A - Thick, slightly off-white creamy head with moderate retention. Very deep copper brown; very hazey with random floaties.

S - Strong presence of complex malts and strong, but not powerful, sweetness from the malt. Very light fruity esters present, with mild to light peppery phenol.

T - Very moderate sweetness from malt. Slightly dry finish. Very low bitterness, with alcohol applying some of the bitterness to malt. Slightly balanced toward malt, but finish notes of spice phenols make it wholesome. Esters, phenols, malt, and light hop presence all blend seamlessly.

M - Lots of carbonation, but no carbonated bite. Medium to full body, but not creamy. More authentic to a traditional Triple. Mild warming from ABV.

D - Dark rich, very complex Belgian.

Wow, this is completely not what I was expecting! All the smooth flavors of the complex palate make this one intriguing beer. Definitely on my top.

Poured from a 750mL bottle into a Koningshoeven chalice. Best before 10/05/14 (10 May?).

A: Light burnished copper. Light white head with good lacing.

S: Caramel sugar. Apples and pears. Hint of phenol and spice.

T/M: Thinnish and odd. Vanilla. Pear. Can't taste the strength at all. The taste is so brief as to be ephemeral. Aftertaste is lightly sour.

O: It's good, but too strange to great. Maybe I got a strange bottle. Would try again, if not soon.

Poured into a snifter

A: Light brown with a tan one-finger head that dissipates into tiny bubbles. Frothy lacing.

S: Bourbon, nutty, earthy, rum, sugar, caramel. Bring it on.

T: Follows nose. Smooth as hell. Nutty, dark fruits, malts and caramel. Love it. The 10% kicks in with gusto.

M: Medium with frothy carbonation.

O: A great celebration drink. I would say it's my favorite of the 3 des Rocs I've tried, but I love them all equally. Highly recommended for Belgian brew fans.

750ml bottle served in a St. Bernardus snifter. About 1 year past the indicated best before date of 06/04/2012, but stored carefully.

A: Pours a dark reddish amber with a finger of off-white head. The head quickly recedes to a lasting partial coat and ring. Even the first pour provided a load of suspended sediment, some of which rose and fell in swirls due to the carbonation. Very peculiar looking and not so appealing. The sediment was not detectable by feel.

S: Very complex aroma; one of those rare beers where it seems a bit different every time a take a sniff/sip. Hints of dates, honey, apple cider and a host of fruits. The high ABV is most apparent here, being quite well hidden in tasting and in the gently warming feel.

T: Mildly spicy and sweet, with hints of dark honey, nutmeg, cinnamon, dark bread, figs, and roast nuts. Very nice balance between dark fruitiness, mild sweetness and spices.

M: Full body; creamy smooth; medium and very soft carbonation.

O: An exceptional beer that, given the sediment, is best enjoyed in a darker environment.
