A: Looks to be a deep red amber hue, until held to the light and a bright, yet hazy, goldenrod color appears. A gorgeous off-white cascading effect results in a gloriously large and creamy head, about two fingers and then some in stature. Retention is acceptable and a decent sized creamy cap remains throughout much of the beer. Significant amounts of lacing can be found all down the glass. Head retention seems a bit weaker than I recall from my last review.
S: Strong grapefruit juice aromas with a tender dash of pine resin. Perhaps a touch of plums? Something in the dark fruits realm going on in the middle of that grapefruit. Strong caramel malts fight for dominance over the juiciness. Nothing in this smell, however, points to this being a hop-heavy DIPA.
T: An EXTREME mesh of hops and malts, with both of them truly duking it out for the lead role. Malts add a ton of sweetness: think honey-drizzled oats, hints of caramel, sweetbreads. The hop medley is interesting. Instead of going for a pungent profile as many DIPAs do, Dogfish Head opts for a really interesting combination of spice and citrus that definitely offers a respectable touch of bitterness, but never truly overpowers the malts... it adds more of a complimenting accentual flavor note.
M: Full-bodied, borderline huge. Thick and malty and as smooth as glass. Lightly creamy texture, good carbonation. Lots of warming properties from the alcohol. The brewers down at Dogfish Head are truly artists when it comes to perfecting the feel of their beers. This is in my top 5 beers in terms of sheer textual perfection.
O: I used to hold DFH's 90-minute in the highest regards, praising it as one of the best DIPAs on the market. While I still feel it's a remarkable beer, it just doesn't push the same buttons as it used to for me. This beer struggles for balance, with the malts often taking the upper hand. While that's not an issue for everyone, it's certainly not what a bitter-freak like me looks for. With that being said, this is an excellent beer that I'll continue to drink in the future, but it'll be reserved for my maltier moods.
