A: Pale gold with excellent clarity. A long lasting white head that settles to a half finger of foam that leaves some lacing on the glass.
S: Moderate orange and rosemary/piney aromas dominate with fruity undertones. Moderate sage and moderately-light thyme aromas comes through with a earthy character. A moderately-light soft malt sweetness in the middle. Light spicy aromas come through but to light to tell if that is hops or yeast. There is a light citrus hops aroma mostly of lemons. There is moderate bitterness that continues through the off-dry finish.
T: a very unusual herbal, fruity and lightly spicy combination. The Sage rosemary and thyme flavors dominate the taste with an orange and spicy flavors coming in next.
M: Medium-light bodied with a moderately-high carbonation. there is a drying sensation on the palate.
O: Although the flavors are decently balanced, I've found when cooking that parsley, sage, rosemary and thyme isn't the best combination and the same hold true here the just don't get along that well. The saison character is a bit muted which is to be expected with the herbs taking center stage.

Dogfish Head brewed version pours into my glass a hazy bright golden yellow with two fingers of bubbly white foam atop the brew. Plenty of active carbonation. Aroma brings crisp sun-dried grains with bold rosemary and spicy thyme. Sage and parsley meld in akin to an herb garden in summer. Spicy yeast backbone.

First sip brings very light, crisp grains upfront with a bold blast of herbs across the palate. Thyme and rosemary lead the way with a spicy lemon zestiness. Sage and parsley are there as well. Herbs are quite bold and biting on the palate here. Flows down with some earthy spiciness and a bit of a yeast kick.

Mouthfeel is light with fast moving carbonation. Overall, it seems the herbs are a bit more pronounced here. It's an interesting twist on a saison, but again not something I would be able to drink much of in a sitting.

I liked this version better than the one from Victory. I've been told that the Stone interpretation will not be getting into Maine.
In a pint glass the beer was a gold color with a huge white head that retained well. Decent amount of lacing.
An herbal and sweet malt aroma.
Sage and thyme taste with a sweet malt background. A bit of late hops.
Nice carbonation, pleasant beer.

Is this really a saison, though? It drinks like a belgian. I did not enjoy this.

Had on draft at Novare Res, over the course of a few days i was able to try all three versions.

For the dogfish version it was perhaps slightly fresher in the taste compared to the stone but i couldn't distinguish between the three overall thus i gave them equal score.

Very clear pale yellow thick white head good lace

The nose is sweet with some citrus grassy hops and yeast the spices do no present them self

Starts with a sweet citrus and spicy it milds and finishes dry with a dry mouth the spices present themselves and finishes bitter much like you'd get from licking a lemon

A = A medium lemon yellow with a respectable foamy head and residual lacing on the glass. More reminiscent of a lager than an ale in appearance.
S = There is definitely a herb smell to the beer, predominately thyme in my opinion, then the malt sweetness hit you, then the hops.
T = As far as herbs, thyme first, then sage second. I could barely taste rosemary and obviously because of its "grassy" quality, the parsley was masked by everything else, Including the malts and hops.
M = Smooth in the mouth. Again, more of a smooth lager than an ale -- or a very light ale in mouthfeel.
O = Interesting as standalone drink. Pairing might be good with something uncomplicated or cheese, as you'd want to taste the herbal nuances in the beer. It is not something I'd run back to purchase, but as a novelty, it's definitely worth the experience!

Bottle pours a hazed pale golden body with an immense offwhite head that leaves some grainy sheet and patch lace on the goblet.

Aroma is herbal, with sage and rosemary overwhelming anything else.

Mouthfeel has a medium body and carbonation with a yeasty chalkiness.

Taste is dry and herbal. Sage and rosemary are present all the way through. Yeasty chalkiness is present in a good way. Very grassy, whether from the parsley or hops I'm not sure. Alcohol is not noticed. Finishes dry and herbal.

Herbal component seems overdone and the chalkiness is more prominent than I would prefer, but this one is really very approachable, overall. I could drink a couple of these.

12 ounce bottle, has "bottled in 2010 D" (?) etched onto the neck of the bottle. Pours light golden amber, lightly hazed. Loose off white head, stays and falls to a nice looking thick film (again loose) and leaves ample fine bits of lace. Herbal, spicy nose leads directly to a herbal, earthy, peppery, lime infused style of saison, thats not all that to my liking. Something just seems off here, so many other saisons out there that I prefer to this one.

