Chicory was one of the first beers we started brewing at our pub back when it opened in 1995. It's a dark beer made with a bunch of roasted chicory, organic Mexican coffee, St. John's Wort and licorice root. We use whole-leaf Cascade and Fuggle hops, as well as pale, roasted and oatmeal grains.

"A rich, dark brew smoothed out with a touch of roasted chicory and organic Mexican coffee. Goodness beneath a bone white head." Brewed in the style of an American Stout with chicory and coffee added. At one time Dogfish Head's recurring winter seasonal, Chicory Stout was retired following the 2012-2013 winter season in 4 pack bottle formats and is currently relegated to limited draft at the brewery's draft house.
Poured from a 12 oz. bottle to a Dogfish Head Signature Glass. Served above 53º Fahrenheit.
(Appearance) Pours a mocha cream head of a fizzy foam consistency over a deep roast brown body, near black. Lacing is thick and clingy and retention is good. 4
(Smell) Medium roast malt, earthy moderate roast coffee with mild acidity, unsweetened cocoa nibs, caramel malt sweetness, some light licorice. Aroma is light and curious. Body is light-medium at boldest, slightly earthy over bitter over sweet and generally mild-mannered with few aromatic flaws. Potency is medium. 3.75
(Taste) Medium thin coffee, roasty and earthy pairs fairly with the medium roast malt. To a lesser extent, some dark fruit pairs alongside the coffee, perhaps chicory for a very subtle brush of uniqueness. The density of flavor is fairly mellow for this beer even with all the unique ingredients it carries. It could manage a bit more sweetness or body as the acidity and earthy bitterness happen to stand out significantly well. 3.5
(Mouthfeel) Light, mildly dry, slightly chalky, moderately acidic. Carbonation adds some peculiar liveliness with a crisp fizz and a frothy texture. Body is light/medium for an American Stout, medium overall. Alcohol presence is light. 3.25
(Overall) Chicory Stout is a well-intentioned take on diversifying the ever-popular American Stout, but certain to get mixed results. The coffee flavor presents itself quite well even against the roasted malt, but the remaining body is conspicuously shallow and the sweetness very mild, confusing the intent of this beer. With ingredients like chicory root not making any significant impact to the flavor, there isn't a lot of draw to Chicory stout. It is arguably one of Dogfish Head's more curious beers, and while I don't find it unenjoyable, it doesn't hold up all that well against the ever-improving lineup of world-class stouts that have gained attention since Chicory Stout hit the market. 3.5

The appearance was always a ruddy orange to brown color with a decent one finger white foamy head that dies within about a minute and left some nice foamy sticky lacing. The way it clings and how it seemed like an eternity before it actually started to even want to start to slide was beyond me - if anything I love the stubbornness of the lacing to stay where it is. The aroma - wow what didn’t thing have in it. There was a nice okay licorice showcasing a nice roasty coffee - like smell that seemed to be increasing in strength as it warms. The taste took all that I previously mentioned and smoothed things out eloquently with a nice touch of vanilla. On the palate, this one sits about a medium to heavy on the body when it’s fresh. I’ve noticed with some age with this, it does end up thinning out a bit. Overall, what an absolutely awesome American Stout
