An unfiltered, unfettered, unprecedented brown ale aged in handmade wooden brewing vessels. The caramel and vanilla complexity unique to this beer comes from the exotic Paraguayan Palo Santo wood from which these tanks were crafted. Palo Santo means "holy tree," and its wood has been used in South American wine-making communities.

12 oz bottle with a kickass label, bottled August 17, 2010 poured into a New Belgium snifter on October 8, 2010, at a few degrees below room temperature.

Appearance 4.5/5
Pitch black with a dark brown, big, and dense head. Great head retention and lacing. The looks of this beer will give any imperial stout a run for its money!

Aroma 4.5/5
Refreshingly different: a very unique smell that is obviously from Palo Santo wood. Indeed boner inducing, as DFH says on the bottle. Wood, spice, and vanilla, with perhaps some spicy hop character. No booze!

Taste 4.5/5
Caramel, roast, and the wood like quality of the aroma. Sweet from the malts and the alcohol but not solventy. This beer is a good example of an high ABV beer that's not "hot". At some point close to the finish the hop bitterness kicks in, and leads to a medium finish in conjunction with the roast: had it not been for these, the finish would've been too sweet. Afterwards, this beer's unique "Palo Santo" aroma is felt in the breath along with the alcohol warmth.

Mouthfeel 5/5
Medium to strong bodied with low carbonation, this beer feels silky on the palate. Finish is medium as noted and some malty sweetness and roast is felt later on.

Drinkability 4/5
Dangerous if you ask me.

Poured from a bottle into a snifter.

A - Pours an opaque dark-brown, with a half-finger head of tiny tan bubbles. Mere dots of lacing.

S - Mild aroma of molasses, burnt sugar, wood, soy sauce, and vanilla. Honestly, expected a much stronger aroma.

T - Big, rich flavors of tree bark, raisin, vanilla, caramel, toffee, date, and fig. Hint of ash/smoke. Finishes with a lingering woodiness, that keeps this from becoming an overly sweet prune/toffee bomb. ABV has a noticeable bite from sip to swallow. Very complex.

M - Medium bodied, with medium-to-low carbonation. Medium body works well with the flavor profile, as anything more would probably push this into syrup territory.

O - Complex and rich. Has a few minor flaws; slightly to "hot", and not all the flavors come together in total harmony, but all in all a really solid offering.

Poured a 2014 version into my Stone tulip glass.

Appearance is black like many RIS. Good amount of head that dissipated slowly.
Smell a bit roasty and coffee that opened up as it warmed to more of a bourbon-y essence.

Taste was very roasty with a bitter finish. As the beer warmed, more complexity revealed itself and became coffee, char, bitter chocolate and wood.

Mouthfeel was medium to full with a good bit of carbonation.

Overall a worthy addition to my DFH samplings. Haven't tried many Brown Ales but this was good. Probably would not purchase multiples of this again. But I would buy the occasional single bottle as a variation to my usual stout selection.

Poured into a snifter at cellar temperature
A - Pours a very dark brown with a single finger of medium brown head. The head is short lived but the lacing is long lasting. Leaves a thick coating on the glass.
S - Medium malt with a moderate amount of toasting and a hard to define after note.
T - Equal medium amount of hops and malt at the fore with a cola like after taste.
M - Medium viscosity with minimal carbonation.
O - The unique smell and taste notes, presumably from the non-standard wood, give it a character that is different but not unpleasant. That being said, I will not be having a second one.

Poured Palo Santo Marron into a snifter.

A - Pours black as midnight with a half finger of light mocha head.

S - Roasted malts, with light vanilla.

T - Dark roasted malts with chocolates. Some alcohol comes through mid-palate. It has some more vanilla and booze in there as well. On the finish it has more dark chocolates with heavy toasted malts.

M - Very nice here, with medium mouthfeel, and medium carbonation.

O - A great brown ale if not the best I've had. Highly recommended! Cheers!