Had on tap a Craft in Brookline

Appearance: 1/4 inch head, clear, gold in color, high carbonation

Smell: big dose of lemons, oranges, and pepper--a wonderful smelling beer

Taste: lemons, oranges, pepper, and hay--very clean

Mouthfeel: light bodied, dry, medium carbonation

Drinkability: This is just a very clean saison and one of the better American versions I have had. The flavors of lemon and pepper just jump. Another beer I could drink all day. The alcohol is super well hidden.

(Dogfish Head) Bottle poured into pint glass.

A- Pale straw color with average head and little lacing. Very well carbonated.

S- Bizarre in a good way. The herbs in this beer create a nose that is quite unusual, to say the least. I found myself scheming to cook game hens in my crock pot with this beer before I even tasted it. The nose certainly has a particular mystique to it...

T- A sour, spicy- rather like black pepper and lemon grass- flavor dominated. I honestly could not decide whether or not I was enjoying it for about half the beer.

M- Light and acidic. Quite effervescent. Not particularly malty.

D- A very interesting Saison, to be sure. I don't know if I'll run right out and buy out any inventories any time soon. I am curious to see how the other brewer's offerings compare.

A: Brilliant gold with a light copper tint under a finely bubbled white foam collar that hugs the glass leaving a fine sheet of lace.
S: Citrus, fruit, light herb – first sniff very herby.
T: Some ripe fruit with a slight funk, herbs, a little vegetal. M: Smooth, medium body and carbonation.
O: Manages to pull off the Scarborough Fair herbs without being offensive.

12oz bottle at fridge temp poured into a tulip glass. bottled in 2012 C, 6.8% ABV.

pours out a nice looking golden color with pretty good clarity. a little over one fingers worth of white head, some thick sticky lace, decent retention. i was maybe expecting it to be a bit cloudier?

a big spicy, herbal punch in the nose. definatly all the herbs listed can be picked out. also a bit of pepper and lemon citrus and as it warms hints of hops.

again pretty big on the herbal spices, but they seem more in balance with the rest of the beer in the taste rather than in the aroma. this also seems to have a nice somewhat tropical fruity hoppiness going on, maybe even some juicy citrus. a bit of sweet grain, and light belgian yeast. tartness in the finish. tastes of bitter lemon peel linger.

slightly heavier side of light bodied, a nice ample, thirst quenching carb that has a bit of a bite in the finish.

at first i was a little taken back by the big aromas of herbs and spices, but as this warms some hops come out and play off the herbs very nicely. sometimes its almost unclear whether its the hops or the herbs your tasting. well done, id love to session this all day.

Had in a four pack I picked up in Delaware. I thought this was only a one time thing but I guess they keep brewing it. Pours yellow, mostly clear, with a super fluffy head. Smell is... Odd. I can't put my finger on it but there is a ton of spice and herbs here. Somewhat medicinal. Had one sip and I don't like this at all. So I let it warm up, still bad. Very medicinal in the herb choice, almost like a liquid Ricola cough drop. Drain pour. Had another bottle a few days later, drain pour. Not good.

Pours with a bllowing bright white cloudy textured head rises well above the rim of my chalice. Slightly hazed bright straw golden color, lacing left behind is fine and intricate. Nose is blasting with rosemary and thyme it smells like somebody just roasted some chicken. Sharp spicy acidity with hints of citric undertones and sweet grassy layers as well. Flavor this one is tasting nice a saison/gruit combo with aromatic/spiy herbal additions. Much more appealing than the Stone version I had, it was so spicy I had a hard time detecting the saison characteristics. This one actually accomplishes the balance that would go nice with a meal using these same aromatic herbs. Citrus combo of herbs/lemongrass/thyme bitterness very green and fresh tasting lively carbonation on the palate helps the flavos not fall flat. Eye opening appeal that brings out the point that what else could be used to spice a beer up instead of straight up hop additions, I like the creativity no boundary approach that went into play when formulating this saison style. Light effervescent carbonation that works nicely with the style body is moderate very killer mouthfeel. Drinkability was easy, no problems consuming this fantastic gruit/saison, can't wait to try Victory's version.

This beer pours a slightly cloudy straw ellow color with a think and fluffy white head. The head fades slowly, leaving a lot of lace.

