I tasted my 2001 WWS (brown/bronze fish cap, "vim and vigor" on the label) next to a 2005 or 2006 (bright yellow cap, I need to look to see if there was a date stamp on the neck) for comparison. Hereby called "old" and "new".
a - New pours quide black with a small amount of fading head. Not much hangs around.
Old pours more viscous and doesn't show much activity or CO2. Pretty still.
s - New: Raisin-y, ethanol depth. Not a small beer! Woodlike, prune aromas, dried fruit.
Old: really very similar. Maybe a little more chocolately, but it's almost dead-the-same. Less wood-like.
t - New: Huge, sugary-sweet malt and ethanol from the front, like sherry or port. Fading quickly but leaving a thick coating in the mouth. This is really something else and while I know, if I didn't know it was 18% I would be shocked and rather disturbed by the flavors. No hot alcohol, but prunes/sherry/port/ethanol galore. OK maybe a touch of hot alcohol.
Old: Wow. Calm, unoffensive, smooth compared with the new. Much less CO2. Some oxidation is evident, but it adds complexity and there isn't really that much. Smoke? Smoked Ham? Must be my brain playing tricks. Aftertaste gets a little cloying. The old fruit and very very slightly soured fruit leaves a bit too much brown bananna sugar on the finish.
m - New - More CO2. Very thick and rich, nice, good.
Old - thick, solid, not much CO2. Smooth.
d - New: It's a huge beer. I wouldn't have two but so what?
Old: I don't think it's too old at all. Actually, I think it's just fine! Not much oxidation, and any that's coming will make it more complex. That said it's a silly "beer" that isn't very "beery" at all - more of a fortified wine.

2011 vintage poured into a snifter
A- very dark with a porous tan 1/2 inch head
S- near perfect- chocolate, molasses, dark fruits dominate
T- taste matches the nose and so smooth...being a 2011 vintage definitely benefited the smoothness of this beer...still, this beer is nearly 20 percent and youd never guess...good achievement by DFH
M- thick and chewy...very very good, just what i like
O- i paid 15 dollars for this 3 year old vintage single bottle....should you pay that much for it? absolutely not...but IMO it is the best DFH beer brewed and one of the better stouts out there especially considering it isnt barrel aged and it is nearly 20 percent...quite an achievement!
