pineapple, and a faint breadiness.

T: Caramel apple, sour banana, a little musty. Inexplicable deliciousness though.

M: Drying, mild heat from alcohol. Furry on the tongue.

D: Something keeps drawing me back despite the mustiness! A certain inexplicable attraction!

hazy golden with a white head that has pretty good retention and good lace. smell is really nice. nose is less barnyardy than foret or saison d, but more spicy. mainly pepper, corriander, some clove. a little lemongrassy smell and some musty to go with it. taste is basically what the nose suggests. nice and warming. medium full like their other saisons with a nice amount of carbonation. very drinkable for a 9.5%er. i'll enjoy a few more of these this holiday season.

Aren't we all so precious just for having this? Hazy deep golden, fuzzy head that calms down in time. Nose of minerals and earth; some tartness. Flavors of lemongrass, lazy grains, and clove. It tasted the closest yet to a cross between a Saison and Hefeweizen. In regards to a regular Saison Dupont, this one had much more fruit, spice and body, but I'm not going to be fooled into worshiping this beer just because it's a limited edition holiday Saison. Good-to-great...yes. Awesome? Nah. You can live off the Foret Organic in the meantime.

2005.

It pours a blurred goldenrod stacked with a slowly melting wall of ivory.

The nose presents first as smallish, and possibly narrow, then the initial inhalations are belied by a deepened and kaleidoscopic array of herbs, and various dried things, as it exudes hay bales, tarragon, bay leaves, dandelions, dried peaches, sawdust, cement, oatmeal, vanilla, and a perfumed white vinousness roughly akin to Gewürztraminer.
It should be noted that this needs to approach room temperature for the aroma to come out fully.

Across the tongue, it sticks true to its dry motif. Hay, weeds, and bleached grains scrape by first. It leaves the door ajar just enough so that a faint sweetness can eke out a place, with orange and lemon rinds and wildflower honey. But dry this remains and ever will. Yeast settles in early and throws about hallucinatory overtures of sandalwood, vanilla pod, tarragon, thyme, cobwebbed basements, uric acid, hazelnuts, and multi-colored peppercorns. Alcohol-associated flavors are virtually shut out of the flavor, though it carries through with that perfumed, anise- and spice-laden Gewürztraminer wine suggestion from the nose. The hops wash away a microsecond of heat with their fresh bay leaves, snapped long grasses, continued pepper hues, and a lingering weedy pulp.
The body is a literal down pillow of cottony mouthfeel and supple carbonation to allow a 9.5% ABV beer such as this to melt in the mouth like so much cotton candy. That's a tired cliché, I know, but it's as applicable here as anywhere. Honestly, this barely materializes as 6%, and its feel and structure is to credit..or to blame tomorrow.
Drinkability is only a consideration when one still has the capacity to judge what needs to be accomplished the following day. And this compromises moderation with haste. Once that goes, it tends toward the infinite...and the comatose.

A huge suggestion is to let this warm well beyond fridge temps, because the warmer this gets, the deeper it goes. I feel like I only scratched the surface.

When and if you find it, buy it all....every last one
It's a mind-shatterer.

2005 Vintage from Steve's Mineral Point for $6.99 a 750.

Yeasty straw gold (leaning toward orange) body with visibly aggressive carbonation and a voluminous white froth. The head eventually settles to a healthy skim with beautiful lacing.

Spicy aroma displays plenty of hay, saaz or similar hops, lemon, a bit of orange, and black pepper.

Dry, spicy body with lively carbonation that bites the tongue. Flavors of hay and lemon peal cojoin with wild flowers and vanilla.

Highly drinkable. In fact this is sessionable in the extreme.

2006 vintage. Rich honey with a hint of orange. A stationary cloud of fine yeast is being buffeted about by a generous amount of carbonation... that settles down within minutes of the pour. I love the look of the beer, but the sticky alabaster crown is a typical bit of Belgian magnificence.

I've been able to appreciate the room filling aroma since beer exited bottle. The nose is incredibly complex and doesn't contain much, if any, farmhouse funkiness. I'm fine with that since I can't drink wild ales every day. As far as aroma specifics... sugar-coated grain, sun-ripened orchard fruit (pears, apples), musky hops and a potpourri of warm spices.

