“Barbe Ruby” is one of the four “Barbe” beers. The name of the series of “Barbe” beers refers to the Liege brewery “Barbe d’Or”. Brewery Barbe d’Or was a medieval brewery in the old town of Liege (Belgium) and belonged to the family “de Romsée”, an ancient Liege family whose coat of arms adorns the logo of the “Barbe” beers.
“Barbe Ruby” is a top-fermented beer. The “Barbe Ruby” is the fruity beer in the series of “Barbe” beers. Its taste has aromas of fruit with hints of almonds and light sour cherries. The taste is initially sweet and fruity and keeps nicely the balance with a refreshing aftertaste.

Dark reddish brown body cherry aroma, lightly sweet, tart taste, strongly of cherry.

330 ml bottle, as Barbe Ruby Fruit, from Vinmonopolet, Nettbutikken. ABV is 7.7%. Very dark ruby colour, nearly black. Small pink head. Strong aroma of sour cherries, cherry kernels, almond essence and marzipan, also hints of humid basement. Distinctly sweet.and slightly sour flavour of sour cherries and sugar, cherry kernels and almond essence. Something out of the ordinary, but not a favourite of mine. Still quite drinkable.

This beer surprised me on many levels. The color was deep red, like a black cherry. The head--the slightest hint of pink. The mouthfeel was impressive--smooth, ample, silky. Delicious cherry flavor--more sweet than sour, balanced with almond flavors. Seriously tasty. Like Ben & Jerry's Cherry Garcia in beer form!

Pours a dark copper/ruby with normal carbonation. Aroma is of tart cherry's, candy. Taste is much the same. A bit sweeter than I'd prefer but once you get started it's hard to stop! Nice kriek despite the sweetness, the sourness balances a good bit.

Poured from a 11.2 oz bottle into a chalice glass.
Pours a deep mahogany color with 2 fingers of fluffy peach colored head. The head has fantastic retention, leaving a beautiful crown of lacing as it ultimately settles into a thick blanket of foam.
The aroma brings notes of fresh black cherries and cherry candy with underlying notes of caramel, toffee, and almonds.
The flavor starts off with cherry candy and almonds before a wave of caramel sneaks through. Finishes with some apple cider vinegar.
The feel is medium-full bodied with good carbonation. Creamy and syrupy.
Overall, I quite enjoyed this one. It's very acidic and absolutely exploding with cherry flavors and aromas, but despite the syrupy mouthfeel, it never really enters medicinal territory.

On tap. Poured out a clear, red color with a pinkish head of foam. Sweet caramel aroma with some tart cherry. Sweet caramel with a tart cherry bite and a touch of toffee.

Body – Deep purple, almost black, like an eggplant. Constant effervescence. When held to the light, a murky red.
Head – Large (Maximum 4.3 cm, aggressive center pour), pink, medium density, fizzy, short duration, diminishing to a one to three mm crown and a thin partial cap.
Lacing – None.
Aroma – 4 – Strong almonds, weak cherries.
Flavor – 3.5 - Begins very sweet and fizzy, ends slightly sour. Almonds dominate the cherries. Gastric warming begins immediately. No alcohol (7.7% ABV) flavor or aroma, no dimethylsulfide, no diacetyl.
Palate – 3 – Medium, just short of syrupy, lively carbonation.
Final impression and summation - 3 - If this were just a bit thicker, it would be a tasty cough syrup. As it is, it seems too sweet and sticky for a fruit and field beer. Overall, disappointing. I was expecting a kriek.

Red fruit forward, the sweet definitely comes through as a almond extract flavor. This beer has the perfect amount of tart mixed in and the texture is robust. Summer in a glass!