This beer has a strong citrus aroma. I can detect some grassy hops as well. Some grainy aroma is also present. An earthy yeast aroma is also present.

This beer tastes much like it smells. Citrus up front, with some grain and yeasty funk. Some grassy hops are present also.

This beer is crisp and refreshing. It is highly carbonated, and leaves a citrusy aftertaste.

This beer would probably make a good session beer. It is good, and it isnt over the top on alcohol.

Overall: Thanks to inlimbo77 for this good beer. I like it a lot. Stone Dogfish Head and Victory, what is there to not like?

Golden yellow, straw like with a champagne bubbly head.
Citrus, fresh bread, slight cherry, sweet floral aromas.
Taste is much like the aroma but reverse. Sweet florals to citrus.
Champagne mouth feel.

Poured from a 12 oz Bottle into a tulip.

A- Rich golden color. There was a lot of head on this saison but it settled quickly. The lacing wasn't to sticky but good none the less.

S- Wow! The aroma of this beer is deep in herbal spice and everything nice. Sage and a lavendery thyme intoxication fills your head when you take a deep whiff, the rosemary isn't subtle but not overpowering. Smelling this beer is the next best thing to smelling a bouquet of some wild flowers. A piney hop tickle and a splash of citrus is also evident.

T- Malts hit ya quickly, bittersweet citrus and a very herbal backbone. It has a very balanced hop blend that is playful with all the herbs and spices. There was a piney smell, but a grassy taste to these hops, the finish is great though, and the taste sticks around just long enough. Tasty.

MF- Light body and smooth. Just enough carbonation in it (medium to medium-heavy), and it gets kinda dry at the finish. It's a refreshing and interesting feel.

O- Two words: "Almost Perfect." This is a great Saison/Farmhouse. Not anything more needs to be said. This made it into my top 5 collab beers, and I still have two other versions to try still (Stone, Victory). You can't be disappointed with this ale.

Poured into a pint glass.

A - Yellow and slightly hazy with a billowy white head. A thin head remains on the beer while drinking with good lacing.

S - Hoppy, Herby, Citrusy. Thyme is the predominant smell backed with a citrus/lemon smell.

T - Just like the smell, thyme is the predominant flavor. After that there is a citrusy bitterness.

M - Surprisingly smooth mouthfeel. Medium bodied.

D - Took me a while to drink just one. It's a good beer but I don't think I could have more than 1 or 2 in a night. It's just not that kind of beer.

ST: 12oz poured into a large wine glass.

A: Hazy golden orange (almost very light honey) with a thick white head that leaves nice lacing on the the glass.

S: Candied sugar, Belgian yeast, pepper, herbs, citrus, and floral notes. It has a very complex aroma.

T: Starts with malt and bread (on the sweeter side). Herbs and pepper with citrus arrive towards the middle. The finish is a mix of sour funk, strong pepper, and some bitterness from hops.

M: Medium body and on the drier side.

O: Saisons are quickly becoming one of my favorite type of beers. This is a well done version made between three great breweries. It has a lot of complex smells and flavors, but it does not have as much funk as the Belgium saisons. The flavors range: honey, citrus fruit, pepper, and herbs. It is sweet at first, but it becomes drier towards the finish.

A- This beer has a very slight hazy lemon yellow body with a creamy antique white head. There are strands of tiny bubbles that trail to the surface.
S- The green minty rosemary and thyme aroma has a saison yeasty quality to follow. The herbs are bright but not overpowering and have hops aromas coming through them. There is a green lemon quality to the mix that might be hops or herbs or both.
T- The carbonic acid bite scrubs away much of the flavor with a slight herbal lemon note coming through then a hop bitterness in the finish that lingers.
M- The medium mouthfeel has a big scrubbing fizz in the texture.
D- This version has more aroma depth that the Stone version but to much fizz makes this taste more like a soda pop and it looses a lot of the flavor and character of a saison. The aroma is great but after a bit it starts to take on an aftershave quality.

A: Pours a hazy golden straw color with a 1 finger white head. A fair amount of visible carbonation. Head fizzles to a thin film in 2 or 3 minutes.

S: A fair amount of spice up front. Can really get notes of the parsley, sage, rosemary and thyme. Fruity malt in the aroma and in the background some mild hop.

T: Similar to the smell, lots of spice. Reminds me of a spice dominated brew like pumking. Very interesting approach to a style I already like. Slight lingering hop notes.