Avec Les Bons Voeux is everything that I'd hoped it would be. It falls a half-step short of my favorite saisons, but it's still an exceptional Belgian ale. Perhaps I'll change my mind once I'm closer to the bottom of the bottle than the top. One of my first impressions is of alcohol (since it isn't often noticeable in a beer of this style). An ABV of 6.5-7.0% is easy to bury; 9.5%... not so much.

Bitter effortlessly supercedes both sweet and tangy. In fact, the beer is barely sweet at all. I can appreciate a honey-like flavor, without the honey-like sweetness. This Brasserie Dupont offering seems to be built around hops and spices. Each mouthful is a dizzying blast of bitter grass, lemon zest, white pepper, ground clove and coriander. There's also a delightful undertow of banana and bubblegum. Like I said... complex in the extreme.

I'm leaning toward awarding flavor perfection. The only thing that's holding me back is the alcohol. If the brewery would knock a few percentage points off the ABV, it would be an easy call. This is a tremendously drinkable, tremendously quenching beer because of its dry, crisp nature. Drink quickly at your own risk, however. Since I don't plan to drive my desk chair anywhere in the next several hours, I'll be fine.

There's no quibbling on the mouthfeel... it's simply stunning! Only the Belgian masters could create a beer that's so ethereally light, yet so creamy smooth and so expansive. Each mouthful blossoms in the mouth as if the laws of physics no longer apply. I find myself taking sips just to appreciate what happens tactilely.

Avec les Bons Voeux de la Brasserie Dupont, the beer's full name, translates as 'with the best wishes of the Brewery Dupont'. Thanks Brasserie Dupont. And thank you for this incredibly delicious, world-class saison. It may not be the best I've ever had (Fantome Saison), but it's close. Really, really close.

A 750ml bottle, caged/corked (2006 edition). Poured to a pair of La Chouffe tulip glasses. This is the beer my wife and I chose to honor the memory of Michael Jackson, who we learned earlier today had passed away. RIP Beer Hunter...

A: A healthy 'pop' and this one is uncorked. Pours a thick, silky golden with a dusty haze of yeasty sediment. Over two fingers of dense white bubbly foam, ebbing slowly to a thin creamy cap. Carbonation billows to the cap abundantly, effervescent like champagne.

S: Pears, apples, peaches, zesty pepper & clove spiciness, all mingle in a wonderful aroma that drifts from the glass with every swirl. Doughy yeast, slightly grassy, very herbal.

T: Tart and crisp peach and apple flavors, backed with loads of bready maltiness. Cracked pepper, grassy/hay natural yeastiness, grainy and dry in the finish. Faintly medicinal bitterness and a slim trace of booze.

M: Surprising that more of the intense carbonation doesn't come through in the mouthfeel; thicker medium-fullness, heavy for a saison, but understandable for this robust version. Herbal bittering hangs on the back of the tongue, finishing dry and mostly clean otherwise.

D: With high marks across the board, this one certainly scores well when it comes to drinkability. On the handful of occasions we've tasted this beer before, it's stood alone or (in the case of the wonderful visit to Les Caves Dupont) with cheese. Tonight, however, we started by pairing it with dinner, a black pepper-seasoned chicken - thought it was a fine compliment. Fortunately there was enough left in the bottle to go with dessert, fresh peaches and strawberries and a scoop of vanilla ice cream. Oh man, that's beer pairing perfection! Outstanding in every way; easily drinkable, which is dangerous with that high ABV.

Highly recommended!

2006 bottle

Hazy gold. An inch of dense white head, with moderately good retention. Beautiful mottled lace.

Smell begins with orange, lemon, peach, coriander, shortbread, oxidization, and a bit of grassy hops, and gradually becomes richer and sweeter over the course of an hour. Orange turns to marmalade, and additional notes of beeswax and honey, agave, pineapple and sweet tobacco come out. Sensational.

Begins round and fruity, beeswaxy, medium dry, grassy, slightly tart, very well balanced with hop and mineral bitterness. Exceedingly long finish, with deep dry oxidization and mineral bitterness coming to the forefront, and some alcohol emerging. Fruit and clean grassy hops throughout. Complex but sharply defined. Utterly balanced and tasty.

