Poured into a standard pint glass with a half finger of light, quickly dissipating head.
Appearance - Hazy light-golden color, as is familiar with many unfiltered and white beers.
Smell - Very piney, some very minor notes of herbs and a very small hint of spice. Minor notes of citrus as well.
Taste - Very citrusy nose, with a strong herbal ester throughout. Sort of a bit of toastiness in the background, but very light. The lemongrass definitely plays a huge part in the taste. Very different than most white beers I've sampled; most white beers focus more on the citrus, whereas this specific white seems to focus more on the herb/spice esters. Nice citrusy aftertaste.
Mouthfeel - Surprisingly refreshing considering the amount of focus on the herbal aspect of this beer. High level of carbonation with a very smooth, clean finish. Leaves the tongue with a slight tingling feeling.
Overall - Overall, this beer was very surprising. Definitely not a session drinking beer, despite its moderately low ABV (4.8%), its a great beer to sip on. It's not too overbearing, but compared to most white beers, it's just different; however, different isn't always bad. As a pleasant surprise, the herbal esters of this beer definitely sneak up on you. They are barely detectable in the aromas, but this adds to the overall experience of this beer. This beer is a welcome (if not unusual) surprise from Dogfish Head. Not necessarily a brew that I'd keep stock of, I would definitely pick up a bottle or two again to have some variety.

A pours a pale straw yellow with good clarity. Nice bright white head with good retention and stick.
S - Bread dough, lemon grass, citrus rind, yeast.
T - Yeast, banana peel, coriander. Easy drinking - light bodied wit bier. Slightly acidic.
O - Nothing overwhelming about this one. Just an easy drinking Belgian style brew.
