Chicory was one of the first beers we started brewing at our pub back when it opened in 1995. It's a dark beer made with a bunch of roasted chicory, organic Mexican coffee, St. John's Wort and licorice root. We use whole-leaf Cascade and Fuggle hops, as well as pale, roasted and oatmeal grains.

Poured from a 12 ounce bottle into my DFH Snifter.

A - Pours a dark brown, almost black with some orange brown hues around the edges. Pours pretty thin from the looks of it as it hits the glass which is slightly dissapointing. A one finger khaki colored head is formed as I pour and has pretty good retention. It hangs around for quite a bit which is impressive and finally turns into a nice cap that stuck around the whole time I was drinking the beer. No lacing to speak of though.

S - Smell is of bitter chocolate, coffee rinds and some roasted malts at the front of the nose. I get some toffee and sweet tones mixed in there as well. A slight hoppy notes lingers in my nose as well. Very layered in the nose and complex. I like.

T - Coffee and some woody notes right off the bat but mainly coffee. A touch of cinnamon as well. I almost feel like I'm drinking a carbonized coffee beer. Theres a good hoppy bitterness at the end as well which holds this beer up great. Chocolate tones as well. Dark bittersweet chocolate. Pretty delicious.

M - Mouthfeel is where this beer is lacking for me. Its really watery and loose where as I was hoping for something a bit thicker and more viscus.

D - A good beer but the mouthfeel really stops it for me. No alcohol to speak of which could make this beer easy to drink a few of a night.

The appearance was always a ruddy orange to brown color with a decent one finger white foamy head that dies within about a minute and left some nice foamy sticky lacing. The way it clings and how it seemed like an eternity before it actually started to even want to start to slide was beyond me - if anything I love the stubbornness of the lacing to stay where it is. The aroma - wow what didn’t thing have in it. There was a nice okay licorice showcasing a nice roasty coffee - like smell that seemed to be increasing in strength as it warms. The taste took all that I previously mentioned and smoothed things out eloquently with a nice touch of vanilla. On the palate, this one sits about a medium to heavy on the body when it’s fresh. I’ve noticed with some age with this, it does end up thinning out a bit. Overall, what an absolutely awesome American Stout