M: A good amount of carbonation, light body. Clean finish, quite drinkable.

Overall its a very unique saison. I enjoy it and would drink again in a second. Having the Victory next to this which is slightly milder in taste, a tad stronger in smell, and has a clear body with less head.

12 oz bottle, poured into a goblet.

Appearance: Pours a beautiful, cloudy, deep, golden color with a finger of white-colored head that quickly dissolved into a thin lacing of foam that almost, not but quite, completely covered the top of the beer.

Aroma: Pretty aromatic, with strong notes of toasted malt and Belgian yeast, imparting aromas of toasted French baguettes and tons of spices and herbs, such as black pepper, cardamom, coriander, clove, lavender, parsley, rosemary, sage and thyme. I also get some lemony-citrus, candied sugar, honey and finally, lots of piney hops.

Taste: Wow! Delicious! Strong flavors of bready, toasted malt up front, imparting flavors of English muffins and French baguettes, followed by some good amounts of honey-like sweetness, spices of black pepper, cardamom, coriander, clove, lavender, parsley, rosemary, sage and thyme, some piney, hoppy bitterness and Belgian yeast. The beer has a very short finish.

Mouthfeel: Medium-bodied and pretty effervescent as there is quite a bit of carbonation to tickle the taste buds. With an ABV of 6.8%, there is no alcohol on the palate.

Overall: This is a very delicious, outstanding, American version of a Belgian Saison. It has great, balanced flavors of toasted malt, spices, citrus, funk and hoppy bitterness. Highly, highly, recommended!

Poured from a bottle into my La Fin du Monde tulip glass.

Pours a golden straw yellow that's hazy and translucent, with a big white fluffy head that recedes slowly. Leaves a lot of bubbly, frothy lacing. Quite pretty, all things considered. Smell is herbalicious, to say the least. Hard to pick out individual spices, but I get hints of thyme and coriander from multiple sniffs. There's also some subdued citrus rind as well.

Herbs and a hoppy bitterness greet the senses right at the start. The hops quickly give way to some wheaty malt flavor, but the herbs are here to stay, as they linger long into the aftertaste. The wheat gives it a nice bready taste, with just a tiny, tiny hint of banana and bubblegum snap at the end. Alcohol really isn't detectable at all, no noticeable warmth even as the brew sits out for an extended period of time. Mouthfeel is medium bodied, with some prevalent carbonation. It feels quite firm on the palate... not sure if I have another way of describing it better than that.

Drinkability is good. It's certainly a very different and unique approach to the style, but it's quite a solid and tasty brew. The spices make for a one-of-a-kind experience. Now if only I could just find the Stone and Victory versions around here to compare!

Poured nicely... But thats as far as I can really say neat things about this one. I loved the idea of the various spices. To me, the sage seemed too pronounced and overshadowed the other herbs.
I do have to add that as w hole I am not a huge fan of Saison style.
I do always give credit to DogFish Head brewers. They can come up with all sorts of different variations on beers

12oz bottle, from the cellar room at the Liquor Mart in Glendale, Colorado.

This beer pours a mildly hazy, medium golden yellow hue, with a teeming tower of puffy, loosely foamy, and certainly bubbly off-white head, which leaves a few minor instances of streaky sudsy lace around the glass as it evenly bleeds off.

It smells of pungent Irish stew spices - yup, rosemary and earthy thyme, with a lesser funky sage element, one which segues easily enough into the inherent yeastiness, all lording over a sturdy enough grainy, slightly bready pale malt. The taste is less spice-oriented - more blended, the proclaimed herbs acting like they've been simmering for the better part of the day, rather than just recently added - which allows the gritty, grainy, and not all that sweet pale Belgian-esque malt to safely come out of hiding.

The carbonation is dense in its softly supportive frothiness, the body an engaging medium weight, and smooth, in that Belgian spice and up-ticked alcohol sense - so, not really. It finishes off-dry, the malt not letting the lingering stew spices out and about without at least a modicum of supervision.

I've got the feeling that this is an aged bottle, and for how long, I do not know - stated solely because of the timeliness of my encountering it. The spices are not only St. Patrick's Day-friendly, but (Canadian) Thanksgiving as well, so this is a seasonal offering, in a manner of speaking. At any rate, nice to finally have gotten the chance to hit this particular DFH collaboration.
