Its a pilsner nothing extra special about this beer.

Appearance: Clear as you can be with a beer. On the darker side for a pils. A small amount of head and lacing. But nothing remarkable.

Aroma: Smells like a pilsner. Some green apple aromas are about as outstanding as I can confirm.

Taste: Clean, pilsner taste. Maybe some green apple tart flavors. Some bready malts and a clean finish.

Overall: Its a decent beer, better than most Pilsners but nothing to call home about. I like my pilsners to be clean and light so that i can session the hell out of them. At 10% this is not one you could do that with its a shark in an ocean of guppies!

Appearance: clear, bright golden hue, beautiful white head.

Aroma: sweetness, grains, honey. and along comes alcohol.

Taste: Repeat the above, then add a touch of harsh bitterness, a whiff of astringency and the looming onset of alcohol, but faster. I avoid double pilsners more often because they remind me most of all of slightly refined malt liquors. Not really delivering more than the booze, and significantly lacking in flavor. I don't hate this. It is, after all, beer, and you can, more or less, drink it. But I'll be glad when it's done and won't buy another.

Hey, there's gobbledygook on the side: "Complex and rugged, 20 years in the making, and much like Guided By Voices' Bee Thousand, better than ever. 10 grains X 10 hops X 10%= Beer Thousand."

So, one of my closest friends is a Guided by Voices super fan and he won some kind of raffle and won a case of these that was only a six pack really. He gave me this bottle a few yeas ago and I made it the centerpiece of my nascent cellar and opened it tonight after we saw GBV at the Black Cat in DC the other night.

This was heavy with fruit and boozy malt notes but also incredibly smooth after four years of rest. Wood and grapevine flavors with some smoke and dark chocolate. Really improves as it warms, as well. Worth the wait for me and my buddy.

The BEST beer I ever had. Fortunately, I have more to consume. Delicious!
Look = light golden lager
Smell = a wonderful waif of goodness ready for my...
Taste = STRONG bite of power - armed me for a weight room slugfest
Feel = the bottle was cold until I put it down.

If one can find this beer, RUN QUICKLY and acquire it.

Perhaps another casualty of the Beer Backlog here at Chez Woody, I have had this poor devil in the door of my reefer ever since I purchased it. I am in the midst of a wonderful horizontal of DFH beers & this one just happens to be the next up.

From the bottle: "A right-lyrical lager brewed with ten varieties of grains and ten varieties of hops."; "Complex and rugged, 20 years in the making. And, much like Guided By Voices' Bee Thousand, better than ever. 10 grains x 10 hops x 10% = Beer Thousand."

I am coming to embrace the idea of Pop!ping the cap & proceeding with a gentle pour, rather than an aggro one. Less chance of a mess + it gives me the opportunity to conduct an in-glass swirl. In this case, I got just over a finger of foamy, rocky, bone-white head with modest retention, quickly falling back to wisps. Color was solidly Amber (SRM = > 7, < 9) with NE-quality clarity. Nose smelled of vanilla, grass, honey, orange Pekoe tea and light fusel alcohol. As to the latter, it may have smoothed out & become less hot than it was originally, but it was lurking just beneath the surface. Beware! Mouthfeel was lightly carbonated, but very dense, sitting on my tongue like a sumo wrestler. The taste was very evocative of Chai tea! Spicy, tea-like, with notes of milk and vanilla as well as honey. It was dangerously drinkable and very smooth. Warming, the spiciness became more prevalent as did the notes of sweet orange peel. It was kind of reminiscent of a Wit in that regard. Phew! It was clearly effective as I could suddenly feel it coming on like a runaway train. Finish was hot, dry, spicy, very tea-like & a clear indication to me to slow down & savor this one. It was not playing around by any stretch of the imagination.

Bottled 10-31-14 poured into a can shaped beer glass. Amazing aroma of champagne, wine, and port-like vapors. I'm not afraid to age anything; didn't even remember this as a lager. Was so much sweeter when fresh, Obviously the hops have laid down a bit, but so smooth and the tiny bubbles are barely discernable. ABV masked well, a minor candied sugar hint with just a solid backbone of malty layers. Highly drinkable all the way through. not boozy at all. Happy retirement 1000!

Does not come across as a high ABV beer. Strong malt presence from the moment you open the bottle. Cereal grain through and through, no warmth or burn. Tasty lager

"Complex and rugged, 20 years in the making. And, much like Guided By Vouces' Bee Thousand, better than ever. 10 grains x 10 hops x 10% = Beer Thousand." Available in 12 oz. bottled 4 packs and on limited draft.

Poured from a 12 oz. bottle to a tulip glass.

(Appearance) Pours a frothy foam head of a pale off-white color over a moderately hazy medium amber body with ample fine pulp sediment and abundant, lively carbonation. Retention is average and lacing is light and spotty. 3.75

(Smell) A complex blend of malt notes forward, most evidently unmalted wheat and pilsner grain amongst more complex specialty malts and adjuncts that generate an enhanced and aromatic body. Potent herbal tea and honey characters pull the aroma in unusual directions. Hop character is mostly floral, grassy and slightly earthy with a moderate bitterness. Potency is moderate. 3.5

(Taste) The flavor largely follows the nose, with more malt body richness following, intense wheat and grain malts coalesce into a slick, flavorful but grainy malt biscuit of considerable complexity, rough with graininess, softly sticky with fermented honey flavor and creeping with phenols and esters around the edges. Faded hop flavor but a decent hop bitterness seems adequate to balance the softly exposed malt sweetness, especially when paired with the specialty malt's dominating earthy and grainy bitterness. 3.5

(Mouthfeel) Texture is slick, modestly syrupy, lightly chewy, medium dry. Carbonation is brisk, generating a moderate frothiness and a sharply crisp finish. Body is medium/heavy for the style, medium+ overall. Balance is slightly grainy and earthy bitter over sweet. Alcohol presence is moderate and there are no off characters. 3.75

(Overall) An ambitious concept from Dogfish Head, but ultimately one very busy ale with a lot of exposed grainy roughness is more likely to be a put off than a turn on. It's an ale that I find difficult to categorize, but with many of Dogfish Head's projects, the results can be a surprise for better or worse. I likely would have been more impressed with something that had half of the ingredients and alcohol, but then we wouldn't have Beer Thousand, just Beer One Hundred Twenty Five, and that just doesn't roll off the tongue (nor fulfill the artist-album-tribute-pun) nearly as well. 3.5

Served on draft. Knowing this is a year old at this point, I figured for the style there would be some fall-off. Never had this fresh, so this is a review for a beer 1+ years old. Clear golden yellow with a tiny white head that settled out quickly. No lacing or retention. Aromas of stale grains, old hops, and sweet malt. Flavors are nearly identical. You can absolutely tell this has to be a shadow of its former self. Good, but at this point - pass.