Smooth mouthfeel, very tiny bubbles. Drinkability is limited only by the alcohol; this is very drinkable and refreshing.

poured from a 750ml/25.4oz bottle. poured nice yeller color. excellent carbonation! very fine bubbles and a lot of them. very nice head about 1.5" in my glass. the head stayed at least one inch through out the drinking. very good lacing with little oily features. nice slightly bitter aroma.

taste was very good. i really enjoyed this one. i will certainly get it again.

This is just an Amazing Ale from DuPont. Its everything you would expect from a Super Saison and more.
Cloudy pale yellow with a huge billowing head and text book definition lacing.

Aroma is musty spice and lemon with hints of clove and just baked sweet rolls with white icing.
Flavor is an intense blend of subtle not-too-sweet malt and spicy hop. Mild grapefruit, almonds and wet hay mix with soft honey sweet malt that explodes in your mouth with the bursting carb bubbles.
Finish is long and warm, light bready malt and a peppery hop bite.
Excellent balance and drinkability that belies its high ABV.

Refreshing yet full of complex, evolving flavors that goes great with any lighter dish or seafood - but just fine all by itself.

Appearance: Lightly hazed straw yellow body with a poofy white head of large bubbles that stands tall at first, but soon collapses under the weight of its volatile ABV.

Smell: Loads of bubblegum, some very ripe banana and pear, freshly air-popped popcorn, sweet pale malt and candi sugar, cream soda, mild but snappy floral hops, and a slight gin-like alcohol. Nice. Very clean and lagery, without much of the farmy funk I expect in a saison.

Taste: Sweet and kinda boozy in a very Belgian way. Surprisingly bland, with a weak yeast profile and blasé, one-note malt foundation. Hops are mild as well, yet they contribute the most flavor here, kinda citric and bitter with a snap accentuated by some spicy alcohol and an unusual quinine-like character. Finish is dry with a rush of sweet-and-spicy flavor followed by a lingering tang of hops, yeast, and alcohol.

Mouthfeel: Frothy and chewable, with carbonation that hits exactly the right note in terms of zip. Somewhat thicker and more syrupy on the palate than most saisons I've had. It's dry, but I feel like it should be dryer.

Drinkability: Since this is so strong and a bit heavy, this drinks more like a tripel than a saison. It's not bad, but it lacks depth which wouldn't be so much of a problem in a smaller saison. A beer this big needs to have some savorability to it. This isn't a bad beer, but in my opinion the original Dupont is much better.

Cork said 2005. Pours a straw color with a huge, fluffy white head. Nice lacing as well. They don't look much better than this, particularly for the alcohol content. Smell and taste were somewhat disappointing. Smell had strong scent of alcohol, which overpowered most of the other aromas. Some faint spiciness was also noticeable. Taste was average. Alcohol was at the forefront with mostly spicy/peppery flavors following. Became pretty easy to drink after the first few sips, especially for being 9.5% ABV. Not a bad beer, but definitely prefer some of the other versions of the style.

Seemed a good day to finally pull this one out of the fridge and give it a go. Loud pop of the cork, 2006 vintage.

Appearance is exactly what I expected - cloudy gold body under a big old head.

Nose really opens up as it warms - lots to pick out....the lovely musty back-corner-of-the-barn smell recognizable from Saison Dupont and others, lemon, spices...a pungent field of weeds. Can detect a little alcohol. Interesting, now I get a pretty distinct cooked oatmeal smell coming through, with the final yeast pour.

Taste to me seems a lot like a regular Saison Dupont but with added kick ("Imperial" Saison?") Lots of spiciness to be had, alcoholic and otherwise, Lemony hops amid funky yeast and alcohol in the finish leaves a trail of unripe fruit residue in the back of the mouth.

Mouthfeel is perfect. Aggressively carbonated with quite a dry finish, it never feels all that heavy, a nice feat given the size of this beer. Almost a bit thin, but this seems to suit the beer very well.

Drinkability - Exceptional for such a big saison. Share it with a friend....but you're probably gonna want the whole bottle, trust me. Great beer. Basically a perfect beer. Very little more I can ask of this one. Drinkable enough for the average Friday evening, but more than classy and refined enough for a special occasion. Would pair well with just about anything. I'm sad to see this nearly all done. I love saisons, and this one just kicks ass. With this beer, the world comes into focus. I think my liquor store has a few more bottles of it...a tip of the hat to the brewer. In the words of the PGA Tour, "These guys are good."

