I used to live walking distance from the brewery, and this was always my favorite Two Brothers brew. Everyone else has pointed out the flavor qualities, and they're on point. I think many have rated it a bit low, but I understand we all perceive flavor differently.

As hefeweizens go, it's probably tied with a Hacker Pschorr (tap, not bottle) in my book.
As always, many reviewers get their jollies by trashing any beers or styles they don't particularly care for, so take those with a grain of salt.

(11/11/2011) Poured into a Sam Adam's Perfect Pint Glass, perfect 2 finger head with a great lingering fluffy white appearance.

A: Classic Belgian style wheat aroma, wheat with bananas and cloves to compliment. Slightly citrus in the back

C: Beautiful dark banana yellow color.

Sip: Banana flavors up front with a spicy clove and citrus finish. Light mouthfeel with big wheaty flavor.

OV: Classic Euro-style Weiss beer, extremely good beer and impressive among American Weiss beers. (486 characters)

This is the best craft Hefeweizen I have had!!

Bottle poured into weizen

Three finger head, cloudy, straw golden body with perfect carbonation

Smells: Cloves, wheat, herbal, hefe yeast!

Taste: Wheat, bubblegum, cloves, banana,

Mouthfeel: Perfection for the style: fluffy

Overall, I'd have this again. This is an excellent beer! Worth your time.

I will get a six pack sometime.

On tap at Fountainhead

Poured cloudy orange/yellow, small head. Smelled of typical hefe: banana, yeast, fruity.

Taste was excellent. Banana and fruity going in with wheaty/yeasty aftertaste. No bitterness whatsoever. Creamy mouthfeel with slight carbonation.

Overall great great hefe, one of my favorites. I grab this whenever I can. This has a permanent place in my fridge.

EDIT: I bumped the taste points up to 5 after several re-drinks. This is the beer I compare all wheat/whit styles to. I just love this beer! (520 characters)

Ebel's Weiss is constantly available at the local liquor store, and my wife and I have chosen it to be on our first tap year-round. We like it, our neighbors like it, and it's a genuine crowd pleaser.

This beer is a great example of the hefeweizen style -- cloudy, light, drinkable, and with a great aroma.

On draft, Ebel's Weiss is a fantastic beer in summertime or any time. (451 characters)

A: Pure gold with delicate white foam head.

S: Rich clove and banana, and I mean this as top shelf...deep and complex. Lemon, spice, and maybe some vanilla.

T: Not too heavy, this style can easily be over-done. Medium sweetness, subtle spiciness, a very soft touch. Low medium carbonation.

D: A very drinkable hefe. The aroma is big and enhances the experience, but it seems to be one of the most well balanced hefe's that I've had. (436 characters)

Very yummy... This beer billows with banana and bubblegum esters, atop a tastefully understated mix of clove and coriander. While nothing particularly stands out, that's not exactly a bad thing - this actually drinks like a hefeweizen. (236 characters)

Milky pale orange with a smallish white head. Fades to an edging but leaves inticate lacing.
Beautiful nose full of clove and vanilla. Banana is pushed to the background. Peppery and wonderful.
The same can be said of the taste. Heavy on the clove/vanilla/pepper spices. Lighter on the banana tones. Yeasty dough flavors are present and welcome as they provide support. Lingering herbals towards the finish, with more delectable vanilla.
A soild medium bodied brew. Carbonation is on the low end, but somewhat prickly. Fairly creamy. Delighful.
Right near the top of my favorite hefeweizens. (605 characters)

My other brew of choice at a Kane County Cougars minor league baseball game on a hot, humid night. Great family fun, and the Two Brothers tap is right behind my seats.

Pour is remarkably clear for a hefe, appearance is more in line with a Krystal Weiss. No head to speak of, due probably to the plastic cup it was served in.

Aromas of cloves and banana esters, which are also evident in the taste.

Mouthfeel is good, not too thin or heavy. Would make a good session beer on a hot night.

Everything was spot on, except for the absence of yeast haze, making for a classic german weiss beer. (592 characters)

Ebel's Weiss is the best American version of a Hefeweizen or Weizen that I have tried, even better than Dreamweaver. It has the same characteristics of a Bavarian Hefe, except everything is toned down a little compared to drinking a Schneider or a Weihenstephaner. Lighter gravity and ever so slightly less flavor. It actually doesn't give up too much flavor as there is quite a bit of clove, banana, and bubblegum flavors; slightly floral as well, maybe it's the coriander. Didn't find it very estery and the mouthfeel is a lot like Dreamweaver to be honest. No alcohol taste. Overall, looks and tastes great! (617 characters)

Besy By 4/29/12. 15 IBU, 4.9% ABV.

