A - Pale with a straw-like hue and a pearly white head that dissipates after sitting a minute.
S - Herby with a background of baking spice and savory herbs.
T - More savory herbs like rosemary, sage, juniper and a hint of lavender.
M - Medium crispness, medium alcohol.
O - Delicious gruit beer that has become my go to shift drink after a long night tending bar.

I've had this a few times since Sep 2012. Never really struck me as something I'd go out of my way to get. Being a herb and spice nerd, the taste of this beer, while good, offers nothing of interest to me. These were my notes, from this most recent tasting. About sums it up.
"Basically, this tastes like a maltier Duvel... oatmeal cookie melanoidins and [a small hint of its] spicing, with a mildly potent banana note... nothing really stands out spice-wise, as most of the spice and phenolics seems to be yeast/ferm[entation] derived"
The liquid is a cloudy amber, with a gummy white froth atop that falls away, leaving a spitty collar. The smell is a mix of spicy phenolics (a la nutmeg), ripe banana peel, and toasty amber malt - fragrant, aromatic, but doesn't explode out of this glass. The taste is about the same, mellow bitterness mostly from esters - does not taste quite like other Dupont beers. Soft texture, with a bit of foamy/dextrin roundness up front, light and clean finish, tiny bite, soft alcohol warmth.
Maybe if the spicing where more apparent, it would be more interesting. They should list the herbs/spices used on their Cervesia entry on the website. Otherwise, what does it matter what's in it?

Poured from a caged & corked 750 mL bottle into a Brewer's Art goblet. Moderate hand. L13121B is stamped on the label. Cork has "2013" inked on the side.
A: Cloudy, light honey-colored body. 1.5 fingers of tight, white head. Good retention. Light lacing.
S: Belgian yeast with citrus, lemon juice notes. Hay. Indistinct spice. Vanilla. A touch of bubble gum. Becomes a bit more herbal as it warms, but the "gruit" notes are never the focal point.
T: Mild sweetness with a certain amount of tartness opens. Pale malt and some light astringency develops. Only a faint bitterness at the end, but a rather dry finish. Alcohol is well hidden.
M: Moderately high carbonation with a slight prickliness. Moderate body. Surprisingly crisp, but not unwelcome.
O: Very nice brew, if not Belgian blonde first and gruit second. The herbs/spicing are perceivable, but subdued. Regardless, enjoyable.

On tap at Bier:Thirty in Boise.
A- Golden straw color, little head with no lacing.
S- all Belgian esters and floral nose smells good, not very strong odor.
T- similar to the nose. Belgian yeast, cloves, banana, slight peppery flavor. Malt is fairly heavily represented, as expected with the lack of hops from the style.
M- syrupy, somewhat heavy bodied given the appearance. Carbonation is pretty strong as well.
O- good, unusual in a good way. I haven't had many Gruits, I'd try again, though not super often.

Poured from a 750mL caged-and-corked bottle into my Drie De Fonteinen tumbler.
Clear aureolin liquid with a fist of off-white soft peaks climbing the glass. Thick, clingy, soapy lacing. Superior retention.
Soft estery/yeasty aromatics with baked banana, vanilla, and a low but lasting floral element.
Sweet palate entry with a pleasing pure malt flavor. Very light bitter-tartness offsets the sugars, while that floral note returns in the finish. Barely discernible herbal notes, hard to believe there are a dozen unusual ingredients spicing things up as their contribution is so subtle.
Medium-bodied, zesty yet creamy, and strangely refreshing. Alcohol is well hidden.
Having not had many (any?) gruits until now, this is difficult for me to rate to style, but it is a well crafted ale, and strikes one as experimental yet conservative all at once. A good beer in the lead-up to Valentine's Day.
