Poured from a 750 ml. bottle that reads "Unfiltered" and "Bottle Conditioned" into a Hennepin flute.
A--Cloudy honey-hued body that looks rich. Chunky three finger lively head with tons of big bubbles, like a foamy champagne, that cave it in from the inside out. Lots of foamy lacing all over the glass clung after each sip.
S--Yeast, yeast, and more yeast--redolent of the stuff with some alcohol sting behind it. Some subtle floral essences also rise up upon first pour, and pair with a smell I can only describe as a meadow of clover after it rains.
T--Wow. Two part experience here, as it rushed in with more yeast and floral character (hops? seems more like it's phenols) that tastes like the blossoms of fruit trees or their sap, more syrupy and like nectar than reminiscent of the fruit itself, only to finish very dry and clean. Has a wheat undertone throughout that I really enjoyed. Much, much less sweet than Hennepin, and more floral than spicy.
M--Holds up perfectly for the style. Packs a lot of flavor in without feeling heavy. Bright and crisp.
D--Excellent except for the ABV, which knocks things down a bit as I'd rather session this than go once and done.
Though there are many saisons out there, and almost as many good ones, I can see how this is the standard-bearer for the style. Highly recommended.