A - Ebel's Weiss pours an effervescent yellow-orange hue that's slightly cloudy from a bottle-swirl and topped by a dense, creamy head. The slow departure produces thickly-caked lace all over the glass.

S - Ebel's Weiss greets you with a pleasant banana ester and sweet malts along with a faint citrus hint alongside clove. Soft wheat backs it all up but there's a strange spice note I can't put my finger on.

T - The mix of clove and light vanilla ice cream topped with smooth banana is fantastic! Sweet malts and light, dry wheat provide the malts for this delicious beer.

M - Creamy and smooth despite it's effervescence, Ebel's Weiss goes down very well. Light to medium in body, the wheat really softens the beer on the tongue.

O - Both a fantastic depiction of the style and a wonderful summer beer I could drink all day long, Ebel's Weiss is a delicate treat with plenty of flavor and equally as much refreshment. (1,001 characters)

This has to be one of the best domestic (American) attempts at a straight-up Bavarian-style hefeweizen. What I focus on the most with it is its wonderful, dynamic, relatively complex aroma - banana bread dough, curiously extra-toasty/nutty granola-like malt, and light-moderate, yet vibrant, softly-spicy floral notes - just wonderful!

The taste mirrors the aromas well, with that malt character really giving the beer some depth (so it's not just fruity banana and clove esters) in flavor, but not quite as much in body as it needs - not that it's thin or too dry - it could just soar if it had a little more roundness and maybe a touch of honey (malt) flavor (could be due to the malt they use? is it domestic?)....

Pleasantly surprised at how drinkable and enjoyable and true to style it is. Maybe it just needs additional head-retention and body-enhancing proteins (flaked wheat?)...Either way, well done, sirs! (917 characters)

Pours dark for a hefe, right in the direct middle between yellow and amber, nice and cloudy with a big white head.

Smells strongly of clovey wheatmalt. Very, very spicy, which is nice, but it's not really complex.

Tastes much more complex. All the good stuff is there: bananas, white pepper, and cloves. No shitty fruit complexities to weigh things down. And, best of all, the body is so thick and creamy that after a few sips the beer begins to taste a little like flowery frosting. Trust me, that's a good thing. (516 characters)

I had this one on tap in Chicago at the Bad Apple as well as one or two out of the bottle at a friend's place. The tap pour was $5 for about 16oz into a weizen glass. Reviewed from notes.

Appearance (3.5): Hazy dark gold (that seems too dark for the style but is what I have written down...). A fluffy finger of head reduced to a thin film.

Aroma (4.5): Sweet clove, slight banana, and some cereal from the grains.

Taste (4.5): Orange and banana with a clove finish. The classic hefeweizen profile of fruity phenols.

Mouthfeel (3.5): Slick, medium-high carbonation and medium-low body. Very drinkable.

Overall (4.5): I liked this one a lot. One of my favorite new weizens in fact. It's too bad I have only seen this in Chicago. (735 characters)

This offering poured from a 12oz bottle pours a hazy golden color that leaves a thin off-white head that stays with the beer. The aroma is sweet. Wheat, lemon, pepper, yeast, grass, are all present in the nose of this brew. The taste is sublime, cloves, bananas, orange peel are all dancing on your tongue. This hefe has a syrup consistancy wheaty, bready, and has a distinct lemon flavor...finally the brew finishes on a citrus hop profile with a banana bread spice finish. (474 characters)

Wow-WOW!

A: Pours very hazy yellow, nice head, great lace.

S: Clove, yeast, spice, bread

T: Same as above, plus bananna, citrus, even a hit of pepper.

M/D: Heavy for a hefe, alot like a Wit. VERY refreshing. This is by far and away my favorite Hefe. Not even a close race with others I have had.

12oz bottle, Sam Adams perfect pint, best by 11/23/10 (I received this after the best by date in a bif.).

The color is certainly spot on. It ranges from pale banana yellow to deepening golden orange, all well hazed. The head deserves the benefit of the doubt because of the age, though the bubbles are decidedly small and unlike towering prime examples.

