Brewed with organic barley, Centennial hops and Pacific Gem--a super high alpha acid hop from New Zealand.

Light on carbonation, so the pour was vigorous to thicken the head to two fingers. The head drops to a thin lace with some retention. The pale amber color has a stunning clarity to it. Pungent, piney hop aroma-- peppery and spicy with a hint of grain. Early in the game, the hops have a bitter burn to them--spicy and piney with a pungent, oily flavor. A bit of a hop bomb up front. Malt is silent for the most part, with a quick splash of biscuity grain. A faint breath of alcohol comes out when the beer warms up a bit, as does a tad more maltiness. Clean flavors throughout. Regardless, hops still have a firm grip around the palate far into the semi-dry finish.

If there are any hopheads into organic living, this beer is for you--as for any other hopheads, this will certainly suffice. Hops are quite unique and the higher alpha acid hops don't hold back at all. A hot-pot of coconut green curry, scallops, shrimp and basil over some jasmine rice was the perfect pairing.

I had this while dining at Bone-Fish Grill. I thought it was on tap, so a bottle was a little bit of a disappointment (not that that's the beers fault). Typical IPA aroma and a bright orange amber color with light carbonation. It had a good mouth feel, and then a surprising finish/after taste. Almost a tannin like taste from a red wine. It was worth trying, but I doubt I'll try it again. I've found other IPAs I like more.