***UPDATE - I feel compelled to review a 2009 bottle....drinking on 12/20/2009, this is easily the freshest bottle of Avec Les Bons Voeux I've ever had. I'm going to take a fresh look at the beer that really got me into the saison/farmhouse style, my favorite style.

Knowing a little bit more about beer than I did when I first reviewed this, I wondered if this was really a saison at 9.5%. I poured. Yeah, OK, it looks like a typical "Liquid Sunshine" saison. Smell? Definitely all saison. So perfumey, and so HOPPY too...oh man, I think I love this even more so fresh. A few sips confirm it....this is all saison, and a hoppy one at that. It's beautiful. I'm bumping the taste up to 5. Lot of Saaz or Goldings....this is one of the hoppiest saisons I've ever had.

***Further note, I do not suggest aging this. I had a 2004 not too long ago, and it was something of a sweet mess. Gone was the amazing perfumey dryness. In its place was a sweet, gooey Cointreau flavor. If you have 'em, I say drink them. There's not much to be gained by aging this, as good as it is fresh.

750ml bottle. 2002 on the cork. Pours a quite hazy peachy yellow into my glass with a beautiful two finger head of white foam. Good, steady carbonation. Looks great in the glass. Aromas of light toasted grains met by a mellow mustiness. Spicy tones along with a nice mix of light fruit aromas, especially lemon. Good stuff.

First sip brings a grainy, lightly sweet maltiness upfront that is quickly met by a spicy pepper aspect along with a wonderful mix of tropical and citrus fruit tones. Flows down with a slight funkiness and a touch of alcohol in the finish. A bit dry overall, but still tasty stuff.

Mouthfeel is on the lighter side with an explosive carbonation. This one goes down incredibly easily for a 9.5% abv. A throughly enjoyable saison from Dupont and one of the benchmarks for the style. I will need to get another fresh bottle soon! (As a side note, the final yeast pour amplifies the flavor profile greatly and adds a bit of smoothness as well.)

Nice sweet malt aroma with slight wild and barnyard accents. Fairly clean and simple, actually for style.
From top of bottle pours very clean with big white head that settles with tons of residue and lacing . Clear golden color with lots of rising bubbles.
Really clean tasting without the extra’s getting that involved. Nice malty flavors with yeast qualities more as background (at least initially). Only slight sourness. Mild bitterness. Yeast flavors increase in time and offer pleasing mild spiciness.
Rather thin body, without being thin. Softly carbonated and on lower end despite huge head
Very drinkable, although maybe just too rich, but goes down easily and nicely. Unbelievable well hidden 9.5%. There are no alcohol qualities to the flavor or aroma. Quite rich, which makes it difficult for multiples.

Shared a gift of one brother with the other brother (who actually received the gift). Thanks to both of yahs.

Poured from the 750ml, corked bottle into a Duvel tulip glass. A single finger of creamy white head rests on a cloudy, golden-orange body with a bit of suspended sediment and some lively carbonation. Interesting aroma of tangy yeast and mild citrus notes, with a whiff of clove and hops. Palate is a mix of sweet malt and funky yeast up front, with citrus and Euro hop notes coming through mid-palate. The malt becomes sweeter and more assertive at the swallow, ending with a fairly dry finish. Mouthfeel is creamy, lively, and just about perfect. Highly drinkable for such a strong ale. While I may not feel as strongly about it as some of my colleagues (maltmaster420 calls it a "desert island beer"), I'm very pleased with this one.

Poured from the 750 ml bottle into a Duvel tulip. Probably my best pour ever; the goldenrod liquid rises just above the Duvel logo and the head stretches 3 fingers upward to create a perfect convex cap just above the rim. Nice ample lacing too.

Smell contains notes of lemon, green apple, yeast, coriander, grass, vinous grape.

Taste evokes earthy lemongrass, straw, excellent spiciness, light breadiness, orange peel, unripe pear.

Mouthfeel is great, a very refreshing beer. Between thin and medium bodied. The alcohol is never really tasted but the warmth of it is pleasant.

Drinkability is wonderful, I had no problem polishing off the 750.