Soft wheat, ripe banana, the suggestion of cloves.

The malt seems to have some aggressive spice in addition to the clove. Vanilla makes it a more balanced beer and plays with the banana flavors well. A lemon sourness contributes even more to balance. Large amounts of flavor, both classic and with a twist.

A high carbonation level makes it very refreshing. This is a great quencher and one of my favorite Hefeweizens ever.

I believe this is my favorite American made Hefeweizen. It seems like it would be a great warm weather beer that I would definitely drink in place of any macro or change out with lighter hoppy beers. (987 characters)

I think this came as an extra in a trade, intentionally served with the sediment. Beer is yellow and completely cloudy with an aggressive head of small white bubbles that leaves some lacing on the glass. Looks good.

Aroma is strong banana and minimal cloves. Very nice.

Beer is light in body and wheat and quite carbonated on the palate. There is a small sweetness and big banana flavors in the midpalate, nice finish, mildly grainy. A very nice beer. (453 characters)

Tasty! Poured with very little/no head; very nice golden color, I swear it nearly glows! Gorgeous aroma--citrus, a bit of spice, and I can definetly make out the banana the bottle claims. Very smooth, a carbonation tingle on the tongue, and a bit tart with the citrus. I like it! Easy drinking yet quite flavorful. This would be a perfect summer beer. (351 characters)

Pours an effervescent amber & pearl white head. Average head retention & lacing

S: Juicy fruit & cloves , white pepper

T: Follows the nose, a little white grape & a little Band-Aid up front. More juicy fruit & a little bit of cloves as this warms, faint hints of persimmons. Finishes fruity & with juicy fruit & cloves

MF: Medium bodied, light carbonation

this poured nice and smooth with a one inch head. nice bready aroma. smooth taste that was a little fruit and light. good beer for the summer months as a nice thirst quencher. a pleasant surprise with a nice dry finish. it was good enough to have two in a row.

Cloudy amber-yellow with two fingers of white head; good duration and decent lacing on the glass; good start. Better nose than I expected--plenty of banana, vanilla, clove, and ginger--very impressive smell.

More sweet than spice on the taste, banana take charge in Ebel's. Yet the vanilla and ginger are well represented in support; delicious beer. The texture is terrific--light, effervescent, and pillowy, just the way a good Hefe should be. Ebel's is very good Hefe.

I'm a little embarrassed to say I've passed on Ebel's a few times, not because I wasn't interested but, rather, because I had a few other items in hand, and because other heavier styles had grabbed my attention. Ebel's is more than worthy of grabbing a sixer or two. In the warm weather, Ebel's will be an absolute delight.

Excellent Hefeweisen. Two Brothers has done an admirable job on this style, and deserves considerable praise. (907 characters)

Hazy straw gold under a cream colored foam cap. Bready nose and palate with banana, clove and vanilla. Medium to medium full body, medium to medium high carbonation. A very refreshing and easy to drink beer. (207 characters)

Appearance: Orange, red, pink hues all mixed together. Decent foam and good lacing. Cloudy as hefeweizens should be.

Smell: Cloves, pepper, and some banana. Nothing wrong with this.

Taste/Mouthfeel: Perfect mix of cloves, banana, pepper, and...bubblegum. Very very smooth and delicious.

Drinkability: Pretty thick beer thats easy to drink.

Pour has a nice orange-golden color with a good unfiltered look. There is a nice white head, however it goes away fairly quickly.
Smell has a lot of things going for it for a hefeweizen. There is a the usual nice wheat and barley smells, but there is a nice addition of clove and vanilla to the usual banana smell of this style.
Taste is very good on this selection. Ebel's is a much sweeter taste than the average hefeweizen. The malty sweetness to the beer accentuated by the clove and banana tastes make it a nice drink.
Mouthfeel is very nice. The beer has a nice thickness, but keeps a crisp, refreshing feel at the same time.
Drinkability is always good on hefeweizens. Because of the crisp, refreshing bite to the mouthfeel, this beer would be an awesome session beer on a hot summer day. The sweetness gets to the tongue a little bit, but the taste is worth it. I was surprised by this beer. I hadn't heard much about it, but it was a very nice selection that makes me want to try more styles from the Two Brothers. (1,024 characters)
